  • A quick and simple zucchini and corn fritter is the perfect way to use up the best of the late summer season. An easy-to-make batter is mixed together, and small pancake-shaped fritters are fried on the stovetop. When paired with a chipotle sauce, these are a scrumptious side dish!

    INGREDIENTS
    - 2 large eggs
    - 2 cups shredded zucchini
    - 1/3 cup diced onion
    - 2 cups sweet corn
    - 3/4 tsp garlic powder
    - 1/4 tsp cayenne pepper
    - 1/2 tsp black pepper
    - 1 cup all-purpose flour
    - 1 tsp salt
    - 1/2 tsp baking powder
    - 1/3 cup grated Parmesan cheese
    For the chipotle sauce:
    - 1 cup mayonnaise
    - 1 tsp chipotle powder
    - 1 tsp Mexican oregano
    - 1 clove garlic, crushed
    - 2 tsp lime juice
    INSTRUCTIONS
    - In a large bowl, beat the eggs until broken and combined. Add the shredded zucchini, onion, and sweet corn, and mix to combine all the ingredients. Add the garlic powder, cayenne pepper, black pepper, flour, salt, baking powder, and Parmesan cheese. Fold the dry ingredients into the wet to form a wet batter.
    - Heat 2 tbsp of neutral oil (or ghee) over medium heat in a 12-inch skillet. Once the oil is hot, scoop 1-ounce (or 2 tbsp) dollops of batter into the skillet. Press the batter out into roughly 3-inch round fritters, leaving at least 1-inch between each fritter. Pan fry the fritters, flipping once until they are golden brown on both sides, 3-4 minutes per side. .
    - Once the fritters are finished, place them on a baking rack fitted into a baking sheet. To keep them warm, place them in a 200°F oven between making batches of fritters. Serve with the chipotle sauce.
    For the chipotle sauce:
    - Combine the mayonnaise, chipotle powder, Mexican oregano, minced garlic, and lime juice. Whisk until smooth and serve with fritters.

    Kaleb, as I watched this video, I had to laugh because I live in a very small town where no one locks their car doors, or house doors, for that matter. However, there is an exception to this practice... and that is during zucchini season! I ran downtown to get the mail one morning. After visiting with several people at the post office, I came out to discover that my car had been stuffed full of zucchini! To this day, I don't know who gave me that gift, but I'm pretty sure several people knew what was happening (or were in on the prank), because everyone at the post office seemed extremely chatty that morning. ~Margie 🤣😂🤣

I sometimes wonder how God thought up all of these wonderful things we enjoy. Even when I watch how corn grows I find it amazing. I guess that's why he's God and I'm not.     Growing up we would freeze several bushels of sweet corn each year( 4-5 ) it was usually a 2-3 day process. But each night we would have corn in some form for dinner. Corn on the cob with tomato & onion slices, corn fritters & cucumbers, ect. easy quick meals.... I Love it, the memories!!

    I had extra cooked corn in the cob, and decided to use up my 1 last zucchini and the corn on this recipe. I knew it would be good, but family and friends sneered it.     Tried this tonight and it was delicious!! I had to substitute smokey paprika and regular oregano for the sauce. It was pretty good but I can't wait to try with your spices. Had a few left over and will air fry those to warm up. Can't wait to show these off at our next family get together!!

      Corn is not cooked prior, the corn cooks while the fritter cooks in the pan

    I love these ... one question, do you think they would freeze well? It's just the hubs & I and don't think we could eat all of these at once (actually, I think I'm the only one who would eat them). If freezeable, I could pack 'em up two or three together and heat 'em up later down the road ... thanks, as always, for sharing your recipes (in the kitchen and the garden !!), encouragement and inspiration !!!

      I have frozen something similar and it freezes well. Just put parchment paper between two pieces and when you are ready to eat put them in a toaster oven. Normally I cut parchment paper into small squares and put it between the fritters.

      A trick I learned about freezing things for individual use later is to put a folded piece of parchment between the patties. The paper doesn’t freeze to itself, so just separate out however many you want, slit the paper at the fold and there you are. Especially nice when prepping and cooking for just one or two.
