Good idea to mount the engine and transmission first. Your pinion angle will change but not a lot. You may also find your driveshaft length needs slight modification. You may need shorter shock absorbers also shocks work best when with the complete but empty truck weight on the springs and the shocks are mid stroke in their travel.
I have 1972 f100 and I'm a one man garage too. I was observing you video because I want to drop it from the rear and front. It looks very simple but I'm 70 years old I believe i would need some help lifting the rear diff. Thanks for sharing your video.
Looking back i thinking of your radius arms do you think it would been easier to cut the bolt off and drill it out. Not criticism just would it have been easier? Hindsight if you were to do again ? Always looking for the easiest way.

If you have a good jack and you just take it slowly, you should be able to do it. Otherwise find a youngster to help you 😁

You need to turn that rear leaf bolt around or it will gouge out the leaf mount when in travel.

Easiest way would probably be to just get another one! 😅 Drilling it out would also work. If you have the right size drill bit...
