KING MACKEREL, SMACKS, & SHEEP (Catch, Clean, Cook w/Chef Mario!)

and we hopped on with Rennie out of Wrightsville www.inshorejournal.com for a day of light tackle fishing. More than enough spanish mackerel and 10lb class kings doing some light tackle stuff then we could ever know what to do with. Wrapped it up with a solid sheepshead on the wrecks to end the day. Really good day of fishing.
Mario prepped fish a couple of ways. A simple ceviche with spanish mackerel with limes, orange juice, garlic, shallotte, onion, cilantro, and tomatoes. Cured for about one hour.
Next we had kingfish steaks seasoned with Cajun Citrus seasoning. Although that stuff had a lot of flavor, I think the kings need way more stuff to get them tasting primo.
Sheepshead was served on the half shell with spices and a balsamic rub and extra lemon. cooked skin side down primarily and shortly charred on the other side.
Spanish mackerel were stuffed with Rosemary, garlic, thyme, and cilantro. Charred and served with fresh parprika.

When I lived in Florida, the sea urchins clinging to the jetty rocks were the bait of choice for local sheepshead. Pull them off with a net, crack them open with a knife, and throw the it on your hook. You could bring them in until you got bored or the dolphins showed up, whichever came first.

that sushi mackerel you guys were talking about is most likely a preparation called sima saba - a light rice vinegar japanese pickling method that is my favorite way to consume mackerel - give it a shot next time youre into a bunch of maks - as always great vid

Went to Peconic Bay behind Shelter Island and got into some Porgies. Some were over 17 to 19 inch already. Water temp in the low 50s so it's looking like a good year so far. Fried, grilled, baked, or my favorite, escovitch (Jamaican Style)

Rewatching this because the Spanish are running again in my corner of the ocean. Great ideas for cooking them up.
I've caught a couple Spanish and did NOT bleed them and they tasted magnificent with a pan sear and spices.
Doing all this for some Spaniards, way overkill lol

Try eating the Ceviche with tostada and some hot sauce or chop some serranos in there huichol hot sauce is great with ceviche! Keep up the great vids man

Great video man, gonna try to do the porgy the same way as the sheephead this way it don't stick to the grill and the burning scales should give it a Smoky flavour
*Should* work. Porgy scales not as thick as sheep but maybe a big one will work out. Def would work with Striper.
Thats a great idea and should work well. Ive done the whole with the scales and it worked great. Use a big porgie. The smaller ones might be too thin

love Mario episodes. I don't think you need rosemary and we don't use paper bags to steam peppers any more, a covered bowl works better, but it's an outdoor cooking sessions use what you have right. Thanks for a great vid
Meh, ive tried the bowl. I dont like that the peppers are sitting in a pool of juice when the peppers steam i think that the permeability and absorbency of the bag make a big difference. But hey what ever works for you.
The rosemary aromatic penetrates the meat. Again its al preferences, do what you like. Ive also done this method with lemon grass and ginger. Thats a killer combo

I am your number 1 eating Bluefish hater. I agree with your assessment on Kingfish however, I do have one simple recipe that works. One can of frozen orange juice, one tablespoon mayo, one tablespoon ketchup, a couple squirts of Worcestershire. Steak the King Fish. Mix the above ingredients (concentrate needs to still be frozen) and put in a bag with the steaks until it thaws. Put steaks on grill and brush with extra marinade until fish is done. It does a good job of taking the fish taste out.
Before anyone comments NO it does not help on bluefish they still taste like crap.
R B lol yeah i caught a blue the other day. I suck at fishing, so if i can catch i am gonna eat. The blue went ok on a sandwich. Normally they are very low on fish i don’t eat. Flounder and shark smoked are my favorite.

It was a goft from my best friend billy. It a cuda. Super sharp. Cut thos steaks right up. I was afraid i wasnt going to get thru that bone, but it cut like a champ

Did you taste the Spanish steaks? I've never seen them cooked like that. Curious how they turned out.
Mario steaked the kings. They were ok. I really prefer the Spanish macks. Spanish Mack whole was excellent, that being said kingfish dip is still bomb.

Yes the kings were not my favorite. Ok, id eat them if i had them, but it was so much like gorilla bluefish.
I have to agree with you Elias when it comes to king mackerel and or Bluefish I will pass unless it's been smoked. Maybe once I had fish and chips made from the harbor size Bluefish(2-4lb. class) after it had been soaked in milk for 24 hours that was not too bad. The person doing the cooking also used Frank's Red Hot as the wash instead of egg.... as well as a generous amount of cayenne Ian blackened Old Bay seasoning in the batter....
Something I wanted to ask you Elias...have you ever made fish cakes using striped bass, and if so do you have a recipe? Years ago I had an online friend from the Carolina area that had a to-die-for recipe for them and I lost the recipe as well as that persons contact information..... I know that it's a Carolina recipe but I can't seem to find anything that seems even close to the recipe that I remember. If you or any of your subscribers might know of the Carolina fish cake recipe using striped bass I would clearly appreciate if you could post either a link or the recipe here.... I can remember making it and they were absolutely amazing. I don't think I've ever had a fish cake as good as what that recipe put on your plate so it's been a long time since I've had them because of losing the recipe. A couple of drops of Tabasco or any Chipotle based hot sauce and you could easily enjoy them so much that you could make yourself sick from overeating..
I know that a couple of the ingredients were not traditional fish cake ingredients but I can't for the life of me remember what they were.
We do fish cakes from Stripers at my restuarant all season. I dont have a carolina recioe, just my own. If youd like it hit me up
