Brigadeiro | Chocolate Fudge Icing

- CHOCOLATE FUDGE ICING. BRIGADEIRO
This is a chocolate fudge icing also called Brigadeiro in Brazil. It’s great on top of cakes or even just pour it out on to a plate and once it cools tuck in with a spoon. You can also roll it in to little truffles and dip them in sprinkles or cocoa powder. The kids love it! Everybody loves it!
Recipe
1 can of condensed milk (397g)
3 heaped tbsp of Chocolate powder(Nesquik or something similar)
2 tbsp of butter
Alternatively you can replace the chocolate powder with 2 tbsp of cocoa powder
Stir continuously on a medium heat until it thickens and the temperature reaches around 93C
If you’re making truffles and you want them a little harder you can go a bit higher with the temperature

There is a cake that keeps stalking me through the Internet...I don't know it's name, so I thought I'd ask you. Here goes, it's a chocolate sponge, it gets some type of a milk soak, it gets a layer of what appears to be a thick custard, another layer of soaked sponge etc. All the videos seem to be in a south American language... but that's a guess. Chris if you have any idea of what this cake is and how to make it please please let me know. My baking guru 😊
It could be white brigadeiro. It’s the same process as this just with milk powder instead of cocoa powder 😊 when you see a video post the link here and I’ll take a look at it ☘️

How imperative is it to check the precise temperature? I want to make this, this week. But I don’t have one of those thermometers and the thermometer I did have recently broke.
It’s not imperative. I normally don’t use one. I can just tell. Once it starts to thicken and shine and come away from the bottom of the pot when you tilt it it’s done 😊
