How can I set a stop in between laying fabric in hatch instead of manually stopping it it and sometimes forgetting and passing the lay down of fabric.

The applique function has stops (frame-outs) builtin. On a multi-needle machine, you can program the machine to stop and wait until you restart it, On a single needle machine, you have to refer to your worksheet to know when the machine is stopping for the fabric placement or just waiting for you to change the thread.
