Hi Nadia, my european interpretation of this recipe is: 450g flour (350g rétesliszt, 100g tönköly simaliszt), 10g salt - the dry part 200ml water ~ 60°C, 50ml milk, 5-7g dry yeast, 5ml extra virgin olive oil, 1 tablespoon honey (2 cl) - let 5-10 minutes the yeast come to life (should bubble) (wet part) mix well (best with spatula, or by machine) take the dough to a oiled bowl (glass bowl is ideal), cover well and hope it will rise as it should :) .... continue as Nadia does ;)
Don't use milk in it it will make the taste worst use fresh yeast don't use honey use sugar let the dough double overnight then cut them into little balls then let them rest for 2 hours and u have to cook it in an oven that has a temperature of 400c otherwise the dough will be dry

I do that too, when I am just *craving* mana'eesh! I keep whole wheat naan in the freezer all the time just for that purpose. I actually sprinkle zaatar on dry and bake it, then drizzle olive oil once it comes out. So tasty. But it's special to take an afternoon and make some dough yourself! Thanks for watching :)

I can't! I don't make my zaatar, I leave it to the masters and buy Palestinian Zaatar from Jenin. One day I might learn to make my own blend when I grow my own thyme, but at this point, I know it wouldn't compare- it is all about where the zaatar is grown and I have no desire to make it using herbs bought from a supermarket. I can say it's super important to buy high quality zaatar. Look for Lebanese and Palestinian brands and check where it is sourced from, and look at how vibrant the color is for freshness. (most American grocery stores are not the place for this) Try Z&Z, they are a great Palestinian brand based in DC and they deliver- or try your local Arabic grocery and ask about it.

This is great and hilarious too. I love mana'eesh but never really had the chance to make much of it. What better but a Mason jar to keep zaatar? Same here, stored in a quart jar in the cabinet.
I am confused..some say place the tray in the oven to make it hot THEN place the flattened dough(with zaatar)on it using the egg spatula and they also say middle to top shelf ....but I do it like you do...
My Grandmother made Saffron Bread at Christmas. The spice is super expensive for a really small amount where I live. In fact it is only available in December. Do you know how to make it? Her's had walnuts and maybe Yellow Raisins???

you don't need to add milk, you can use a plant based milk or none at all! It just affects the texture in a nice way but it definitely can be left out. I haven't tried yogurt with it.
