  • In this video, Courtney and I play around with a few different flavors of chia seed pudding. By the end, we dial in an amazing, creamy chia seed pudding that has only 3 ingredients. Be aware that if you are counting total carbs, the ChocZero syrups are not the best option for you and instead I would recommend using flavored stevia drops.

    Tried the chia seed pudding with the coconut milk (full fat), didn't use any sweetener. I did add a dash of cinnamon and a small splash of vanilla. We really enjoyed it this way.

    A tip for non-US viewers. The easiest way to get the same results as Steve did is to use coconut milk/cream/whatever with the same fat percentage as the brand he uses. I looked it up and Thai Kitchen Organic Coconut Milk is 15% fat. So buy whatever you can that has the same 'creaminess' to get similar results

    Try heating the coconut milk and adding fresh ground cardamom. Heating it brought out the flavor. Add your chia seed. Vanilla cream liquid stevia to sweeten. Chill for 3 hours. Yummy good!

    Great show! I had a friend gift me some chia seeds and a can of coconut milk for my birthday. I loved how easy it is to make. Reminiscent of tapioca with the seeds in there. I second the pineapple syrup! Great to have Courtney again!

    Hi Steve, very good suggestions. I usually break my fast with full fat greek yogurt, full fat coconut milk, chia seeds topped with a little bit of turmeric, one tiny pinch of black pepper (to absorb the turmeric) chopped nuts and whatever berries I have. Sounds weird but it's really good. If I need to up the fat I add a little heavy cream.

    Thanks for the reviews. It encouraged me to get some. I did my own mini rest with cashew milk and coconut milk. TOTALLY agree about the full fat coconut milk! Next level. I only had a small can so added two oz heavy whipping cream to make a full cup. I will definitely make this again. Thanks!

    I picked up some finger limes in my last imperfect foods order. I think I’m going to try a key lime cheesecake chia pudding with them. Coconut milk, the contents of several finger limes, cream cheese, sweetener, chia... pinch of salt, maybe some extra lime juice/zest. Maybe a little sour cream. 🤔

    Oh boy! I always forget about coconut milk. This looks terrific. I'm going to make it now. Thanks for this. I've been looking for a pudding/ice cream/cool whip that is easy and doesn't take a sink full of dishes. I've pondered that part of the exercise factor in keto is doing dishes. Since I've been on keto the dishes have doubled or tripled. While they say change is the only constant in the universe, I think that dishes and laundry can be added to that adage as they are constant. Thank you Steve and Courtney ( Courtney does such a great job and I love her decorating sense of adding eye candy to the dish)❤❤❤❤

    I didn't even get through the taste test before I had my Chia seeds, milkadamia, and coconut milk out. Not having the ChocZero syrup in anything but maple, I used sweetleaf sweet drops pumpkin spice, my flavor of the season. Can't wait to try!

    After watching this, I grabbed my bag of chia seeds, can of coconut milk, Jordan's skinny syrups salted caramel, and sugar free chocolate milk mix, whipped it up per the instructions in your archives. I did use an immersion blender to get the coconut milk mixed, then added the rest of the ingredients, including the seeds then poured it into mason jars.Fingers crossed.It's way cold down here in Georgia, days like today, I stay in and play in the kitchen. Made Asian egg pudding for breakfast, kielbasa and cabbage for dinner tonight.

    Speaking of cacao nibs, my super easy dessert is coconut cream (not the sweetened kind, I use the Thai Kitchen kind - incredibly thick) sprinkled with cacao nibs and chilled. Delicious. Thanks for all your great recipes and tips.

    Oh my word, this is fantastic! It gets my vote for best keto use of coconut cream/milk! I did one thing differently, after whisking the coconut and syrup together well, I then whisked in the Chia seeds. They blended beautifully and no need to put in jars or even shake 2 hours later because they stayed suspended in place without settling. I've read many reviews of Choc Zero and a lot of people have said it has an aftertaste. I found a brand I really like called NuNaturals. I mixed up a chocolate batch and a pumpkin spice batch, and poured them into 1/2 cup custard dishes. Both turned out delish!! Thank you for this recipe.

    I tried this recipe and I absolutely loved the unique way you prepared it! The simplicity of using only 3 ingredients for a next-level chia seed pudding that's super creamy is impressive.
    In my personal experience, the texture and creaminess of the pudding were outstanding. It was so satisfying and delicious, making it a perfect healthy dessert or snack option.

    I make Chia pudding using half cream half full fat Greek yogurt. Add some sweetener, chopped pecans/walnuts and diced strawberries. Then top with toasted coconut.

    Tried the coconut milk with chocolate & banana syrups as well as a bit of peanut butter powder (chia seeds, too!). That is a serious winner! I've had chia seed pudding many times, but always used almond milk. Never thought to use coconut milk... so much better!

    I make fresh yogurt for my chia seeds! In one pint of yogurt I add 3T of chia seeds and 12 drops of stevia, and a splash of vanilla. I make it at night and in the morning it is delicious and creamy!

      Wow! I just assumed she was! Last night I decided I was going to go keto, told my boyfriend and everything so it's official! 😄 Going to make chia seed pudding tonight. Honestly keto is so easy if you've got the right information. Just watched his salad dressing video and was quite impressed!     Just made the pudding with coconut milk...used whole can 1 +2/3 c. Almost..and put 3 tbsp chia and I had banana extract so used it...cant wait. Only made chia pudding once with almond milk and didn't like but your recipe looks great...cant wait to taste...thankyou again🤩

    This recipe rocks! I’ve tried other chia pudding recipes that just didn’t cut it, but the combination of the coconut milk and the choczero caramel syrup that I used was incredible!! Thank you!! Now, if it only looked a little more appetizing and a little less like a science experiment, I might convince my non keto hubby to try it, but so far, he has resisted. 😂

    I made the chia pudding with canned coconut cream and added 2 Tbs of Steve’s pumpkin filling he makes for pumpkin chaffles. Absolutely delicious. I also add a splash of sugar free maple syrup. So good.

    I made a couple of jars of this using Stevia drop cinnamon flavor and pumpkin spice. They came out great. In my next batch I may try adding some unflavored Stevia and vanilla extract.

    Started having chia seed pudding on my keto journey. I dig it!.. my favourite is coconut milk with coconut extract and liquid monk fruit sweetener. Sometimes I add vanilla. Great HF dessert.

    Watched this video last night. I had just been searching for a chia pudding recipe and ended up down a rabbit hole binging a bunch of your content. I dont have those syrups but I tried a chocolate powder (unsweetened) with almond milk and sweetener and another with full fat coconut milk vanilla extract and sweetener. OMG that coconut milk one is so rich. The almond milk version was tasty but could use more chocolate powder and maybe a pinch of salt and mixing heavy cream with the almond milk. Cant wait to experiment again...right after i pick up some more chia seeds. We are also totally buying a corn dog maker inspired by your other video on that topic. Thanks for all the recipe testing!

    I make mine with Ayro-D coconut cream (not milk)-this brand is the best in my opinion. I have just put cinnamon in it with no sweetener and I use this to break a longer fast. I think I will try sweetening it for a dessert. :) You two work really well together. Courtney is a lot of fun.

    Hey Steve, This inspired me!! I "like" chia seed pudding enough but, I make it and am not excited to eat it -- until I tried this with Coconut cream. Had to modify, trying to cut body fat build muscle - instead of the coconut milk, I used unflavored BEEF GELATIN -I know it sounds weird!!! I have to say the combo of the chia and the gelatin was...sublime... thanks for the inspo!

    I think I can work with the canned coconut milk. I gave away the chia seeds I had since I couldn't find appetizing ways to use them. I think THIS will be the answer. Thank you for the countless Keto solutions!

    Thank you for this video. I have a lot of chia seeds and the nut milk just wasn't my favorite thing. Picking up Coconut milk next time I go to the store.

    I'd forgotten about this recipe! Was seriously craving some overnight oats, which, aside from not keto, clog me up so bad, and the consistency is an almost perfect match . Never not using canned coconut milk for chia pudding!

    I used chia seeds for the first time the other day when I made a blueberry jam. So easy and it was delicious. Interesting to see the way you are working out the recipes.

    I made the Chia Seed pudding with the coconut milk like you suggested. I didn't have any Chock Zero , so I decided to use the Lakanto Maple Syrup. Well I must tell you , this is my new go to. It was Awesome !! Thank you so much for this video.

    +1 on the pineapple syrup!! Pineapples and mangoes are 2 dearly missed flavors since going keto. I know ChocZero has a mango syrup but you seemed less than pleased with it so I don't know that I'd pony up the cash for it.

    From my experience you should add the flavor after the chia seeds have absorbed the liquid. It taste much sweeter with less sweetener.

    So, I watched this video last night, and got super inspired. A can of coconut milk, mixed it up, two pint jars, chia in each, added coconut milk, a little stevia sweetener, and then ... We don't have keto syrups here... So I added cocoa powder. And then I thought to try instant coffee powder in one of them. Shook them, in the fridge. Woke up in the middle of the night, shook them again. Now I just had the coffee one for breakfast, and it's awesome, delicious! Thanks for the idea and inspiration! :)

    Its in the fridge as I write this, i made the coconut cream version added sugar free maple syrup, vanilla extract, and cinnamon, hope it turns out well!
