Please try going to a restaurant called "Sakana" in Hida in autumn. In my mind, there is a type of sukiyaki that surpasses Wadakin, Ishibashi, Hiyama, etc.
This sukiyaki is Kansai-style, using white sugar. Sukiyaki is a dish in which the beef is of course delicious, but I personally think it is a dish in which the mellow juices from the beef are mixed with vegetables and transformed into an amazingly delicious dish.
One time in Yokohama, my aunt a beautiful Japanese lady (my sister godfather‘s wife) took us to a restaurant for something like Sukiyaki, a lady all dressed up and served us all the way. The only thing I could remember was the price (120,000¥ per person ).
It’s hard to say that any sukiyaki in Japan is the best. I’ve had so many. All I can say is that, when I’m eating sukiyaki there, it’s the best I can imagine.

ここに1回目来たら何を頼むか?と言われるとやっぱりすき焼きが一番かなと思う。砂糖と醤油だけで後は野菜の水分と肉の油だけのシンプルなすき焼きを味わうならここだと思う。

大阪ですき焼の名店といえば御堂筋/道頓堀の「はり重」が一番有名やけど、
あそこは大阪では少数派の割下すき焼やからなあ。
割下使わん大阪式すき焼なら北新地の「まつした」か東心斎橋の「北むら」かなあ。
そうそう、はり重はまさかの割り下で、大阪人にはすき焼きというより牛鍋に見えてしまう。そしてコメント見に来たついでにまた動画最後まで見てしもた。
