      Janet Hagen It depends what your diet was like before. Was it very meat heavy centric? Was it processed food centric? To go vegan properly it’s best to incorporate whole food plant foods. And know that you will likely be consuming more fiber than ever before. It will take some time to adjust to that. Also are you eating consistently and enough for your lifestyle?

    I am 68 years young. I became a vegan about 5 years ago. I take a lot of flack from my family. I did it for health reasons plus I love all animals. I do not want an animal to die so I can have a meal. I love your recipes! I want to eat healthier because I tend to eat vegan junk food. I live alone & it’s just easier. Your videos show that it doesn’t take that much time to actually prepare meals. Keep the videos coming!

    Why hasn't Food Network found you and made you a star? I can't believe that channel still shows all carnivorous chefs! We NEED you and other vegan chefs on TV to inform the masses what they are missing! You are that good, and so are your recipes!

    On a Friday in August 2017 I told my wife I was going vegan. Next Friday I told her I wasn’t going to eat meat. She looked at me like I was crazy and asked for how long. I said forever. She said she was going to do it too. We watched Earthlings and cried a lot.

      Wow that's wonderful! I hope you're both still going strong! I hope one day my family will ride along with me because it makes things very challenging living in a home with 5 non vegans. I love them and dont pressure but wow how wonderful it would be to all eat vegan meals together. Maybe one of Nishas dishes will do the trick!

      I haven't watched any of those documentaries because I am already vegan since 2010 and vegetarian since 1994 plus I am a crybaby.

      @Charisma Girl not vegan but I really cats, as you note, must eat meat; people have a choice. So I see it as fine for a person to both choose not to eat animal products and respectfully allow a cat to live as it is meant to live. I find it harder to understand people who feel that everyone should make the same choices they make. That goes for vegans and non vegans alike.

    I'm not a vegan, but I keep noticing that vecans and vegetarians are generally happier than normal people. I think it's because thay can fully control what they eat, and they actually enjoy eating. They know their veges and are so creative about vegan recipes. So in fact, they have a wide range of choices unlike many think. They are independent and autonomous people, beacuse they have the belief and act by it. I think they don't do as much of stress eating as others or just persue comfort food just because of often changing emotions. Eating to them is more happy, enjoyable, and healthy. My area is not that vegan friendly, and I love dairy so much,, but someday I really want to try. Thanks for the vid! Love ya.

      Start small. If you have a Walmart then it's easier than you think. Beans and rice. Mushrooms instead of meat. Make "meatballs" out of lentils. Nuggets out of canned chickpeas

      I can relate. My area is limited with grocery supplies. But these RUclipsr's are making the switch doable . . . (I finally made the hopefully permanent switch)! I sometimes order on-line, but try to shop small and avoid processed food. It's amazing that if you stay basic, your grocery bill can be relatively small eating this way. Also, the Instant Pot is a game changer.

    Hi Nisha! I know you posted this long ago but I find you story inspiring. I have been vegan since 30 May 2019 and I went vegan that day and haven't looked back. Just like you I feel happier and not bloated after eating. I was a huge meat, cheese, egg, venison, bird and everything eater. My family and friends tell me it must have been very hard to do and actually it has been very easy. I was always the cook in the family and loved to cook foods from all over the world, I was in the U.S. Army for 23 years, so now I can make a huge variety of vegan dishes based on non-vegan recipes.     I can't believe I'm just finally running into this vid. I've been obsessed with your videos and recipes for a month or so, now. You are the primary reason I have been able to take my wife and I vegan, at least during the weekdays for now. You are an inspiration and I can't tell you how much I appreciate the hard work you put into your videos and presentations. I don't think a lot of people know what goes into recipe generation, perfection, and then recording a quality video and what goes into the post production effort. Thank you, thank you, thank you.     I don't know why but you've got me all teary eyed Nisha! When you said you wanted to live your best life without hurting animals I just felt such a raw emotion inside that it brought me to tears... that's exactly how I feel. I want to live life without hurting others... I just wish more people understood veganism and the message we are trying to send. Humanity is just so disappointing at times it makes my heart hurt.

    Great video. I am 47 but became vegetarian at 12 years old because I love animals. It took me a long time to understand the horrors of the dairy industry. Since going vegan, I have a clear conscience with my dietary choices. I don't eat v healthily still but I use your recipes to help me along. Thank you 😍

    I started eating whole-food-plant-based (I call it 'vegan on steroids') purely for the health benefits, but since seeing the documentaries you mentioned, I do it for animal cruelty reasons as well. Not saying I never slip up, but when I do, I like seeing stories like yours and re-watching documentaries like "Hope - What You Eat Matters" to get me back on the path.

    I’m new to Veganism. My eating history was pretty much the same as yours as far as what I ate before going Vegan. I ate no pork, or beef, but I still ate chicken, and Turkey at Thanksgiving. I also am a cold press juicer. I have decided to go vegan to better my health. I too am binge watching food, and vegan documentaries. The worst part for me is the cruelty done to animals! It has me in tears, and breaks my heart! These films are very reinforcing for me, and for sure have opened my eyes to the food industry’s, as well as the USDA Government, and health organizations. I could go on! BUT basically I just wanted to say Thank you for sharing your honesty, and your Vegan Journey🥕🍏🍅👍🏽♥️

    Vegan for 2 weeks now, and I don't see myself going back! I'm better nurtured now than ever in my life. I went to a vegan nutritionist and I had a 3-hour masterclass of all the nutrients that are lacking on most of the population, regardless of their dietary choices. That, combined with plant-based everything, is making me so happy, that I can't believe it. I'm a bit bloated, yes, but I believe that will go away eventually. Loving everything about this.

      You might want to go back to your nutritionist to learn about the order in which your body digests foods, and which macronutrients to eat together and which ones to keep separate. Regardless of whether you’re plant-based or not, if you eat two foods that get digested too differently together, you’re gonna get bloated.

    Everyone in my house it’s meats and dairy. I have been vegan since January. That’s decision I ever made. I agree that all we can do is lead by example! I go to the gym every day and I am very disciplined. Therefore, it is not challenging for me to abide by my own beliefs. You are inspiring. Thanks for sharing!

    I just went recently vegan after getting a colonoscopy at 20 years old, and let me tell you, I have WAY less digestive problems than I did when eating meat! This was so informative and genuine, I can't wait to show this to my mom!

    Wonderful story! I have a similar story. I think that I have always been lactose/dairy sensitive. I was a vegetarian for more than a decade before I gave up dairy. It was a life changer. Veganism really is an amazing lifestyle. It has so much to offer you, the planet, animals, and other people. That's why I love it. Thanks for sharing :)

    I'm a vegan from 3 years and I'm an Indian girl!
    I come from a family where dairy is a must, but I faced those challenges and turned vegan not for myself but for those poor animals who just died for my food!
    Could you just look into an animal's eyes and say that "your appetite is more important than their sufferings"

      I'm trying to convert into a vegan I avoid dairy now im pure vegetarian but not vegan till now i think veganism is the new future its a shame now so many brahmins my gf is also a brahmin start eating eggs and nonvegetarian i hope more people get into veganism and vegeterianism

      @@sj1997 see you have to stop thinking about others, if you feel you love Veganism then you can stay, but people who are fake vegans, God is watching them, and again many brahmins feel that being a vegan is stupidity, so let them feel!
      Even I come from the same family, except for my parents, my relatives and friends they all are the same!
      So don't give a damn about them!
      You just continue being a vegan!
      After all we are saving the animals trees and the environment, so obviously it is not said to be a stupidity!

    When my sister started going through some health problems related to her diet, I started looking into more healthy diets, especially vegan recipes, as a means of 'sympathy eating' so my sister and I could find foods which keep us healthy and energized. She's lost seventeen pounds since we've started, it's amazing. Your videos have really helped out a lot - especially that hummus recipe. So thank you from a non-vegan!

    Nisha- I started my vegetarian journey in high school (I'm 51 now) and transitioned to veganism about 15 years ago - your video explains things so beautifully and authentically. For years I kept "my vegan eating habits private" because it was more unusual and I didn't want to share it with others (although I often had to). Over the years I've become less self conscious about it and speak more openly but now I'll simply forward your heartfelt video which says it all so perfectly. Thank you!!!

    I agree with you on all points! I just went vegan very recently after being ovo-vegetarian for about a year. Seeing as it was just eggs left to cut out it was pretty easy, just had to get creative with baking but it's easy once it's figured out! So glad I found your channel :D

    Health (blood test) markers lead me to eating vegan two months ago. Watched “Game Changer” and made the decision by the end. No transition period. A lot of learning along the way.
    Thanks to your blogs I have gotten away from processed foods and cooking from scratch.
    My husband and our son are loving the new flavors and my cooking.

    I had a very similar experience years ago. Watched a number of food production/nutrition videos over the course of a couple of days. When I realized that I could NOT EVEN WATCH the torture of the animals, yet they had to ENDURE it, I said to myself 'not one more of my dollars will go to supporting this industry.' And, just like that, I was vegan. So, I am vegan for the animals. I am fortunate that I do not have any health issues at 70. I'm sure the veganism has helped to keep me healthy. I am eager to try your vegan cheese recipes. I love your work! Keep it up!

    Good for you Nisha. I am not vegan yet but I had cut down meat/chicken a lot and increased on sea food. My goal is once I become vegetarian, I will never go back to non-veg in my life. I did watch Food inc , seeds of death long time back and that changed my life . I am real choosy about what I eat. I open up 3 hours window to snack and have a one big meal in 24 hours . That saves me time and money and I am happy .

    Dear Nisha, what a lovely touching life story! I went vegan in 2005 after watching "Meet Your Meat". My story is very similar. In my life, dairy was giving me asthma, and horrible skin issues like psoriasis and allergies to pets. It only took 6 months of eating only vegan food and my health changed 180 degrees. I never looked back, and started volunteering at animal sanctuaries.
    You have a beautiful story and a lovely channel. I will likely binge watch all your videos

    Not eating meat is easy. Its cheese thats hard for me to give up. I'm a work in progress! I think the more research I do and the more I learn to cook completely vegan the cheese will fade its self out. I'm on my way! My husband isn't wanting to be vegan. I have been making my children meat free meals. They aren't huge meat eaters to begin with. And they love veggies. They don't have to choose this life style but I definitely don't see the harm in incorporating more plant based options. Especially if they will eat them!

      Oh boy, cheese took me a year and a half to stop... then after I stopped I found vegan cheese and recipes about half a year later. Don't worry and try to force yourself out of cheese, it's all a slowwww process. Also, props to your children, not many kids are like that.

      Hi Athina, I know this comment is older so it might not apply anymore. But if you're still struggling with cheese, I recommend watching the short 5 minute documentary called Dairy is Scary. It's on RUclips. I also had a hard time with cheese but it's been 3 years since I've had any type of dairy now and there's so many delicious vegan cheese options available so you don't have to miss those flavors and textures anymore.     Thanks for sharing your story. I too have become more enlightened about being a vegan because of a documentary and I too have been binge watching several this past week. I am trying to find a balance for me doing this with my family of carnivores and so far I have done a fair job. I plan on a slower transition but if I am choosing vegan more times during the day than not I know eventually I will be completely vegan in a matter of a few weeks. Honestly I don't miss the meat. Its really the dairy, cheese and eggs as these were what I used for protein before. I have years of practice cooking with them so I just need to readjust my way of doing things. I have enjoyed your channel and learned a lot! I appreciate all that you doing for us to help us learn in a fun, comfortable way. You are pretty amazing!

    Watching the documentary Dominion made me go vegan overnight too. Straight up cold Turkey. The first few months I didn’t know what I was doing but I was lucky to have experience growing sprouts and eating rice and bean recipes for my dietary foundation. Here I am over two years later and my mental health has improved as well as my outlook and hope for my life and future

    Thank you for your story. I am transitioning to being vegan for the same reasons. It's a challenge to explain to people why I don't want to eat meat or dairy. So, it's helpful to hear why you chose this path. And as you say we are all on our own journey. This was beautifully & sincerely done.

    I love your videos! I’ve been making your meals each week for probably two weeks now and I’m a vegetarian easing into veganism. I work two jobs and am on a low budget so the meal prep videos have been majorly helpful!

    Thank you so much for this video. I am slowly changing my lifestyle to vegan. Learning and also educating my kids on why we are slowly not eating certain items anymore opposed to just taking it away and saying it's bad. The older I am getting the more I realize how bad meat is for my body. I value our planet and am trying to set the example for my kids. I have a lot of stomach issues as well. I started to feel pain in every part of my body. I could not explain it and neither could the doctors. I watched "The Game Changers" on Netflix. I gave up all animal products that day and after a couple of months I felt normal with NO MORE PAIN. It's been 8 months and I will never go back. I know your story will inspire others!!

I am deciding to go vegan after getting over 200 lbs as a only 5ft 0in tall 22 year old woman, and being diagnosed with chronic pancreatitis, gastritis and losing my gallbladder to gallbladder disease.     What an awesome video! I am eating a lot more plant based these days and am a big advocate for people that are vegan even though I am not fully vegan. I just haven't gone there totally yet but am moving in that direction. My husband has already stated he has no interest but will fully support me if I choose that path as long as he can still eat meat. He is an outdoor enthusiast that loves to hunt and fish so I feel guilty if I don't eat meat with him. Truthfully, I love fishing too! Perhaps I am using that as my excuse....I still working through it. Anyway, I love your story and it is very encouraging. Who knows, perhaps in the new year I will take on the challenge and see how it goes. Thanks again for your videos. They are awesome!

    Nisha, I love this video! I so appreciate your story and your honesty!
    I have struggled with a long laundry list of health and auto immune issues most of my life. I was recently connected with Mary-Ann Shearer '100 days to health' and it has changed my life. I am 53 years old and a Texas girl, so the idea of whole food plant based eating was almost a foreign language to me. But I was desperate for change so I dove in. Watched some of the recommended documentaries as you did and grieved so many things about my education (or ignorance, whichever you choose). I felt like I had been duped.
    I love to cook so learning how to make beautiful learning food that is truly healthy.

    Went vegan this year and my diet is mix of meat, and fish, and some healthy foods. My eating habits still needs to be under control.
    Thanks for sharing your story and challenges you had going vegan. I went vegan this year and the real reason is to reverse diabetes, and prevent future of family members dying from diabetes. Don’t wanna get too personal, yet I did for the animals, although most of the time it’s actually for my health. Because I get worried how I’m taking care of my mental, emotional, and physical health.
    Plus, this is out of topic I practice spirituality and being more conscious of how I’m nurturing my body, and mind my spirit feels pleased.

    Thank you for sharing your story. Myself and husband are not vegan but I do not buy or cook meat or fish. Eggs are a rarity now and we have reduced dairy considerably and use plant milks. I try to scratch cook as much as possible and do this with a whole food plant based approach. I have cooked and continue to cook many of your recipes, the chilli and Dahl are favourites. I know I can do more and think that in time I will have a totally plant based diet.

    I found your video inspiring. I am a vegetarian who is moving more towards becoming vegan, however, like you I love cheese and I love eggs. So it is a process, but I have been watching your videos and your recipes look very tasty. When I get paid this weekend I am going to try some of them out. The tacos and pasta ones look great. Fried chickpeas also look yummy. Thanks for the videos. They are a great how-to and you make them fun to watch. Your recipes don't look too complicated so fingers crossed and I'll let you know how everything turns out.

    I know you said you enjoy bread a great deal, as do I (it's part of at least one meal a day for me). But I'd like to reduce it and try alternatives. Could you consider a video on alternatives to bread, and maybe also one of your weeklong meal staging videos?
    I'm new to your channel, the last week only, but I love it and your presentation is very engaging and makes me eager to try new things that you present!
    For context, I was vegetarian for about 25 years. I leaned towards vegan, but didn't convert. Over the last 3 months, I have fully embraced vegan in all its forms, and am even happier than I already was! And I now actually enjoy cooking; before I was your basic microwave guy with lots of ultra processed and processed foods, and carnivore-like alternatives (think burgers and such). And finally, I now took the plunge and track all of my meals with a phone app. In other times I tried a food diary app, I always quickly got burned out when exposed to just what I was putting in my body. Now I celebrate it, and use the app as a tool to evolve even healthier eating habits and choices.

    Cool. I am so glad for you.
    I am vegan since January of 2020.
    Gave up gluten about a year ago because gluten is addictive and after some time contributes towards leaky gut.

    I love that you're not forcing anyone into your style of living. I have thr similar issues of IBS and lac intol. So I tend to experiment with vegan recipes and eating less meat.
    Not trying to become a vegan but the recipes are really yummy and at times I don't even realize I'm not eating meat.

    Nisha, I love this video. A lot of your reasons for being vegan were also mine. I appreciated how you said that you don't push or judge those around you that aren't vegan. I share that sentiment. We're all different and on individual journeys. Regardless of whether or not those around you become vegan, we all should be eating more fruits and vegetables anyway. I have been a vegan for over 10 years and for me it was very similar: when I heard about what goes on behind the scenes in animal farming, I wanted nothing more to do with it.     I tried becoming vegan "slowly" like you, Nisha. That failed - "bigly" - I used to binge on yogurt rice and stuff.... and that was something I could not control *at all*.
    So.... one day, I thought "enough" and that was that... cold turkey and zero issues! My path, albeit much more bland and short 😀

    Well, I’ve been watching a lot of your videos to get recipe ideas as I have gone vegan (for now, won’t be forever, but maybe it will be most of the time) to help heal my tummy. I think taking anti-inflammatories for headaches, back and neck pain has irritated my stomach lining and caused digestive issues. I’ve also cut out gluten, sugar, coffee and black tea. I drink celery juice every morning. Week one is almost done and we shall see what happens and if I feel better, have more energy, and am not so exhausted all the time. I think I am a little as I have been incorporating more exercise, walking and yoga, into my daily routine.

    Your diet and recipes are great; I don’t use oil and I rarely eat dessert other than whole fruit I mix with nuts and rolled oats. Don’t eat much bread…add cocoa and/or cacao to my desert fruit at times and or my morning oats; you are so fun and funny; you are a great teacher!

    So glad having found your chanel, Nisha! I love this video!! Thank you for your inspiration. I am now more decided to become vegan. As to now, my family and I eat meat about twice a month but especially one of my daughters loves sausage almost every day. I try to avoid this by cooking vegetarian meals she also enjoys. I want to cut out meat completely for myself. It won't be that hard because I love being vegetarian. Besides, my goal is to cut out dairy more. Always looking for ideas how to replace products so I live a Vegan life more and more. I also would be happy to know what to put on bread that is no dairy and no meat...so my family likes it.     I became a vegan for the same reasons you did and yes it is challenging but I think there are more choices than there were even 3 yrs ago so it had made it easier to become vegan without missing the foods you enjoy! Our world in that sense has changed and that is good.
    For me it was easier to cut out dairy because I was a vegetarian for 12 yrs and the way to start in the vegan journey is cutting out one animal product per week. Our taste buds get used to new foods quickly so it is good to start with one item at a time. Find what works for you.

    Thank you for your video. I am 7 weeks in now. I went through withdrawal for sure... I am still adjusting and cleaning the pantry. My partner is not vegan and it presents as challenging but I am figuring out solutions..not so easy. This is can feel even harder than taking care of me. I bought your book and an instant pot...and I am trying to figure it all out. I tried the vegan cheese sauce and it was a miracle! I basically spend many hours studying and trying recipes. Feels like I need a lot of Beans to survive...and more veggies of course... I don't want to gain weight so I am mindful of the choices. I use estimated 10 % fats and 10% grains an 80% the fruit and veggie rest. I do feel ethically better about this choice. I have also been effected by the facts of environments and of course ..hurting animals...:( As I keep going with veganism..I feel more and more horrified with animal products. I also have tuned into clean cosmetics...another transition... Thing is I don't think I can turn back. Socially it is hard with family..rejecting and even cooking for( hard core carnivores... for gatherings.
