Eating vegan is definitely not expensive. I'm not a vegan but I find myself cooking vegan recipes totally by accident. My favorite is a coconut lentil curry. I add extra water and make it into a soup as well. You can find a ton of recipes but this is my favorite: www.theendlessmeal.com/creamy-coconut-lentil-curry/ This came out to about $0.63 per serving without counting the spices which last a really long time. Soups are the easiest way to eat vegan!
Definitely cheap, but only if you don't mind blandness... any tasty ingredients, including vegetables(due to needing larger portions), will be more expensive when vegan. The only vegan recipes I've found that work out cheaper per fill while also being tasty is a frozen vegetable curry.
Honestly this has been so therapeutic for me as someone recovering from an ED and hearing about everyone doing keto and cutting out carbs. They make me feel bad for eating carbs but seeing someone as beautiful and healthy as Merle eat chickpeas (and a bun!) makes me feel so much better

Easy for me. My middle-east culture as a vegan comes out. Breakfast: Hummus veggie sandwich. Lunch: Roasted chickpea salad, Fatoush style with baked pita bread for crunch and a lemony Tahini dressing. Dinner: Falafels. Sides- pickled radishes, tabouleh and leftover hummus from breakfast. Dessert: Chocolate Mousse or if you have time, macarons! 😁 Most of it is all simple to make that doesn't involve a lot of cooking.

I have tried all these recipes, except the burger, and all I can say is - they are sooooooo good. My mousse didnt turn out so fluffy so I popped it in the freezer and turned it into ice cream. So good.

I’m not exactly a vegan or vegetarian, but I have been eating more plants & veggies and less dairy & meat lately. Over the weekend, I find & buy the groceries for one or two vegan/vegetarian recipes and decide which meal(s) I want the recipe(s) to be for the upcoming week (meal prep?). I plan for snacks, too, cuz I’m guilty of midnight (or 3 a.m.) snacking just about every night lol Even though morning star doesn’t have the best rep in the vegan/vegetarian community, I love their burgers. My local Walmart stopped stocking their black bean burgers and upped the veggie burgers. I like both but it was nice to be able to switch between the two for lunch when I wanted lol

My mum cook curry mix of chickpeas and pink lentils.(with less tomatoes or no tomatoes) honestly! That's taste soo good .. Actually! The pink lentils will make your curry thick like creamy soup .

I'm not Vegan but I am going to use some of these ideas to incorporate chickpeas into my diet. I'm going to have to change some of the recipes based on what I can find and is cheapest and the fact that I have to use an air fryer and no oven.

I love the recipes. Looks really yummy! I’m just intrigued now at the blurred pictures in the background. I wouldn’t even notice it if Merle didn’t walk off to grab a beer 🙊
I'm not Vegan but I am going to use some of these ideas to incorporate chickpeas into my diet. I'm going to have to change some of the recipes based on what I can find and is cheapest and the fact that I have to use an air fryer and no oven.
