Palestinian Musakkhan Rolls | Sahtein!

  • Greetings! On my last trip to Amman, I learned how to make Musakkhan rolls with the the wonderful Fayzeh, who has catered so many of our family get-togethers. It is a delicious Palestinian dish with caramelized onions, shredded chicken and the insanely savory taste of sumac.
    Traditionally it is made on flat bread, but today I'm sharing this "roll" method she was making that is great to take on the go, or bring out to parties and picnics. They also freeze well and can be prepared in advance and reheated anytime! And it's really quite simple to make, it just takes a bit of love.
    I recently made these and brought them to a Brothers Green meetup ( / brothersgreeneats ) and they were an absolute hit!

    This video is cut with some footage that I shot while I was working with Fayzeh in her kitchen as she prepared a large order for a customer. You'll notice her bread is much fresher (baked that morning!) as well as her sumac. But living in the U.S. we can still make these delicious dishes authentically- and I am so glad to be able to share visuals from both her and my kitchen!

    As a Lebanese person I know this dish is uniquely Palestinian so I rushed over to see how it was made! Really gorgeous. Love everything loaded with sumac ❣️

    Beautiful habibtee--always fun when cooking with the family, those rolls look perfect!! (I call them Palestinian taquitos or fautas lol) Loved listening to her Arabic.

      monaxggx- blue yes, absolutely! It's a great meal to prep with friends. I got to be a help in Fayzeh's kitchen- she always has a couple of people helping her and all of it comes out of her home kitchen. Inspiring!!

      @@NadiaGilbert Thanks for the reply. I was suspecting that you might enjoy cooking with vegetables more and might be dominant vegetable eater, rather than favoring meat alone. Regardless love your cooking style and presentation. One thing, I have learnt from watching all kinds of dishes, ingredients are similar, slight changes in the process makes the dish different.     what spices are in sumac? tastes lemony?

      Sumac is a crushed berry that has a citrusy taste :)

    What does sahtein mean?

      Sahtein literally means two healths. Usually people from Arabic speaking countries say saha, meaning health or eat in good health, used at mealtime, or when someone coughs (like saying bless you). It is used when someone is really enjoying his food and eating with appetite. It also said when someone else has food in front of them and they have just invited but you don’t want to eat. In this situation, it means: “please enjoy your food. Don’t let the fact that I’m not eating be an obstacle to your enjoyment".

    you should all be wearing gloves while stuffing the bread with chicken, otherwise you could use spoons
