      Dao Yang for now. The marketplace is currently demanding leaner beef but eventually I'll be getting some Japanese wagyu beef cattle to raise and sell their meat.

    My friend and I followed this recipe and ate this last night and it was SO DELICIOUS!!! I'd only had Kanto-style sukiyaki before and this was my first time enjoying it Kansai-style and it was really phenomenal, it was an amazing meal. It tasted decadent even though it was so simple to prepare! Very good for enjoying with other people and chatting while adding and seasoning the ingredients. I definitely want to do this again!

    If people are so concerned with raw eggs being unsafe, then there are 2 methods that can be done to pasteurize them at home or make them safer to consume.
    1) Outside Method: Submerge your eggs in 140 Degree water for 3 minutes in a sauce pan, making sure not to exceed 142 degrees for those 3 minutes. Rinse them in cold water immediately. This method allows you to store the eggs in the fridge for later use.
    2) Inside Method: For every egg, combine 2 Tbsp liquid (lemon juice, water, flavorings, or milk... but do not combine the lemon and milk for they will curdle) in a clean stainless steel bowl, whisking until frothy. Fill a sauce pan halfway with water and bring to a boil. When it starts boiling, turn off the heat. Place the bowl with the egg mixture over the saucepan and whisk constantly for 2-3 minutes or until the water in the sauce pan is lukewarm. Make sure the water does not touch the bowl holding the egg mixture. This method is for immediate use of the eggs.
    *Note: To pasteurize egg yolks, use 4 Tbsp of liquid for every egg yolk.
    If this still doesn't convince you of its safety, then soft boil the egg for 2 minutes, crack it open and whisk with a fork. The whites will be slightly lumpy, but at least it'll be safe enough to use in this specific recipe.
    So there is no need to fear raw eggs at home with these techniques :)

      It's because Japanese eggs are sold pasteurized, and for some reason, eggs in the west typically aren't. So westerners see it and assume it's a lot more gross than it actually is.
      Despite being a westerner, I don't mind raw egg. The whites on their own have a texture I don't love, but if it's beaten/scrambled or just the yolk, it's delicious.

    • @FabbrizioPlays
      @FabbrizioPlays 3 года назад +1

      Japanese eggs are eggs sold in Japan. I don't see why this is confusing to you, unless you're just itching to fight about something and don't care what it is.
      I live in the US and I very rarely see pasteurized eggs - at major grocery stores, pretty much never.

    Wow! I live in California, USA and the Idea of eating anything "dipped" in raw egg is almost unheard of. The idea that you can do that, because there are no preservatives added to your food is amazing to me,like in America, is amazing to me.

    • @fuuchan27
      @fuuchan27 10 лет назад +2

      Its not preservatives, but the way chickens and eggs are farmed in the U.S. that makes them unsafe to eat undercooked. Japan uses different methods of farming that don't result in their chicken and eggs being a literal biohazard.

    • @hellotanibelle
      @hellotanibelle 10 лет назад +1

      The U.S. is one the weird countries in the world that refrigerates their eggs. The reason why is because the U.S. commercial farmers wash their eggs and washing removes the natural protective coating hens excrete on their eggs which protects the eggs from getting contaminated with...Salmonella for instance. Which makes eggs unsafe to eat, and we refrigerate out eggs to lower rate of Salmonella....and well look up the U.S. rates of Salmonella it'll tell you if that works properly or not. Why do farmers wash their eggs? Nobody buys eggs with crap on it.

    Raw eggs. many people think its dangerous to eat right? Im from asia and there are a lot of eggs which they so called it 'fresh' even if they are not. I would always go to the market instead of the grocery store in order to buy fresh eggs. I can eat them no problem, but if you guys think that it is risky then don't eat it raw. It is as simple as that. May i tell you when you eat gingerbread cookies or any other cookies, the royal icing is made from "RAW EGG WHITES and icing sugar." I always laught at those people who eat the royal icing in the cookies and then they would comment on how raw eggs are risky in some videos. So stop your whining, because most of you eat raw eggs too.

    • @angelougalam8672
      @angelougalam8672 9 лет назад +3

      Yes i know that it risky, but you know I eat raw eggs, raw fish (sometimes) and raw meant(once in a blood moon) and up until now, i never had any sickness. That just proves what people say are just wrong, now im here just to tell you what i have been doing, not forcing you or anything.

    • @DMTHOTH

    • @angelougalam8672
      @angelougalam8672 9 лет назад +13

      nope, i dont believe what you call luck lol.

    • @MissBrieBiscuit
      @MissBrieBiscuit 9 лет назад +7

      DMTHOTH 'More likely', as you said, means its a possibility, not a definite occurrence. It is more likely to find salmonella in these things than it is to find it in, for the purpose of example, vegetables. But salmonella is not a component of raw meats in the same way that their protein or iron is. Eating raw meat and risking salmonella is like eating a raw vegetable and risking E. coli. The people that get sick from these things are the "lucky" ones.

    • @Deenahwashere
      @Deenahwashere 8 лет назад +2

      +Angelina Caterina I agree with you but it all depends where you live in the world.. Here in Norway Salmonella is rare in eggs so we eat it raw all the time in batters, toppings, sunny side up, poached etc. :) We also can just eat a raw egg and when I make this I will. I dont like the idea of eating raw egg by itself though. :d

    My mouth insanely watered throughout the video even though I just ate a big dinner.... I WANT TO EAT SUKIYAKI! But there's no possibility of finding thinly sliced beef anywhere here. Poland meet shops have so little ingredients, people are narrow minded when it comes to cooking. Rosol, schabowe and bigos, that's what i can make here =_=

    • @sandninja1795
      @sandninja1795 10 лет назад +3

      I couldn't find any thinly sliced meat here in UK for a long time but I discovered that in most oriental food shops in the frozen section they have all sorts of thinly sliced meats including beef, pork and lamb! It was a little expensive for it's weight but definitely the right sort of thing for recipes like this~ ^.^ If you have an oriental shop near you, I'd highly recommend checking out their freezers :3

      I read once that if you buy a big piece of meat and freeze it for an hour, it's easier to slice it thinly. It might not be as thin as what's sold in oriental stores, but I hope this helps. :)

    • @kei-chwan
      @kei-chwan 10 лет назад +1

      Shinusuke Akki I have only one good oriental shop near me [by good i mean they sell more than chinese noodle soups and by near I mean 30 minutes by train] and there wasn't any sliced meat the last time I was in there. But I'll check of course when I'm near :)
      goirkens That's how I was making gyudon for many years. It works but I can't get slices thin enough to my taste... Or maybe I have a sucker knife :P

      Pick up a ceramic chef's knife (cuz it stays sharp if you don't abuse it) or purchase a fillet knife. A "bread" knife is also pretty good at these sort of jobs, though the cleaning can be more tedious because of the serrations. Also Alton Brown (read: cooking god) recommends having you knives professionally sharpened once a year and the you hone them on your knife steel after every use.

    Thank you for mentioning the raw eggs! A lot of videos on making sukiyaki leave that out and it is the BEST way to eat it~!

    MY GOD, I'M HUNGRY!!!!! Eating it dipped into a beaten egg... Why I haven't ever thought of this method... I'm a big fan of half raw eggs...

    This looks like a fun and tasty family dish to enjoy around a central hot plate. I'm a tad skeptical about dipping fresh cooked items into raw egg, but hey, maybe it will yield to the flavor when I give it a shot! I hope you and everyone in your channel's staff have a wonderful New Years, and I look forward to the new dishes of 2014!

    Chef and Francis got me onto Kansai-style sukiyaki and now it's my favourite type of sukiyaki to do at home. I have to admit that I went through a period where I CRAVED Kansai-style sukiyaki and almost had it every week. But because the meet was so expensive, I would sometimes just have it without the meat (I know! But I was desperate for the sauce).
