It seems as though everyone bakes the same cakes differently, e.g. some add salt in the cake, others do not. Some separate the eggs, others do not. In this video, they wrapped the finished cake in baking paper and left it for a few hours before unwrapping it. In some recipes, they do not want this. Am I wrong?

Yes! It has to warm but not very hot

2. Apart from jam what else can you use?
Air is the only raising agent in a Swiss Roll, If we use baking powder it will crack the sponge while rolling. You can use whipped cream instead of jam.

Hi, how long it takes to whisk the eggs till it turn white & fluffy like ribbon stage?
With hand beater it will take 10 to 15 minutes

What kind of paper did you use? I use parchment paper and it always sticks to the paper when i roll.
There are two sides on the parchment paper, rub with your fingers, one feels more slippery/shiny than the other side. You put the slippery/shiny side upwards!
You can always grease it with any cooking oil

Yes it have to be warm. Over baked sponge is the cause of breaking.
