    This recipe for Mediterranean stuffed eggplants with meatballs is served with a creamy sauce and cheese on top.
    1. The eggplants should be cleaned, pitted, and then layered before being submerged in salt water for ten to fifteen minutes. and let them dry after that. once you can cook both sides, using less oil in the process.
    2. Meatballs: for meatballs. Grate an onion, then add the spice and the ground meat, mixing thoroughly. Form them into elongated meatballs and cook over medium heat until nicely golden.
    3. Sauce: It's time to make the creamy sauce now. Just add a table spoon of tomato sauce to the oil, along with some paprika and turmeric. You can also add mayo or even a cocktail sauce, and stir everything thoroughly.
    4. All that's left to do is place the meatball inside a fried eggplant, roll it up and use a toothpick to hold it in place. Spread it out on a platter, cover with a little of that rich sauce, and feel free to drizzle a little more over the sides as well. Add some cheese on top, then bake it for 15 to 20 minutes.
    We don't need to bake it for a long time because all the ingredients are already cooked.
