That smoked version looks amazing. I'm not vegan. I subscribe to this channel because i really admire your creativity, and your dedication to this lifestyle because it can't be easy to do a high fat plant based diet. I wonder if you can use any other type of nut? Cashews are a little higher than i like, but i would be will be ok with it if i can't use macadamia nuts or almonds. Also, have you tried this with full fat coconut milk? I noticed the can you used said light. Again, not vegan, regular keto, going to try this recipe for sure because that looks amazing, and even those of us who eat meat can benefit from being flexible and knowledgeable of plant based ingredients.
Thank you so much angie! You can definitely use almonds (macadamia should be fine too) but make sure you soak the almonds for a few hours before use (no need to remove skin). Also, full fat coconut milk is totally fine. I would have used it if I could get hold of it.

This recipe was AHHH-MAYZING! I made the smoked version. It turned out so delicious and beautiful. I misread the recipe and only put 2 T's of flake agar-agar but the creaminess was perfect and it held together wonderfully. I'm going to stick with that adjustment. BUT, my carb counter app alerted me that it was higher in carbs than I need and high in calories. So, it's going to be a special treat for when I'm in the phase of maintaining my weight, after I drop the weight I need to lose now. I'll be making this for parties and my husband LOVES it. GREAT recipe.
You may replace the Cashew with Macadamia that is relatively lower in carbs. Just soak the macadamia for 24hs. (It's an harder nut than cashew) Skip the carrot that is another high carb ingredients and replace it with pinch of turmeric. I believe that after these replacements it will be low carb.

These are lovely! Fun to do too. My only change is to put crinkled grease proof paper up the sides, into the containers without extra oil, just my preference. Also think the cheeses looks lovely with the set crinkly edges! Your recipes are wonderful 🌞

It tasted absolutely fine, but I wondered if there's any suggestion as to how I could make it taste a little bit 'sharper'? I think the carrot I used may have been a bit too big and I wasn't sure of onion size. That said, it still tasted much, much better than all the other vegan cheeses I've tried to make. I do not know about the UK but you can get Aroy-D brand coconut milk and cream in cartons from Amazon. Aroy-D is absolutely the best! I am not vegan but am keto and I love your recipes and your presentation!
I totally agree about the tins, but there are three products that I just can't find in any other version: canned coconut milk, plain pumpkin puree, and Chipotle peppers in adobe sauce 😁 I make everything from scratch, except vegan cheese, and I have wanted to start diving into different vegan cheeses.... Some seem so complicated with rejuvelac and all that. So I just made vegan mozzarella balls for the first time today, and now your smoked paprika cheese with the nuts is next on my list. That looks soooooooooo incredible!!! 😁 And your little glass domed container is absolutely lovely!!! ❤️
I am vegan (using no added fat in the form of processed oils). I am considering going keto vegan due to having such terribly itchy skin. It drives me crazy!! Heavenly Fan - did you have the same problem being vegan? I am hoping that keto vegan will resolve this issue. Anyone out there having the same problem? Did going keto vegan help any? I've never had itchy skin being vegan but it sounds very much could be due to your diet, environment or hormonal changes. As I remember there was one occasion my skin was so itchy prior to my period (PMS). But it was one-off. I have no medical training at all so this is purely a suggestion like a friend to another. You can always try vegan keto and see if it improves your condition. Sometime process of elimination is the most effective way if the cause of symptoms is unclear. Big hugs from me X

I read yesterday while researching that itchy skin on a vegan diet can come from not having enough omega 3s. So I will try as suggested to eat more soy, chia/ flax/and hemp seeds, avocados, nuts, spinach, and someone mentioned adding (seaweed/algae-based supplements) or nori sheets for extra omega 3s. All things I like!! Thank you again for your suggestions. X

Cashews are best for cheeses because their slight sweetness mimics lactose, the sugar in milk. It also yields a much creamier product than other nuts, and other nuts also have a much stronger flavor that would not taste as cheesy or creamy.

I have subscribed, so clearly am interested but just need to add a small criticism : cheddar cheese in its country of origin, is not orange so the carrot would be unnecessary. Only in the states is cheddar orange! Cheddar is in Somerset, England!
You can actually make coconut milk or cream at home from scratch simply and easily using dried coconut. It is cheaper, tastes better, and does not have all the junk in it. There are plenty of easy recipes online.
Delicious .... but despite the large amount of nutritional yeast, it does not taste like cheese, but like spicy cashew spread. To get a cheese flavor you should ferment the cashews with a probiotic that contains lactic acid bacteria. You do not need so many ingredients - only cashews, nutritional yeast, salt, white pepper and probiotics. Grind with a little water to a smooth cream, leave in a dark and warm place for 24 hours and then refrigerate until set.
This is a good alternative. But I have one question: Is the Nutritional Yeast absolutely necessary? I only ask because the stuff causes me to break out; guessing I'm allergic or at least sensitive. I really, REALLY miss cheese...

Watch the carbs!!! Cashew is NOT keto fraindly. I suggest to replace the cashew with low carbs nuts like Macadamia or walnuts. (Can be mixed) the colour will be different,but for the smoky version it's not important.
I wonder if the smoked version was creamier because it was processed longer? You blitzed it more to mix in the smoked paprika. Just a thought. It looks lovely (especially crusted with nuts on top)!

I think I have found coconut milk in cartons before but they’re very hard to come by. I’m not quite sure why that is.
