In Saint vincent I learned how to make those from my grandmother, they were steam cooked ,no flour used ,using a large pot a few sticks from the bayleaf tree to place in the bottom of the pot covered with several cups of water place the ducana on the sticks to steam cook .
Thanks for sharing
Omg!!! I love me some ducana and saltfishhhhh❤️❤️❤️
Wow first time I'm hearing about that combination. Thanks for watching
In Antigua and Barbuda we use Banana Leaf or Seaside grape leaf to wrap it or foil paper. Raisins are optional. Also we add nutmeg, cinnamon and sometimes vanilla essence to season it. We eat it with salt fish, it also tastes good with smoked redherring or shad.
Thank you for sharing. I never had ducana with saltfish before
My grandfather used to do this for us as children. Even though we lived in The Bahamas, he always kept a piece of home and his culture with him and taught us that as children.
They are very appetizing - comfort food. In Trinidad we make something similar called Paime but with cornmeal. I will be doing that video soon. Thanks so much for watching
My mom makes the best ducuna and instead of flour she use a tanya or edoo to hold it firm
You know my husband and I discussed this recipe because his mom makes it in st. Vincent and its only after I made the ducana he told me about adding eddoes. BTW this is how i spell TANNIA is that the correct way? Where did your mom make the ducana?
Thanks so much for watching and for taking the time to share your mom's secret ingredients😊😊😊😊
@@WhaToCook I'm not sure of the correct spelling, but the coconut n the potatoes are grated fine we're from st.vincent, n 1 eddoo or tanya
@@meka2988 thanks so much for sharing this 😊😊😊

this is a labor intensive dish. chica. you clearly didnt make it before.
There's a Jamaican restaurant near me that makes "rock cakes" which have raisins and coconut in them. Looks delicious!
I know those they are made differently. Seems like you have tried a few Jamaican dishes😊😊😊
@@WhaToCook I have. Caribbean food is darn tasty. I have to admit have not tried anything from Trinidad. But thanks to your channel, I can make it.
@@ArizonaGhostriders Super awesome 👍👍👍😊😊😊
not the same thing as rock cakes.
Hello sweet Martina, love your recipes, looks so delicious and would love to try. Have a happg week 😊🌷
Thanks so much Rosy😊😊😊😊
Looks delicious Aunty Martina. You can keep the grated potato in some water until ready to use to avoid it changing colour.
Thanks so much. Thanks for stopping by

I like the banana leaves to tie it up! I don't remember seeing them before. 🍌

You are welcome. What is a SBA?

Thanks so much for remembering me John and for stopping by
Hey, just a correction. This dish is not popular in St. Lucia. If you ask a St. Lucian what ducana is, they/we will look at you strangely. What's popular in St Lucia is paime (same namesake and concept as Trinidad i.e. cornmeal, pumpkin, spices etc.). Ducana is popular in SVG and the islands in the Lesser Antilles.
Thank you so much for this clarification
Good night martina love this recipe u are the best dearest

In St. Lucia we call it pehmi. We eat it as is, not served with salt fish
Trinidad too but slightly different
Thanks so much for sharing I appreciate you stopping by!!!
I thought it was Paime. Watched to the end💯 I would love to taste.
Yes it does look like paime .... different recipe though ... recipe also on my channel

We make it in st.kitts and Nevis but we call it conkie we boil it in banana leaf or sea grapes leaf and a special leaf we call conkie bush foil paper give it a funny taste
Wow thanks so much for watching and sharing this. Sea grapes leaves??? Very interesting. Do you have to heat them up too like we do with the banana leaves? But with the conkie you don't put raisins right?
@@WhaToCook I'm not sure if u have to heat them up yes we put in rasins hot pepper whatever u like we put in them
@@WhaToCook will call my aunt in tortola and ask her or ask my mom
