I just made these and used:
60 g flour
1/2 tsp baking powder
pinch of salt & pepper
1 egg
4 tbsp milk
splash of EVOO
165 g of corn
1 spring onion
chopped coriander
diced green chili
Delicious even without the coriander, which I didn't have on hand. Next time the only change I'd make is to add a bit more salt. Hope this is helpful to someone.
Corriander just helps with the fragrance..but its an essential item for all dishes ( most)

Just made these. Absolutely delicious. Small addition, when putting them in the pan add a couple slices of butter. Adds a perfect taste to the fritters and the olive oil in the pan keeps the butter from burning.

One of the many reasons I love this man is that there's no "froo froo" bs to make good food. Tinned corn, flour and simple spices and vegs to make amazing food. He shows you how to make amazing dishes out of ordinary things.

Making pancakes with vegetables in them isn't exactly rocket science. It's extremely simple to cook.
It would be so boss if Gordon done a live stream on YT just cooking stuff and taking requests to cook things if he has the stuff and show different techniques

Why would you season natural yogurt that already has herbs? unnecessary.
He didn't forget to season the dip, Here is an almost identical recipe:
Ingredients for the Cilantro Lime Cream
¼ cup chopped cilantro (or more or less to taste)
1/2 cup Greek yogurt
Juice from 1 lime
I made this recipe (today) it was so delicious. I didn't have any "canned" corn; therefore, I used some "freshly" chucked sweet corn! The flavor was absolutely amazing! Just before serving I dotted a few of the fritters with freshly churned sweet butter. Some of my guest didn't care for yogurt (too bad for them). I love the "yogurt-chili" sauce with the corn fritters. ABSOLUTELY DELICIOUS!!! Thanks, Chef Ramsey for sharing this lovely "quick" recipe. I'm definitely inspired to do a lot more cooking in the kitchen since this recipe came out FANTASTIC! :-D

It's one of my favourites weekend lunches. First I thought it will be too hot because of chilli but with sweet corn it makes perfect match. Pure tasty harmony!
Gordon Ramsay calms me by me watching him cook in his kitchen. His kitchen is also calming. I want a kitchen like his! I do love it when he is ruff and cussing though too. But he makes me feel comforted by his voice when he is calm and doing his videos.
His presentation is always so amazing. I just toss my food on a paper plate and scarf it down

I don’t see the ingredients listed, so forgive me if I’m wrong, but it looks like:
SWEETCORN FRITTERS
Flour - 1 cup
Baking Powder - half teaspoon
Salt
Pepper
Egg - 1
Milk - 4 tablespoons / quarter cup
Olive Oil - a drizzle
Diced Red Chile
Chopped Spring Onions
Chopped Coriander
Sweetcorn (drain and pat dry) - looks like 1 cup
Olive Oil for frying (some people try butter)
CHILE YOGHURT DRESSING
Natural Yoghurt - looks like 1 cup
Diced Red Chile - 1
Fresh Lime Juice - half a lime
Chopped Coriander
EDIT: I did this and the flour was too much so maybe it’s 3/4 cup (which is also what I found on a blog when I looked up this recipe). I just added more milk to mine till the consistency looked like what he had, as well as a tad more baking powder.

Made these today with self raising flour, sesame seeds, poppy seeds, red chilli flakes, cumin, paprika, salt, red chilli powder, spring onions, coriander, milk, egg, garlic powder and sweet corn! Tasted amazing thanks for the inspiration Gordon! I ate them with an aubergine salsa( store brought) lol!

Fabulous, I only had sweetcorn and powdered herbs/spices. I don't like heat so used smoked Paprika. Absolutely fabulous, and took just minutes. This recipe is a store-cupboard Godsend.
Made it... absolutely delicious, this will be a regular for me. I am going to use this batter with other ingredients and see how it goes.
We called it "bakwan jagung" in Indonesia :) one of the favourite side dish, yum!

And..in our country (Indonesia) instead of milk... We use garlic,cayenne pepper and shallot (minced),spring onion and lime leaves (chopped finely),sugar,salt, and pepper...
Sometimes we also add plants called "temu kunci" (minced), or Boesenbergia rotunda
It add another flavour

Makes: 10-12 (make sure you invite all your friends round for brunch!)
Fritters
90g flour
1.5tsp baking powder
½ tsp salt
3 eggs
500g frozen sweetcorn kernels
6 spring onions, finely sliced
20g chopped coriander
10g diced green chilli

This dish is common in my country Malaysia...called cucur jagung and the dip is chilli sauce.

My favorite side dish or snack ! and for the Yoghurt Dip i add some garlic it make it more tasty.
DELICIOUS the recipe is very nice indeed. I used parsley instead of coriander and added small pieces of bacon par cooked in microwave. It made 7 good sized fritters. This is a forever recipe for me. thanks Gordon for sharing with all.

Some things I fry in olive oil, but some things not, like eggs, I don't want to taste what they are fried in. An in-law uses half canola half olive oil to fry her pupusas, she wants just a little of the flavor. I like this recipe, sans cilantro, I would use parsley, I have so much of it this year. I like the 1/3 batter, 2/3 chunks idea. Today is cornbread day, with collards, with onion, red and green jalapeños and orange habaneros in the cornbread, it's pretty!

Followed this exact recipe, except for the sauce. I used Ricotta cheese and sour cream with the chili, cilantro, and used lemon juice as well as the zest instead of the lime.
Definitely making this again soon!

I just made this for dinner. OMG so delicious and super quick and easy. I had leftover zucchini that I chopped up and put in there. Tasted so good. I am going to make this again soon.

+KELSEY NGKOO honestly, I winged-it with quantities. I have worked as a cook so I'm probably more skilled than the laymen BUT in regards to this, use about 4 times filling to batter. Couple of eggs, splash of milk so it's runny but not too runny and a good teaspoon of baking soda. Mix together and then add more of what you think is necessary. Remember to season.
