Mutton Pilau | Mutton Yakhni Pilau | Mutton Pulao | Mutton Pilaf | Mutton Pilau Recipe

  • Mutton Yakhni Pilau or Mutton Pilau/Pulao/Pilaf is a firm favourite in my household and once you've tried this recipe it will be in yours too, try this recipe at home by following my DIY Tutorial, and you'll come back for more each time.
    Ingredients:
    Yakhni -
    1kg mutton on the bone
    1 onion quartered
    1 fresh tomato quartered
    6 cups/mugs of boiled water or 1 whole kettle (depending on your kettle capacity)
    1.5 tablespoons whole coriander seeds & cumin seeds
    3 black cardamom pods
    2 cinnamon sticks
    1 teaspoon of black peppercorns & cloves
    2 bay leaves
    1 good sized piece of fresh ginger sliced into chunks
    6/7 peeled garlic cloves
    Rice Preparation:
    1/2 cup oil
    3 mugs/cups basmati rice - total 750g
    2 medium onions sliced
    3 fresh tomatoes chopped
    1.5 tablespoons salt
    1 tablespoon cumin seeds & coriander powder
    3 bay leaves
    1 cinnamon stick
    2 black cardamom pods
    1/2 teaspoon black peppercorns & cloves
    1 peice each of frozen ginger & garlic
    4 bullet chillies sliced halfway up (optional)

    really like these authentic videos' you do. makes me appreciate the effort our mums went into cooking these. i live away from home and often ask my mum for recipes, but written recipes allows for some mistake - these videos are the closest to what i grew up on in the uk, and ive watched alot of youtube videos on pakistani cooking. easy to follow as well, thank you

      Ah it was lovely.. One thing my rice was a little hard.. :( I did the 2 cup rice 4 cup water ratio. But my family loved taste and the mutton was so tender love it! I also cook the rice pudding which is also a big fave in the home lol. Thanks again hun x

    Wow! You are an amazing cook and I Thankyou for sharing your fantastic recipes with us and for Your step by step guide which makes it so much easier to follow. One question, could you do this with chicken instead of lamb? Thankyou 😀👍

      Hi Lisa, thank you lovely! You could use chicken but I normally dont make a yakhni (stock) when making chicken pilau as it cooks too quickly and the whole point of the yakhni is that the meat flavours that stock! Hope that helps! 😊

      You can but cooking times will of course differ, If you take a look at my other videos I do have a chicken version of this.

    Salaam Shamza, excellent vid as per usual ! The frozen ginger garlic, do you grind and freeze yourself, or do you use the shop bought one ? I have seen the frozen ones in shop but didn't know whether to buy or not.

      Wsalaam Dilly Dolly Day! Thank you for your comment! No I buy it from the local supermarket- Morrisons! It's just easier to have in the freezer as I don't have much room to make and freeze with my freezer being full! Hope that helps! Ps the frozen ginger garlic is better than the jar stuff! 😊👍

      Did you add the correct amount of water? Also you needed to cook the water out before you steamed it, other than that not sure what could have gone wrong.

    Just cooked it. Came out nice! Didn't put it in the oven, just on the hob. Getting the salt right is critical, too little and it comes out bland. Thanks!

    Your rice is sticky

      If it was sticky it wouldn't come off the spoon or out the pan.

      @@GadgetsGear it can still come off the spoon and pan, it's mildly sticky, not how palou should be.

      @@weppi91 looks fine to me, every proper home pilau I've had is like this, resturant pilau isn't pilau its boiled rice that's just flavourless crap. This looks great to me.

      @@weppi91 not offended, just follow her and her recipes are so damn good, most people comment without even trying them. Give it a go, different rice cooks differently, add half a cup less water if you want it slightly undercooked.
