I have switched to the chosen avocado oil just for baking and it works quite well for me it is better than using cooking oil The fact that your recipe uses butter and oil makes the cupcakes taste rich and moist. Thank you.

I heard avocado oil was more neutral tasting so that’s good to know it turned out! Olive oil has ruined the flavor of some cakes I made when I was a teenager. I’d definitely not recommend it even though some use it. My mom requested your Italian cream cake for her birthday which is this month. Thanks Sam as always ❤
I love that the recipe makes 12 cupcakes rather than 24. They look great & I'm looking forward to trying the recipe. I'll stick with vegetable oil since I've been baking with it for almost 50. Good job modernizing your recipe to accommodate those that are making better food choices and eating healthier.

I use avocado oil frequently in my baking. It really does not flavor the batter and the end result is usually very tasty. I also sometimes use coconut oil. It does flavor the batter somewhat, though it is delicious as well. I am eager to try these cupcakes. My little granddaughter has a birthday this month, so will plan to bake these for her. Thanks again for another yummy recipe.
Well, my daughter has asked for funfetti cupcakes for her birthday party on Friday, and this video comes out! Totally making these. I like that they use some melted butter for flavor.

Unfortunately I don't know how the gluten free flour will work. I would assume the cup 4 cup flour would work, but without having tried it I can't say for sure. :(
I use Sam's cake recipes as the base of all of my gluten free cakes. I use King Arthur cup for cup. I do add a tiny pinch of extra xanthan gum. The beauty of gf baking is that you don't have to worry about over mixing. No one can tell that the cakes are gluten free either 😊 I love me some baked goods, so I was super happy that it worked out great!
I like the idea and the recipe but my results using cake flour came out very light and crumbly while the link for your recipe mentions all purpose flour and is missing the baking soda so I kind of did a hybrid of what you said on the video versus the instructions in the link. Would all purpose flour firm them up much more?

I always cover the bottom of my cupcake pan hole with rice then add the papers.....it eliminates that oiliness at the bottom of your cupcake papers.

If u use greek yogurt would it be ok to use buttermilk?.... i have those both ingredients in the fridge now lol

Yes, but they won't be quite as soft. It will be the same amount if measuring by weight; if you are measuring by cups, it will be 1 ⅓ cup.
