We love breakfast for dinner too. My family really likes pancakes and french toast, which aren't exactly low carb friendly so I make some "banana pancakes" for me using a mashed banana, 2 eggs, and 1/4 tsp of baking powder, 1/2 tsp vanilla, and 1/2 tsp cinnamon. Mix up and pour into small (2.5") pancakes. Flip after 1 minute and cook the other side. They are AMAZING with blueberries and sliced strawberries.
Everything looked delicious but am planning to try the turkey meatball stroganoff and the Korean beef tacos. Your cooking videos are great. I love to cook and keep a full pantry and freezer. An easy last minute dinner for us is using jarred Tikki Masala sauce over bite-size chicken with Vigo yellow saffron rice. Another go to is jarred pesto spread on thin-sliced chicken breast and covered with shredded mozzarella cheese. Cooked at 375 for 30 minutes depending on thickness of chicken....so delicious. I have been made fun of before because i actually put American cheese on our spaghetti LOL! It’s really good! When I do my meal plan Tuesdays are usually for tacos whether it’s burritos, chicken tacos, fish tacos, beef tacos whatever it is we have that on Tuesday. It makes meal planning a little bit easier for me knowing that one day we’re having tacos some type of taco meal and then sometimes will do breakfast for dinner.

I always have stuff to make chicken quesadillas, spaghetti, tacos, pinto beans and cornbread and turkey bacon, eggs and frozen biscuits for breakfast for dinner.

I just throw some chicken, a jar of salsa, black beans, and onions in the slow cooker. So yummy served over rice and topped with all the typical taco fixings.
You should’ve made the pulled pork in your instant pot, it would’ve taken so much less time and it would’ve stayed on Keep Warm until you were ready to eat. I never make it in the slow cooker anymore. Just pressure cook it. So fast and easy. Most Skinnytaste recipes make a small amount of food in each serving- that is how she keeps the calories down. I always double them. We don’t worry about calories much around here.
My kids won't touch that TJ's taco seasoning...even if I only use part of the package. 🥵 I almost always have jars of frozen, homemade chili and soups in the freezer to use in a pinch. Pancakes, homemade waffles, French toast and/or grits casserole are easy and cheap breakfast for dinner meals too

We’ve been loving pulled pork lately! We get like 7 lbs of pork and get so many meals out of it. Our favorite are nachos, quesadillas, pork gravy over noodles and chili.
The cheddar with marinara sauce is interesting. I put ketchup (aka chilled tomato sauce) on my cheesburger, so why not on meatballs? Also, I am obsessed with how food looks with fiestaware. I am probably the only person on YT who watches to see your plating color combos!
Well now I’m going to have to try cheddar on my pasta! You haven’t steered me wrong yet!! Tacos are definitely a staple here as are burgers on the grill or frozen tortellini with parm and a salad - those are the go-tos!
I just tried out crock pot liners for the first time this week! they’re a game changer. I felt like my crock pot pot was going bad from constantly washing it.... now I don’t need to! we’re trying to go through what we have in the house too. I just made chili with frozen ground meat (beef and bison!!), canned beans, diced tomatoes from the pantry, and onion, bell peppers, and zucchini from the fridge. only needed tomato paste and beef stock from the store 😁

It seems like we always have chicken breast/tenders and ground beef in the freezer so tacos, burgers, or a quick pasta sauce are staples..and for the chicken I like to make fajitas ( the ones on Tasteofhome.com are SO good!) or I make Ranch Parmesan chicken (i follow the Kittencals recipe). I think I’ll try the Skinnytaste meatballs, her recipes are always so good!

One dosage - 😂 You can tell you are in the medical field. 👍 We have grilled cheese when we don’t have anything for dinner. A great grilled cheese is cheese, sliced red onion, avocado, and tomato cooked slow on the grill. It’s delicious! Sometimes I cook fried potatoes and then scramble some eggs in them. We have it with toast and jam. It’s what my dad would cook us when I was little. Macaroni and cheese (homemade just cooked on the stove) is an easy meal. Also homemade instant pot hamburger helper is good.

I almost always eat pasta with shredded cheese! I have never been a huge fan of parmesan. Even with that type of cheese, I prefer pecorino to parmesan.

My husband doesn’t like the taco seasoning packets so we just use chopped green Chile’s & onions and salt & pepper in our ground beef for tacos..
I have leftover chicken in the fridge that I need to use up, so I think chicken and gravy is on the menu for tomorrow!
