CATCH & COOK: General Tso's Drum + Bonus ZOMBIE Bluefish

  • Okay, here we go! On the fishing front...bluefish. My bluefish game is strong around here lol. I am a total newbie again it's great. Everything else has been spotty for sure. But I am in learning mode. At least I am catching and that means I am doing something right! After a few more bluefish encounters we bought some frozen shrimp and gave it a try. I of course bumped into bluefish in multiple places by this point lol.
    Picked two black drum for a meal and this recipe was inspired by my friend Roger Aye. General Tso’s drum!
    Here is what you’ll need/want:
    1 White fleshed FIRM fish (I’d pass on flounder, bluefish, and probably scup)
    Marinade:
    1 Egg
    2 TBSP Oyster Sauce
    1 TBSP Soy Sauce
    2 TBSP Sake
    1-2 TSP Worchestshire Sauce
    2 TBSP Corn Starch (Tick-En-Ing)
    Mix the above ingredients together and marinade with your diced fish
    Sauce
    Equal parts 1 Shallot, Garlic, Ginger, Chili Pepper (dried) - Adjust to your taste preferences
    2 TBSP Oyster Sauce
    2 TBSP Sake
    1 TSP Soy Sauce
    Pinch of water for volume
    Add corn starch as you simmer and reduce to thicken. It’s really that easy. DO NOT overheat or it will burn off.

    Can't wait for kingfish catch & cook segment. Has a bad rep but it's one of the better tasting fish I've had in SW Florida (after grouper of course).

    I think it is great that you show where you are catching the fish without mentioning the specific location. That is more helpful to people in other areas so they might look for creeks or oyster beds or ledges in their area.

    Looks very peaceful there. Those blues look like they need to come up north and hit a few bunker schools. Wish you would of landed that big blue. That was a great fight. I guess you don't have to worry about getting your crab trap stolen there.

    Now that you're in NC do you plan to check out the Feelfree kayaks? I think they manufacture in NC. They are who I'm leaning towards for my first kayak. I'd love to know your thoughts one them. I'm over 6' 6" 250lbs so stability is important to me

    Have you tried selling your shads to local nc tackle shops? I bet they would work great for using under a popping cork for old drum in the fall in the Neuse River and Pamlico sound. Im sure you've studied that fishery.

    I know you're probably super busy with moving and what not as well, so I get the upload schedule. But videos of you exploring new water would probably be just as informative and entertaining, even if you're not catching anything. It's all new to us too. Not a complaint, just throwing that out there.

    I am actually surprised plastic shads are legal - think about this before flaming me - The best case scenario for any big fish that breaks your line is that the hook comes out of his mouth, and he lives. But it's not very likely. Regardles, the shad will last for years and years in the water, and may be eaten by other fish - making them sick. For that reason, I use metal line-through lures exclusively, as they will only leave the hook in fish's mouth and the lure will fall to the bottom and rust away. They take some skill to use and cannot be bounced on the bottom, but they still catch plenty.

    A recipe for black drum (15-20”)that I use that I’ve cooked for my friends is as follows:
    Olive oil
    Any kind of Cajun/creole seasoning
    Lemon/lemon juice
    1 onion/bell pepper/celery stalk/carrot
    One big leaf of iceberg lettuce
    Scale, cut head/fins (except tail), gut from where pectoral fin was to the anal cavity and score on both sides
    Stuff cavity with SLICED onion/bell pepper/celery/carrot
    Lay fish on lettuce (LIGHTLY coated with olive oil and seasoning and on foil)
    Lightly coat fish with oil and season to desired taste
    For oven (uncovered): 15-20 minutes @ 375
    For grill (covered)- 10 minutes each side @ 300-325
    Simple yet delicious!

      Nick Lohse with brook trout being the healthiest fish of them all. Trout and salmon are already some of the healthiest fish to eat with brook trout tolerating no less than perfect conditions leading to the healthiest fish on the planet

    was the reason that you switched from a stringer to the bag due to warm temperatures and if the fish died on the stringer it would decay faster in the water than in the bag with ice?

    The 17” drum caught in the surf or around the piers are great to eat whole. The ones from the back water tend to be a little wormy, still not as bad as some of the jacks and other fish.

    Please be careful with the bluefish I have worked on fishing boats and seen people bitten by bluefish they can bite very bad putting its head down between legs and feet with the bare skin gives me flashbacks of bad bites. bluefish have razor sharp teeth be mindful of that. love watching channel your voice sounds like Carson Wentz.

    Dude I used to live down there for a few. Better make yourself some Elias Electric Chickens. Berkley calls it Nuclear. It's great for the reds and the specs. People down there down appreciate the flounder as much because they don't know how to filet them

    Everything tastes good deep fried. I'd scale them, score them, salt, pepper, a little AP flour. Deep fry. You can use your General Tso's sauce on top.
