Palestinian Inspired - Roasted Beet and Farro "Salad" | Sahtien!

  • Prepare for a new favorite of yours. Slow roasted beets are easy and so beautiful, and every beet is different.
    This dish is hearty, savory, and totally unexpected with, inspired by the flavors of coastal Palestinian cuisine, with grains from the countryside. It is one of my favorite recent creations that my friends have absolutely loved- and amazing as leftovers! Use any grain you have with this, or any root vegetable- it will work beautifully.     Normally I only watch cooking videos when I want to prepare this exact recipe. But right now I am watching all your videos just for joy!     Never heard of farro until now, but I get fab beetroot from the local organic farm shop I use. Great winter soul food. Must try this recipe.

    Chinese cuisine has a great term for dishes like this, they’re called liángbàn 涼拌, or “cool tossed”. Basically, light dishes that are supposed to be eaten cold.

    I just made this and it's perfect! This is the first time I've enjoyed farro- thank you for that gift. I did try adding a little bit of freshy grated ginger and it worked well with the flavor profiles. Also, can confirm that oat yogurt works just as well in here (for those of us who can't do dairy). Thank you for sharing this recipe. :)

    This recipe has officially made me a beet lover!! I've always vaguely disliked beets but this method of roasting them makes them so sweet and tender. I didn't have foil but I found that wrapping the beet tightly in parchment worked just as well. (I put a pan underneath in case it leaked a bit) I added some parsley cuz I had it and used a vegan yogurt. So good!! Farro is probably my favorite grain these days, I eat it all the time. I love your recipes, the way you cook is super nourishing and similar to the kind of stuff I like to eat :) will definitely keep this in my recipe repertoire!

    It’s Summertime, so to eliminate extra kitchen heat, I peeled my beets and CAREFULLY cut them into a small dice. After a tiny drizzle of olive oil and a generous shake of hot zaatar, I roasted them on a parchment covered baking tray. At 400 degrees, it only takes a half hour of roasting. Some of the beets turn out slightly caramelized around the edges, and their naturally sweet flavor is more concentrated and amplified.
    Then I thought, why not pair the beets with farro? And then I found your recipe. Great minds think alike! Take care!

    I am all over farro, use it in place of many other grains, hasn't overtaken rice yet in my playbook, but it is getting close. I made a farro salad last week and it has been phenomenal go to quick meal this past week. Thanks for sharing.

      Farro is great! So is freekeh. I love my rice but it's important to have a variety so I like to switch it out for other grains often :)

    Looks beautiful and delicious! Can’t wait to make it this spring and summer! Sometimes I just crave a nice hearty salad on hot days. Even better if it’s already premade in the fridge. I’ve never tried farro so I’m super excited!Thank you for this amazing recipe! Quick question: did you use Greek yogurt or just regular plain yogurt?

    I am adding beet greens to this as well as some brussel sprout greens...I don't know what 'matt' is though. Just got three gorgeous beets out of our garden...let the sacrifice begin!

      @@NadiaGilbert wow i thought so! But it looks darker like a sun dried tomato or a date. My roasted garlic still looks white. But I might add dates anyways. Love them

      @@bluepollen1 It's because it's covered in beet juice! Normally it does darken in color a bit when roasted and getting caramelized, but the red is from the beets!

      Right now only shopping minimally at nearby markets; I buy locally as much as I can. Organic at the supermarket is not always healthier/better. When the farmers markets are open, I try to only shop for my produce there- it is incomparable.

      Either! I just made a salad with cooked quinoa that I toasted with spices after, and it may be another new favorite of mine. I'd try that first :) Sahtein~

    My latest revelation (regarding beets) is to roast them without foil until they shrink significantly. The flavor becomes fruity, earthiness in flavor disappears completely.
