I made this today, it was sooo soft❤️. I used the above ingredients measurement but also added my own ingredients. 🔹All purpose flour is not same as maida but Similar, hence you can use maida. 🔹 Ingredients should be at at room temperature. 🔹I separated the egg whites and yolks. 🔹To the egg whites, I added 1/4 Tsp vinegar to increase its volume and to become foamy quickly when using an electric beater. Within less than 5 minutes the whites formed peaks and when I turned the bowl upside down it did not spill out but had a cloud like consistency. This is what makes the cake fluffy so this step is important. [ Make sure there's not even a drop of yolk or water in the bowl else the volume of the whites will not increase.] 🔹To the yolks, I added granulated sugar and beat vigorously using hand whisk for about 5 minutes until it became pale. [ The granulated sugar did not dissolve but it did not taste grainy after baking this cake.] 🔹To add more moisture to this cake, in the yolk batter (along with flour and baking powder) I then added: 6 Tbsps milk 4 Tbsps regular cooking vegetable oil 1 Tsp Vanilla essence to remove the smell of eggs. A pinch of salt and mixed well. (Adjust milk/oil, batter should be slightly runny not too thick else it will taste dry) 🔹I then added in the fluffy egg whites little by little, folding gently using a spatula, so as not to deflate any air bubbles in the whites mixture. 🔹 Put few drops of oil on a small frying pan (spread it with tissue paper) and poured half batter (pan was small) and kept on low heat, covered. 🔹 The first time I made this it got burnt because the frying pan was not thick bottomed and I did not check it for more than 10 minutes. 🔹I used the same pan the next time but kept on low heat for approximately 7-8 minutes. 🔹Every utensil and heat level is different. The best way to know if the cake is ready is when the toothpick comes out clean. Check the cake once around 7 minutes using the phone alarm. 🔹After both batches were made and cooled the cake was breaking when I tried to roll it ( perhaps baking 1 big batch would be easier to roll without breaking 🤷). So I just spread jam over one cake and covered it with the other. 🔹To make it more presentable, I took off the edges of the circle to make it a square and then cut even slices and kept in fridge. Tastes good chilled and surprisingly good without butter or even jam. The texture was spongy and soft like pancakes. Thank you Tiffin Box 😋 👍.
