Hi Carl that’s indeed very useful info. Thanks! I checked Hanasato’s website for a possible reservation and they talk about Hida beef… so, this is then a type of Kobe I assume?
Hida Beef is the Japanese Black Cow as well. Called Hida Gyu. Hida Beef originates from the Hyogo prefecture. In the early 80s, a single Japanese Black Cow was introduced to the region to enhance the quality of the meat. Since then, farmers have diligently worked to breed superior cattle for wagyu. The marbling of Hida Beef is exceptionally pronounced, leading to its classification into two categories: regular Hida Beef and Hida Wagyu Beef, with the latter being rated A4 or A5. You'll find it identical to Kobe Beef. Either way - Hida or Kobe, you'll be very very very happy. Enjoy!
