You can try the white wine instead of vinegar...then you can add thyme and parsley. A bit of Worcestershire sauce. And the heavy or milk of course with mushrooms.
Really like this recipe. (The beans and mushrooms plus parsley are what does it for me.) I am going to try making the tomato-based afritada with pepper (crucial), plus baby potatoes and baby carrots - your version; but with less prep - convenient for my arthritic hands. Maybe next week, with my rotisserie chicken bought one...?

My mother is a Filipina and one of her friends close by has calamansi trees in her backyard. Every now and then we get a large bag of them that my mother uses for marinades and making calamansi juice. I think honey and butter isn’t weird. Some filipino moms would really use sugar on their food especially if they’re cooking meat it some kind of a sauce. For me it brings out the savoriness of the meat.
Healthy creamy chicken mushroom is sooo good!! Just a comment -- on the written recipe, ingredients say 1/2 cup almond milk while in the written procedure it says oat milk. :)
So, making this right now and I followed the recipe to the T., (well, almost actually. Only thing I did different was reduce the amount of fish sauce and soy sauce). But mine seems to be having trouble reducing the sauce. What am I doing wrong? Aside from that little problem, it's tasting pretty good already.

Cook the mushrooms in a cold dry pan. Collapse the air pockets, and the mushrooms won't absorb as much oil.
