I can't believe I just found this channel! Very entertaining and educational.
Definitely the most creative use for sweet potatoes I have seen! A quick meal I make is brown rice (I buy the frozen one from Trader Joes), a can of black beans, salsa, and mashed avocado. Pretty basic but really good and filling!

Easy burrito bowl:
1) Rice of choice (I like jasmine)
2) beans of choice (black or pinto!)
3) frozen corn
4) sautéed mushrooms
6) salsa
Tadaaa just microwave before you serve obviously because frozen corn lol. I pack this for lunch all the time!

I tried all three recipes this week and they were excellent! My husband and I are new to being plant-based, so trying new recipes and adding new stuff to the repertoire is important. I highly recommend these recipes and they were super easy to make!

I totally related to the outtakes at the end... That is SO me! You are such a joy to watch :) As for quick meals, I love roasted butternut squash, beet & walnut dip, olives and lettuce. If I'm REALLY lazy... roasted cauliflower dipped in hummus.

The white beans and kale look so divine. My quick go to meal is avocado toast with sautéed spinach, cherry tomatoes and a sprinkle of Trader Joe’s everything but the bagel seasoning. So good!

I made the quesadillas with butternut squash I had leftover from making your mac and cheese recipe earlier this week and it worked great!! So yummy. I bet I can make another recipe or two of yours before the week is over.

I made the white beans but with spinach. I added the spinach the last three minutes of cooking (since it's not as tough as kale). I put it on a bed of bulgar- and it was fantastic. So simple but tasty. TY Nisha!

Nisha, this channel is pure gold! You're so personable and funny, and your dishes come out looking 100x better than anything from a restaurant. (When you open your first restaurant, can it please be in Mexico City?)
I haven't eaten so well in my whole life as I have since going vegan two years ago, and especially since finding your channel. You should have an affiliate link for the Instant Pot - I bought mine inspired by your recipes, and it's been a total game-changer. (My go-to simple meal is just to throw whatever grains, beans, lentils, veggies, tofu, tempeh etc. I have in the fridge together with some spices.) Still setting up a kitchen after two years of nomading, I'm just a few spices and appliances short of being able to try all your recipes!
These all sound good! Will be trying them this and next week.
@RainbowPlantlife I love to make sauteed veggies ( potatoes, peas, kale, and spinach with caramelized onions) over rice. Or sauteed butternut squash and shallots in olive oil and while it's sauteeing boil some spaghetti pasta. When pasta is done ( cook about 8-10 minutes) add a couple of tbsps of the pasta water then spaghetti. Toss together and garnish with a with just the slightest pinch of black pepper.

Fastest vegan thing I make is a packet of Trader Joe's steamed lentils with a jar of either their Bruschetta sauce or organic salsa, mix, and that's it. Always good but even better the next day. Served with rice it's a full meal. I sometimes throw in olives and canned artichoke hearts.

Quinoa-stuffed sweet potatoes! I pop a sweet potato in the air fryer or oven until it softens, stuff it with some quinoa, and drizzle a vegan chipotle mayo on top! Delicious and so easy.

My simple go-to meal when I have to cook fast and don't have many ingredients is pasta pomodoro. Pasta, tomatoes, onion, basil, olive oil - it's delicious and it's a crowd pleaser.

Yeah if I don't have much I take a can of vegetable soup and mix it with rice, its a struggle meal but it works 😂😂😂

The mushroom dish looks and sounds great.
One of my easy, use-what-you-have dishes is just oven roasted vegetables - carrots, celery, green beans, Brussels Sprouts, cauliflower, zucchini or yellow squash - tossed in a little olive oil, salt, black pepper and paprika, and some whole fresh herbs if you have them - thyme, rosemary. You can add the different veggies to the tray at different times (green beans don't need much time at all). 390 F oven for about 40 minutes - eyeball it, and poke the veggies to see how tender they're getting. Put a sheet of aluminum foil over the veggies for the last 8 to ten minutes so the herbs don't get charred. Sprinkle with parsley flakes before serving/eating.

Pita pizza!!!
Pita bread with tomato puree, chili flakes and any vegetables on hand. Put it in a hot oven and top them with rocket salad when there done! Also some nutricional yeast does miracles

I just finished making the stroganoff !! I added “beefless ground beef” from Trader Joe’s to make it beef stroganoff and some yellow onion and green onion , delicious !!!! & I used fettuccini noodles .

YOU'RE A SAVIOR!!!!!! Your recipes are so much more "down to earth" than many vegan recipes out there. I actually end up looking forward to cooking and waiting for the next recipie that I'll try, whereas in the past the kitchen meant frustration to me. thanks again
You can cook any vegetable left-overs, like the stems or ends of vegetables (or even the whole vegetables) in water on a low heat until they have become soft. Remove the vegetables, salt to your liking. It is more of a pain than just purchasing vegetable broth, it's just that you don't really need a recipe to make it. It can be made with just onions, carrots and celery. It's faster to buy the vegetables and cook them whole (and even eat them after they are removed from the water).

I've just cooked the white bean and kale dish. It cost less than £3 for all the ingredients, yet makes enough for 3 servings, at least, including one for the freezer.
Simplicity itself and very tasty. Although I did simmer it for 30 minutes, just to make sure that the kale is nice and tender. It is. Can't wait for dinner! 😋

I call them "Johnny's wonders out of noting (empty fridge)" :), I would either do Oystermushroom, + pesto tortilas (dead easy to do) or Pasta ala me - which cosnist of a simpe sauce of stewed onion, capers, oregano and basil + toamto puree and garlic of course + pasta. And third, not fully vegan, but a spinach cake (not a pie as it is not coverd), but that contains a few real chees (cheeses?) and eggs. Anyway, love your channel. I am happy to come across it and subscribed straigth away! Take care.
1 can black beans (drained and rinsed), 1 can stewed tomatoes (diced) mix together in small sauce pan and serve with a grain. Super fast and super tasty!
Brilliant suggestion, Laura!! No need to even season this combo further. I haven’t thought about incorporating stewed tomatoes in my shopping in many years.
As I’m writing this, the idea of spreading them atop a baked mac & cheez and then adding panko just popped into my head. 😋

I am not vegan yet, lol but working that way. I have a medical issue that has disabled me from weightloss surgery. Basically My digestive system rejects almost all meat and also I have to eat foods that I can chew well. It started 3 years ago and I had to file for disability. So the weird thing is that my system loves beans of all kinds. My two daughters are now grown and its just my husband and I so it has been easier to cook. My husband is a meat eater so I just make 2 meals. I l live on soups mainly, because they are easier for my stomach to break down. I am so excited to find you because you have so much knowledge. I could care less if I ever eat meat again and the only thing I do have is bone broth (which I drink like coffee daily) and I eat liver 2 to 3 times a week per my Drs direction. It really got to be a life or death situation. I struggle to eat enough protein and calories. But I am thankful to have found RUclips! But there are a lot of people who don't Give good information. I love my pressure cookers. I can make beans and lentils, rice quinoa ect easily! So I am excited about your recipes. You have interesting foods with flavor. So thank you so much for helping me with this journey. I have spent so many hours crying because I am so hungry all the time and not being able to keep food down was vetting so depressed. You have really been a life saver. I want to get your cook book but my budget with covid is a little tight. But I have the next best thing I can watch you prepare all this beautiful food! Thank you thank you!

Just made a 5-sh ingredient meal: water sauteed yellow squash w/ garlic and onion on toast with hummus and sliced cherry tomatoes. topped with thyme and rosemary. wish i had mushrooms with it!

I love to make chick peas roast them for about 35 minutes with some coconut oil, salt and brown sugar. So yummy 😃😜
I made those quedadillas today for lunch. They were so good. I didn't add as much hot sauce and iadded a little lime juice to help with the blending. But man they were good!

@@RainbowPlantLife i was just having a hard time getting it to blend and needed something to loosen it up. So i figured lime juice would give it more of a "mexican" kind of flavor. Give it a shot the next time you make it.

I'm wary of Kale though, having tried it once, it was really unpleasant to eat, as it was really tough, so much so, that I feared for my dental work!
I gather now, that the trick is to get rid of the stalks?
Kale deserves a second chance! I always cut the stems off, and massage it if putting in a salad (amazing, worth trying just to watch the transformation) - otherwise just cooking it should soften it up enough. Give it a shot, you'll be glad you did!

I really enjoy your recipes, but I don't own a food processor or a blender (college student dorm life haha), could you maybe give a compilation that doesn't require a processor or blender to make? Been wanting to try more vegan food but it's hard to make a lot of things without these tools :/
