To anyone considering making this, I'll give ya a tip as an Alabamian. Use about 25% more mayo to make more of a table sauce. If you do this though, you're going to want to adjust your seasonings a bit. Start with more pepper, and if you can find a solid black/red/white peppercorn mix, its delicious and adds tremendous color!! Another tip: bottle up your sauce and leave it in the fridge for atleast a couple hours before using it. This will let it settle a bit and thicken up, but also makes a huge difference for letting the pepper flavor permeate through the sauce which is very important. This sauce is more vinegar tasting than you might think, making it great for meats that are very rich and fatty, but it gets a bit weird on beef for some reason. Great video! Great recipe! Thanks!!

YT kept recommending but I couldn't bring myself to watch knowing he was gone. Now I'm glad I did because I can leave a comment and say thank you. I've been making white bbq sauce for about 8 years, based mostly on this recipe I found on the internet. I use apple cider vinegar instead, and I make my own prepared horseradish. It's way better than store-bought and worth the trouble. I also add some fresh minced garlic and a little mustard powder. This stuff is incredible!
I didn't find his channel until recently and I learned that he has recently passed. I hope his friends and family are doing well. One great thing about RUclips is that his videos have now lived on in his memory
Real easy. Add 2 tablespoons of vinegar and 1/2 teaspoon of cayenne to a bottle of Ranch dressing and you are pretty close. Some extra black pepper also. Not all white sauce I have eaten has noticeable horse radish. Steve comes pretty close to perfect here. It is good on anything!
I have a BBQ restaurant here in Manila, Philippines. I want to serve this sauce as an option to our traditional BBQ sauce. I got a little pushback from my testing group because it is so runny. SO, I added 1.5 tsp Xanthan Gum as a thickening preservative. It still tastes exactly the same, but it’s got a great BBQ sauce thickness that makes it a bit more popular and it sticks nicely to the meat. All the love to you and Sheila!

My family has been in Alabama a few hundred years. My husband's about 150. We have traveled and eaten all over Bama, and never skip a BBQ joint. I remember seeing the Bama White in maybe 2-3 places, and up until I started seeing cooks and pitmasters talking about it maybe 5-10 yrs ago, I had no idea what they were talking about & neither did any of our family, lol. The weird thing is, now that it has become a thing from tv and online, you suddenly see it popping up in BBQ places now. It might have been a big deal in 1925, but it lost popularity until now. Very funny stuff.
I have made my own white sauce before. If you don't mind deviating from the original 1925 recipe and adding more savory flavor to it while thickening the sauce up, add 3 tablespoons of onion powder, 2 tablespoons of garlic powder and a quarter cup of honey. That is my recipe and it's always a hit.

I actually made a point of stopping by Big Bob Gibson's in Decatur, AL a few years ago when I took my mother on a trip so we could try the chicken with white sauce that I heard about on the Travel Channel back when they were showing shows like "Man vs. Food" & "Bizarre Foods" instead of shows about ghosts. When we tried it, my mom asked my opinion. I told her I wouldn't want to upset the locals, but I really thought it would be great on a salad. It was a unique taste experience as far as barbecue sauces went, but I think it would make an awesome salad dressing, too. In fact, it's the only barbecue sauce I've ever wanted to try poured over a salad! I don't know if Bog Bob Gibson would've considered this an insult or a compliment, but I definitely don't mean it as an insult.
Just made it per instructed It’s not bad! Is it the clouds parting and sun rays shining down upon you? No. It’s very subtle and not over powering. It compliments chicken very well. I used it on bone in, skin on thighs. Will I make it again? Yes! Will I take credit at the next BBQ? Yes again! LoL It’s worthwhile knowing you can make this yourself for pennies and no junk added!

Truly an amazing sauce. I have the Big Bob Gibson cookbook and the only difference from the cookbook and what he did was he added sugar. The cookbook does not indicate adding that sugar. Personally I think it would be too sweet. Personally I do one modification to Big Bob’s recipe; it’s because of my personal preference, I add a lot more horseradish. I usually add a few heaping tablespoons. I really like the extra horseradish flavor. Especially when it involves smoked chicken. I really want to go visit big Bob Gibson BBQ in person!

I didn't think my barbecued meatloaf could possibly be improved, then I drizzled some of this over it. A good recipe and you could definitely add different spices for your own propietary white barbecue sauce.

Cooking with Shotgun Red It wasn’t even Alabama White sauce until recently. Up until about 10-15 years ago you couldn’t find it outside of the Huntsville metropolitan. The only place that made better BBQ than BBG was called Thomas Pit BBQ in Madison Al but sadly they closed around 2012ish.
I think I’m going to try the “angeled” eggs this weekend, and I could probably do this one too, but that three legged chicken joke...I’m going to use that tomorrow!

Good idea! those of you who don't know, Xanthan gum is a thickener derived from potato starch. Neutral taste and a little goes along way.

This Sauce is great on Poultry Meat such as Chicken and Smoked Turkey. God I love hearing Steve talk food. I sure do miss him and Shotgun Red together. I need to stop looking at my Doll that he signed for me as a 9 year old boy in 1990. 😭

I add celery seeds when I make Alabama bbq sauce. It's fantastic on chicken but it's just as great on pulled pork.

I make it a bit thicker (Malcolm Reed recipe) and chill in the frig. Best sammich sauce this side of Heaven.

I didn't think my barbecued meatloaf could possibly be improved, then I drizzled some of this over it. A good recipe and you could definitely add different spices for your own propietary white barbecue sauce.

Cooking with Shotgun Red It wasn’t even Alabama White sauce until recently. Up until about 10-15 years ago you couldn’t find it outside of the Huntsville metropolitan. The only place that made better BBQ than BBG was called Thomas Pit BBQ in Madison Al but sadly they closed around 2012ish.
