I really love how you explain it! It allows me to feel the love you use for cooking, which is the main ingredient. No doubt why your son became a professional chef!
Ive been binge watching allllll of your videos...especially the simple pasta series. These recipes seem so simple and relaxing watching you prepare them
This what I love about Mediterranean region food, its healthy, medical, aromatic, tasty, and you never get enough of it, Specially Italian and Moroccan food. By the way, what a charming lady!!!.

Her pesto is so good. I never liked it before because I chose too strong a grinder. I chose to do my pesto with the same grinder as in the video and it turned out to be perfect. It's simple and delicious.
I followed this and I cannot believe it is delicious! I am so happy! I don't have parsley though, and replace it with almonds.iy is delicious!!! Thanks Lidia!
i use chopped walnut and add a little bit of black grounded pepper but i never try with parsley and i love fresh parsley!!! by the way, long time ago when i was living in San Francisco, I was in an italian restaurant at North Beach and ate a vey fine pasta like spaguetti with some souce quite dry and very spicy (I like chili) with some little pieces of beef so good but i cant remember the name of it, it was a long italian name but its not puttanesca, do u know what it can be, please??
@@BarbaraRomano-akatropicgal55 not , it was pasta with almost not souce but it was red and the flavor was so nice, very dry, oily and hot like with chili powder maybe and little pieces shredded beef or lamb maybe, it was delicious
I like the way you present your easy going video's and the straight forward recipes. I also like your judging on "Beat Bobby", you always look polished .
through necessity, I have found that you also can sub roasted pistachios for pine nuts (like if you ran out of pine nuts) in traditional basil pesto, too. I am not a huge fan of spaghetti with pesto, but I see no reason not to sub a different pasta (such as linguine or fusilli or trofie) for it.
High_ridges or pecans. Or cashews. Or macadamia nuts. The sky is the limit. i’ve tried all of them with wonderful results and even gotten positive responses from native Italians.Hell, if you’re from the south of the United States why not boiled peanuts?
Hey Lidia Bastianich, I love pesto especially, the one that you have made and I wanna know, how many times do you make pesto in a month and if this is most favorite pesto?
Makes 3 cups pesto, enough for 1 pound pasta, serving 6 people, and 1 ½ cups extra Ingredients • ½ teaspoon salt, plus more for pasta pot • 3 packed cups fresh basil leaves • 2 packed cups fresh parsley leaves • 1 cup unsalted pistachios, toasted • 8 garlic cloves, peeled • 1 ½ cups plus 2 tablespoons extra-virgin olive oil • 1 pound spaghetti • ½ cup grated Grana Padano or Parmigiano-Reggiano Bring a large pot of salted water to boil for pasta. Pulse the basil, parsley, pistachios, garlic and salt in a food processor. Pour in 1 ½ cups of the olive oil in a slow, steady stream. Process to make a smooth paste, stopping to scrape down the sides of the bowl occasionally. Slip the spaghetti into the boiling water, and cook until al dente. Scrape half of the pesto into a large skillet and add 1 cup pasta water (no need to heat the sauce). Use a spider to drain pasta and transfer to the skillet. Drizzle with remaining 2 tablespoons olive oil, and toss to coat the pasta with the pesto. Toss with the grated cheese and serve. NOTE: This recipe makes twice the amount of pesto you will need for 1 pound of pasta. You can freeze the remaining half of the pesto for future use. Just pack it into a plastic container and pour a thin film of olive oil over the top. Thaw in refrigerator before using. Or you can cut the recipe in half, if you just want enough for 1 pound of pasta.
Hi Eric, if you are looking for a high-quality olive oil, go with an Italian one from a small producer. Out of the larger producers, Lidia recommends Monini, Ranieri and Farchioni. You should be able to find them in your supermarket. Otherwise, Colavita and Cappelli are also good and should be readily available.
I really love how you explain it! It allows me to feel the love you use for cooking, which is the main ingredient. No doubt why your son became a professional chef!
