Catch, Clean, And Cook: ATLANTIC SALMON

  • This was actually the last video from my recent Cayuga lake trip, but I thought the catch and cook theme would play nicely with the holidays!
    I fished Cayuga lake trolling surface baits and working deep for a few hours and hooked a 23" salmon on a 4" keitech easy shiner with a 3/4 oz jighead.
    Mario, co-owner of Brooklyn's SottoVoce - sottovocerestaurant.com/ was graceful enough to put up with me as we did the next step which was cold smoking a salmon. We are by no means experts on this but it was a fun way to do something different.
    After catching, the salmon went into ice (well covered and bled) on my cooler for about 24 hours. After fillet we went with two different brines.
    Simple Brine:
    2 Cups salt (we said four in the video but it was two oops)
    2 cups sugar
    3 cloves of garlic
    pepper
    1 gallon of water
    Spiced Brine
    Same as Above plus
    1 cup soy sauce
    1 tablespoon jerkseasoning
    3 tablespoons pickling spice
    Mario has a homemade smoker and set one for 24 hours and one for 12 hours after about a 16 hour brine. Both picked up different flavors and different unique qualities.

    This was special and I thank Mario for putting up with me to complete this one. We also did a catch and cook skate and tautog at his place too. You'll want to take precautions if attempting cold smoking by freezing it at -8 degrees.

    You gave everybody a lesson about how to honor a fish.
    From cleaning, not spoiling a single piece (I'm sure you would make a broth or a fumet with the bones..LOL)
    I'm very critic in how people filet/clean fish in youtube videos. I only have compliments for you...
    This is one of the best videos ever seen on that subject.
    Now about the cooking.

      Wow. Grazie mile fred. That was such a wonderful comment. As Elias can tell you, conservation doesnt end by throwing back short fish, it continues in the kitchen by reducing waste.

    Cool, this is common with us in northern Sweden, cold smoked or cured or even cured and then cold smoked salmon or sea trout. It tastes amazing!

    Back in the day (late Dec 1980) temperature 10F there were large spawning runs of Salmon and trout. You fished at dawn/dusk preferably cloudy days and threw spoons out from Taughannock Pt and North Point. One morning at 7:10am a landlocked salmon hooked into my lure in 5'-6' of water. The salmon quickly jumped 3 ft and threw the spoon. Went there dec 31 in the afternoon this year 50F/sunny and the last day of the season. water was 3' deep. No one was getting any bites. Still wonderful.

    This really was great. Elias, I watch all of your videos and I love seeing how hard you're working and how much it is paying off with very high quality content. Your channel has moved to the next level this year.
    I have long thought that you should partner with local chefs for the catch and cooks- nice to see you did that on this one and have a couple more coming. Keep up the great work!

      Thanks man. I like this format of mixing it up with someone that knows how to prep something special. It's hard to get schedules to work out most of the time, but when I can do it going forward, I will! Thanks man, I'm hoping to spend a lot more time outside the tri-state area next year and finally get to go around a little bit.

    Absolutely love the filet job. How he said he wanted to get as much meat as he could. Saving the head for presentation was definitely a chefs touch. Did you get the cheeks by chance?

    Atlantic salmon are great fighting and beautiful fish!! over here in ireland I started fishing for them last year and managed to catch three of them after many hours fishing for them and learning theyre ways!! Thats why I agree with youre friend,its definitely a fish of a life time,but its like that every time you catch one,trolling is good but fishing for them on a river thats three meters wide and then hooking up is something you never forget!! 😀🎣🎣

      Most wild salmon has a red color, I believe this one is orange because it is in the spawning phase.
      For instance, I live in California and fish for King Salmon. The meat is nice and red, similar to the store. However it's wild.

    Great collaboration, great video and the results one could just imagine the taste. Makes you want to go and get a smoker just to try and recreate but I’ll just go to his restaurant next time in town. This one really hit the mark.

    When you get a Finger Lakes salmon that's been feeding on a lot of scuds (freshwater shrimp) the meat is solid bright red just like a saltwater salmon and tastes absolutely amazing!

    That was a great vid. Salmon cooking must have been a treat. Payed off for the catch. That woukd be a good catch and cook featuring mMario as the cook. Not taking away from your cooking but it might have something good in the future. Catching fish and having other people cook it in there best way.

      OH absolutely. I am fine for a basic prep and to tell you about the fish. But the culinary work goes into the other guys. I'll never boast about my cooking skills ever. I like this format A LOT, but it's tough to get peoples schedules together especially when I have a fresh catch!

      Yeah they are really awesome. Some documented natural reproduction in Lake Champlain. Cayuga has a very healthy population of them as well but it is still supported by the government. The thiamine (probably spelled that wrong) lacking from their diet is supposedly preventing them from reproducing. However, the newly invasive gobies are rich in thiamine, so maybe there is hope on the horizon.

    Love your vids. In Maine, if you catch an AS, you have to release it without removing it from water. Great job with smoking it. Really makes me miss my Ithaca days.

    Great clip. New to your channel and really enjoy your trips. Being from the Great PNW we are fortunate to have many sources for fresh salmon and a million or more 'opinions' on putting up fish and appreciate an east coast word on the matter.     Great, great video Elias (and Mario)! Right before Christmas, I usually drive from NJ to Juniors in Brooklyn to pick up Cheesecakes. I been lazy the past few years, and been ordering online.     Mario really went all out and took great care of that fish. What was the total prep time, first cut to first bite?

      Fishing With LardAlmighty workwise the prep and brine take about an hour or so. The rest is either refrigerator time (12 h brining, 12 h curing) and smoke time ( 12h or 24h ) the work is really in filleting the fish.
