CATCH & COOK: Whole Grilled Fish!!! - SPRING CRAPPIE!

  • Tough to imagine how cold it was last week. I did receive a few skunks prior to the striper scene. Decided to skip a brutal pounding from the salt and grab a few fish for dinner.
    Literally slip bobbers and live shiners I suspended these guys in about four feet of water. The trip was cut short due to a system moving through and I boogied out of there.
    I joined Mario and he grilled up these slabs to perfection with a Lemon, Garlic, Ginger, Oil rub.
    Steps involved:
    Any whole fish 12"-16" will do fine. Trim all spines and fins. Scale with magic scaler or spoon. Gut but do not tear through breast plate, snip gills and pull gut out from the throat and belly slit. After a thorough rinse. Mario stuffed the cavity with fresh thyme, rosemary, parsley, garlic, and fresh lemons. And really really stuff the fish! If the fish belly is a little loose seal it off with bamboo skewers.
    Fish was cooked approximately five minutes on each side until it reached 145 degrees. After removing from the grill it was lightly coated in oil dressing.

    Slit the fish a few inches down (not to the bone) and season with salt and pepper. On a pre-seasoned pre-heated grill Mario lay the fish down to cook. Be sure to move it on the grill after placing so it adjusts to the heat.

    Gonna let my nephew in on Mario’s restaurant. Next time I’m in Jersey we will be there. Used to eat at Villa Borghese on Bath Ave. Man this looks serious. Used to fish the Brooklyn shore line all of Raritan Bay , Boston on down to Hatteras . Life was fishing trip. Just great video guys, thanks, Tommy. Incidentally I had to throw this in. I once watched Michael LaMonico cook a shad and it’s roe on create tv. He had just returned from fly fishing for them on the Delaware river. I have been into this for 30 years and in 2009 I decided to go with a spey rod, that was the ticket. I have a great story to tell about it. Next time. Tight lines y’all.

    Crappie fishing looks like so much fun when you can get on em' .I've fished yellow perch, small-mouth bass, large-mouth bass, trout, bullhead, rock bass, etc...but 3 fish I've only ever caught one or 2, crappie and white perch, and silver bass. I live right next to lake Ontario and I've never caught a crappie out of it.

    Wow now that looks like chef city..i do the same thing with chicken stuff the whole chicken with herbs. taste so good and smells good too; great recipe, love how you guys did the oil on the grill without making it flame up great catch clean and cook excellent.

    17th St Fish Market Miami. Bit of a sketch area but best cooked whole fish ever. Pick out your snapper mangrove snapper and tell them cook it. No tourist either. They wouldn't ever ever ever go there lol

    You can slice into the top & bottom of the fish skin. Pliers peel the skin off with the scales. Crappie it works,but about half way the skin starts to peel meat with it. Peel skin halfway from both directions cut it away where it was starting to pull meat. Bass/redfish etc it works great peel skin,100% scales go with it,easy.

    Well he’s right about the flare up issue but my thing is to either raise the grill or get it nice and hot and then cook it to the side of the main flames or coals I use coals but either way same idea just keep it away from what would ignite the oils etc because you can’t deny having on during cooking gives it more flavor

    i keep all my fish alive until im ready to process. I also process where i catch them. Cut the gills, and bleed the fish using the heart and gravity to remove as much blood as possible. Scale the fish then gut it as he recommends, its the way to go! I use a mix of ice, salt and water in my coolers. The fish basically get flash frozen after being cleaned and maintain optimal freshness. The salt also inhibits bacteria not only lowering the temperature.
