MUTTON YAKHNI PULAO
Preparation time 10-15 minutes
Cooking time 40-45 minutes
Serve 2-4
Ingredients
For Mutton Marination
1 kg Mutton (with bones) मटन
1 Star anise, चक्रफूल
3-4 no. Black cardamom, बड़ी इलायची
2-3 Green cardamom, हरी इलायची
½ tsp Fennel seeds, सौंफ
3-4 Cloves, लॉन्ग
12-15 no. Black peppercorns, काली मिर्च के दाने
1 Bay leaf, तेजपत्ता
2 medium Onion, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
2 cups Curd, beaten, दही
For Yakhni
1 ½ tbsp Oil, तेल
½ tbsp Ghee, घी
1 tsp Shahi jeera, शाही जीरा
1 medium Onion, sliced, प्याज
Marinated Mutton, मैरिनेटेड मटन
2-3 no. Green chillies, slit into half, हरी मिर्च
1 inch Ginger, peeled sliced, अदरक
few Tender Coriander stem, धनिया के डंठल
3-4 cups Water, पानी
¼ tsp Vinegar, सिरका
For Mutton Yakhni Pulao
2-4 tbsp Ghee, घी
1 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
¼ tsp Cumin seeds, जीरा
¼ tsp Fennel seeds, सौंफ
Cooked Mutton, पका हुआ मटन
Prepared Yakhni, तैयार किया हुआ यखनी
3 cups Sella Basmati rice (soaked for 20 minutes) सेला बासमती चावल
1 ½ tbsp Saffron water, केसर का पानी
For Raita
¼ cup Fried onion, chopped, तला हुआ प्याज
few Mint leaves, chopped, पुदीना पत्ता
½ tbsp Coriander leaves, chopped, धनिया पत्ता
2 no. Green chili (less spicy & chopped) हरी मिर्च
1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
Prepared Tempering, तैयार किया हुआ तड़का
For Tempering
1 tbsp Oil, तेल
¼ tsp Shahi jeera, शाही जीरा
1 tsp Chili flakes, चिल्ली फ्लक्स
For Garnish
Fried onion, तला हुआ प्याज
Coriander sprig, धनिया पत्ता
Mint sprig, पुदीना पत्ता
Silver vark, चांदी का वर्ख
Process
For Mutton Marination
In a bowl, add mutton with bones, star anise, black cardamom, green cardamom, fennel seeds, cloves, black peppercorns, bay leaf, onions, salt to taste, curd and mix well.
Marinate for 15 minutes and keep it aside for further use.
For Yakhni
In a deep handi, add oil, ghee, once it's hot, add shahi jeera and let it splutter well.
Add onions and saute for a minute or until translucent, Add marinated mutton and saute well.
Cook it for 7-8 minutes on medium flame. Add ginger, green chili, and tender coriander stem.
Add water as required, vinegar and skim it with the help of a ladle.
Simmer the yakhni for a while or until the mutton is tender.
Remove the bones in a tray and keep aside for further use. Strain the yakhni and keep aside for further use.
For Mutton Yakhni Pulao
In a deep handi, add ghee, once it's hot, add bay leaf, and cinnamon stick, cumin seeds, fennel seeds let it splutter well.
Add cooked mutton and saute on medium flame for 2-4 minutes.
Add prepared yakhni, soaked sella basmati rice and cover it with the lid. Let it cook on dum for 10-15 minutes or cover it with muslin cloth.
Once the rice is cooked well, pour some saffron water and gently mix the rice.
Transfer it into a serving bowl, garnish it with fried onions, coriander sprig and silver vark.
For Raita
In a bowl, add fried onion, mint leaves, coriander leaves, green chili, curd, salt to taste.
Add prepared tempering and mix well.
Keep aside for further use.
For Tempering
In a pan, add oil, once it's hot, add shahi jeera and let it splutter well.
Add chili flakes and mix well.

My mom have been cooking this recipe for years, but before watching this, I was never this much motivated to cook it.

I personally think that a Lucknow style Yakhni Pulao is superior to the Lucknowi or Awadh Biriyani.

The difference between Pulao and Biriyani is that
Pulao rice cooks with the meat and gets completed. Pulao does not usually have layers.
In Biriyani, the meat and rice are cooked separately and combined in the end for DUM. Meet & rice have separate layers
@@jaisekharnair6040 that is the textbook definition of Biryani...but someone like me, whose entire family tree has been born and raised in Lucknow, knows what we call Lucknowi Biryani is basically Yakhni pulaav.
Biryani when it reached Lucknow it became pulaav coz Nawabs wanted something so soft that they wouldn't have to chew alot, considering they were quite aged but still had their "Nawabi" mannerisms 😅😅

To add a little kolkata touch I added also a little kewra water and mitha attar.. and the taste..... Everyone was appreciating at home... Thankyou Mr. Brar for this amazing recipe. To be honest, the way whole recipe, ingredients for specific process, entire process, is mentioned in description is commendable. Thats shows the efficient effort. I haven't seen recipes written in such detailed way in description of any other channel. This is one of the best things(for me) of your channel. You are right everyone nowadays in Lko call it biryani … but its Pulao . I got to know this like 10 years ago when a 50+ years in selling biryani business owner told me the difference of Pulao n Biryani.
