I agree. I am struggling to buy food and pay bills. Most people have an instapot and an air fryer. My heat is broken so I’m using expensive space heaters. Nothing left for appliances. My parents and grandparents have always been poor, but I wanted to help us be able to eat better and healthier now that I’m grown. I have struggled so much to find things that are healthy and aren’t gross and bland. This video gave me hope.
Money saver: you can regrow those green onions.! Using the white end and a tiny section of green- place in a clear glass or jelly jar. Cover white area with cold water. Place by a window. They grow a few inches per day! Cut off amounts as needed to cook with. Replace water ever few days. It will continue to grow for months. You could also transplant to a flower pot when roots grow long. I always grow the ones stair from the bag from Aldis!
I purchase fresh Spinach to use on Sandwiches, in Quiche, Salads or cook it up . I also freeze it. A bag if fresh is more than frozen or canned but allows for more versatility

I cook for two people on a budget AND for weight loss so I love seeing videos for not only cheap meals, but healthy meals. I shop almost exclusively at Aldi as well since healthy options are cheaper there. So this video was fantastic, thank you!
I'm actually really impressed with how many meals you got out of that amount of food. The thing to note though, is that this is for one person, correct? I'm feeding 6 on a regular basis and often a few more. So, that would be $600 ish for me to do this. When you look at the quality of the food it's worth it, but for someone feeding a lot of people, not inexpensive. With bulk buying maybe that would help costs. Not criticizing! Love your videos! Speculating how to make it work for me.
Steph J - Rejoicing Farm I agree! This ends up being $11 per day, per person. I do Keto and spend about $200 at Costco every 3 months, and then $10-20 per week for the stuff I need (or happen to catch on markdown that I can throw in the freezer)
My husband and I eat keto... my kids get a slight tweak for them... we will have pulled pork in a bowl...or over cauli rice...they have theirs on a bun...and then usually on a homemde pizza crust the next day...we go thru a TON of eggs.. they LOVE any egg casserole or egg muffins i make... the green onions i put in a glass of water and they regrow 5 or 6 times before turning yellow... so "free food" shop the sales... plan from the loss leaders... for me I go to 2 or 3 stores and JUST get the sales... usually the front page stuff... and our monthly budget of 5 is under 500... id say usually 250 to 300 with a 400 expense for a 1/4 cow from.a local farmer every 4 or 5 months... so i avg thst out... we planted a bunch of planters this spring and had "free" salads all summer... i charged out grocery budget on month 1 for all the seeds and produce...

Hi! I love your recipes! Only one thing though. Raw spinach actually act against your body when you are on keto. So I would suggest to include them on other cooked recipes.
You can also not chop up the ham for your egg muffins and use the slice of ham to line the bottom of the muffin tin. It kinda gets crispy and is so good. But make sure to spray the pan
You are so amazing. #knifeskills I love it all. Next time you roast your veggies add some green beans. I like cooking my green beans how you normally cook asparagus with olive oil and garlic. Bacon on top would probably be good too. I use to cook them on the stove with bacon or ham. This changes it up a bit

Super impressed with the amount of food left over and the variety in which you were able to come up with...a well rounded variety that most people like. I found in the other gals video (darn her name is escaping me ...Gia maybe) that she came up with a few pantry type items that not many are going to like unless they are familiar with. Although they we great items to try if you never have! Anyway, thanks for the time and energy spent on coming up with the meals, definitely something I will use. :)

I feel like zoodles are not really a good replacement for noodles, but I do think they're good as a side dish, like sauteed with butter, garlic, salt & pepper. You could do a chicken Parmesan, using pork rinds or almond flour as breading, then serve with marinara and zoodles on the side. Generally at restaurants, chicken parm comes with noodles on the side.
citogal I actually now prefer the zoodles to traditional pasta when I make tomato meat sauce. This is fresh ones though, the frozen ones were not great

Celery seed is really good with Egg Salad! One of my kids HATES onion. Everytime he would see me use it he wouldn't eat dinner. Then I figured something out. It's not the flavor of onion he didn't like, it was the texture! lol So I either dice really small or I mince and cook them lol As long as he doesn't see it or feel it he doesn't seem to notice lol I'm all for draining your meat but I think the residue left in the pan is great flavor! lol
My sister HATES onions, but everyone else loves them. So my mother came up with the idea that she would use Purple onions instead. Since my sister could see them, she could pick them out. Win/win.

I really thought food wont stick to those silicone muffin cups. I'd have a hard time if you didnt say to spray oil on them
I thought silicone cups were non-stick
I thought they were nonstick too but some of my egg bites needed a spoon to get them out. I’ll try the spray next time!
