I made this! And it is really perfect! This is the recipe that I'm searching for! The cupcake isn't so dense but it has a light and fluffy texture almost like a hybrid between butter cakes and chiffon cakes! It doesn't require way too much fat (oil & butter) unlike those other recipes that I've tried which ⁵makes this recipe cost effective! I initially thought putting a whole tsp of baking powder will make a bitter aftertaste for this cupcakes but it didn't. A must try! Edit: i measured using grams. I used a conversion table which goes like this and i also modified the recipe a little bit: Butter 57g Oil 60ml Sugar 150g Egg 2 large Vanilla 1 tbsp (i love vanilla haha) Flour 234g Baking powder 2tsp Salt ¼tsp Buttermilk I used 90g Greek Yoghurt and 90g Full Cream Milk

I just made these and the crumb on these cupcakes is textbook perfect! A fine, light crumb that is spongy (and not crumbly) - the best cupcake I have ever tasted. I used store bought buttermilk and all my ingredients were body temperature (except the butter which was room temp) and I think the step where she says to "just combine" the flour is very important, I had the beater on low for like 3 stirs and then stopped and just did a quick stir with a spoon to make sure the flour was combined. Even the batter before going into the oven was light and airy! YUM!!! Highly recommend!

Hi, I made these and I luved the flavour. Half n half ratio of butter n oil gave a denser crumb but I definitely admired the buttery flavour. Sweetness was just right as well. I made around 29 cupcakes but 24 will be the correct number if equally filled till 2/3rd quantity which I dint 🤔. I did modify the procedure a bit by alternating the buttermilk n flour addition. And yes I tried not to overmix as well. The cakes rose well n retained their domes. Thanks for the recipe 😊
I noticed in the comments no one seemed to have made/reviewed your recipe. I've made your chocolate cake and it was awesome so I'm trying this one. I made them by hand instead of with a mixer. I'll edit the comment when they come out of the oven. (I am 13 and nothing cake related usually turns out except for your recipe) They turned out okay. Since I made them by hand they weren't all that fluffy (my fault) and they tasted like a muffin base without fruit, not like a vanilla cupcake.

They were delicious and I also added mini chocolate Chips to the batter!

Buttermilk is not available where I am and I tried the milk+lemon juice substitute but it was still not good. I have been using Laban lately and it's better but I wonder if I should add lemon juice to it to make up for the acidity? Or is there no need?

About buttermilk substitute -- If you cannot get buttermilk, sour milk is a good substitute. For one cup of buttermilk, measure into a measuring cup one Tablespoonful of vinegar or lemon juice and complete with milk (preferably 2%)
Sounds like you actually didn't follow the instructions perfectly as we often don't realize our own mistakes. That's why they are called mistakes. Let me know when you figure out where you went wrong!

I think your cupcakes became dense because of too much flour... Im not sure i just read that on a book..did you sift your flour?
I tried this recipe with cake flour. They were good the day of but the next day they were dry and denser. I stored in air tight containers
