  • This pickled radish, called chicken-mu, is tiny cold radish cubes, pickled in sweet, sour, and just a little salty brine. It's a very refreshing side dish for Korean fried or roasted chicken. Full recipe:

    This is the easiest pickle daikon recipes I’ve ever seen. I made a batch a month ago & just finished the last bit. I’m surprised it lasted that long & still taste crunchy & fresh, no mold no weird taste, brine is clean & clear. Will make more & this is going to be my fridge-stable now

    Brine:
    ⅓ cup sugar
    ⅓ cup + 1 tbsp white vinegar
    1 tbsp salt
    ¾ cup water
    Mix to dissolve.
    Add 1 lb korean radish (small cubes)
    Place in air-tight container.
    Best refrigerated for 12 hours. 💜

    I love you!!! I’m a Korean woman who has been in the USA since I was 6 years old. Never been acclimated to Korean culture due to where I grew up and felt ashamed.     I tried this with red radishes, and it turned out very well. Sweet, sour, crisp, refreshing. After one day, the brine turned pink. 💕

    Thank you for your time, I am over 70 years young in Phoenix, Arizona USA and my 1st attempt to make Makgeolli in my 5L Onggi did not come out as I expected. The kitchen was around 81*F and after about 5 weeks when I went to fill my swing top 500ml bottles I wound up with the best tasting "Rice Wine Vinegar" I ever had. So I am using it for my vinegar for now. I made 5 and 1/2 bottles of it and I am down to one now.

    I just got back from Seoul and tried fried chicken with pickled radish for the first time. Enjoyed it at a baseball game. It was the perfect snack. A genius combination!

    I'm Vietnamese and we eat this a lot. You can store the pickled radish for months: use only white vinegar and sugar with 1:1 ratio, no water. Cut up the radish but don't wash it (water will spoil the pickle faster). Submerge the cubed radish in the vinegar+sugar solution. Add salt if you like it salty. And don't forget to refrigerate right away! They last for a very long time if you don't add water! Also, I add in 3-4 cloves of garlic for a garlicky flavour too 😊

      In China we also make these, but in long sticks. We also use only vinegar + sugar. Sometimes we add a little fresh chopped chilis to the brine make it spicy

    Every time I go to Korea, I have fried chicken with my family and it comes with chicken-mu, but when I make fried chicken, I can't find it at any stores. I tried this recipe and it tastes just like store-bought chicken-mu! Thanks so much for this awesome recipie!!

    When I was in Korea for summer school, I'd buy a small container of this pickled radish and danmuji from a mini market next to my dorm almost everyday. They're so delicious! I like to snack on them too 😂

    I recently introduced my in laws and husband to Korean food and they loved it however my mother in law doesn't handle heat well so I was looking for this recipe to make for her I think she will love it, I love it also. I still have to introduce them to Korean Fried chicken ^^ when I had it for the first time in my life in Seoul 8 years ago I was blown away! am sure they will be impressed

    Hello Maangchi, as it is not obvious to find the same type radish as you show in the video or in Korea, I will use the radishes we have here in Europe, the little red ones with leaves. I think it will suit ❤️

    Hi! Love your Chanel! Have trayed most of recibes, all are delicious! She re i live is hard to find that kind of radish or even daikon. I have used jícama as a substitude, added a nice crunchines and sweetnes to kimchi and to kimbaps ( i used zafron to vive it the yellow color). Grettings a huge lovely hugh from mexico!
