My mom was born and raised in Arkansas so I had wonderful southern cooks with my Mom and grandmother. They made dumplins just like yours Lori and that's how I make mine with collard greens and cornbread on the side. YUM!
Hi Ms Lori, my mom has been gone for 41 yrs. I was 17. When she made Chicken and dumplins, her batter was a lot wetter than that and she would drop them by tbsp. Into simmering chicken and broth put the lid on the pot for about 10 min. And they would be like a soft roll consistancy, and I believe she would put parsley in them. The house always smelled so good. I think I'm going to whip up some and surprise my daughter when she gets home from work tonight. Thankyou for your wonderful recipes and so glad i found you on YT. Yes, and when you make the rounded one, to put in the meat balls ragu or chicken white and thik sauce , you drop the dumpling in, not to much, because must not touch each and other, you close the lid on and cook 15 minutes and simmer lightly on medium heat, must not boiled! Do not lift the lid!
We always used warm chicken broth for the liquid to make the dumplings instead of milk. We rolled out like you do and made the stops the same. Instead of curt into two Icahn rectangles, we pulled them roughly to the same 2 inch size as we dropped into the liquid. My granny taught me to make dumplings when I was 9. She was born in Arkansas

You solved our mystery because my grandma left her recipes but it was missing a lot of important information like when we tried we did a hard boil and stirred and didnt know what happen to our dumplings lol. My mum also made dumpling often I suppose with a family of 5 one income (Mum was a stay home Mum) she too was always canning, preserving veg and fruits #verycleaverlady. Anyhoo Mums dumpling were made into a deplorable dough #sodelicious. I now use that very recipe. #mostadorablelovingMum. Here in North Carolina we buy Ann’s chicken pastry. We boil the chicken take it out then add the pastry strips . It’s good and then we take the chicken and make chicken salad. But yours sure looks like something I’m gonna try . Thanks

Nearly 50 years ago, this West coast girl married a good ol'southern boy and I was nearly a complete failure in Southern cooking. We lived so far away from his family and there was no one to show me and Google and RUclips hadn't been invented yet. I remember his request for rolled out flat dumplings ... I didn't even know what they were, having been raised on drop dumplings. I failed in the re-creation of the rolled dumplings, sad to say. After nearly six years of trying to create (re-invent) Southern dishes, I told him he was stuck with West coast cooking. Nice to have the rolled dumpling technique at last.
These are like my mother in law maid. She called them slick dumplings. I love watching you. I used to be a cook at the university of Minnesota crookston. I miss the kids and alot of the people I worked with.
The beginning reminds me of my grandmother's recipe for making her own Bisquick. 2 cups all purpose flour, 4 level teaspoons baking powder, 1 level teaspoon salt and five level Tablespoons of Crisco shortening. I use the end of a whisk to break up the shortening into the dry ingredients until I get a course mixture. Use as you would Bisquick. I love chicken and dumplings! Definitely a Winter dish. Yum!

I love chicken n dumplins. My Momma moved me to Arkansas from New Mexico when I was 10. I fell in love with the Southern food right away.. I have been moved from there for years. It is so beautiful there. I got to go to Jr. and High School in a little place called Hector. I am so thankful I got to have that experience.
I grew up with an Eastern European grandmother who only made drop dumplings. However married a Georgia boy who loves Southern dumplings and hasn't found anyone who makes them like his Aunt. Wow! I made your dumpling recipe today and he LOVED them!!! Thank you! So glad that I found your videos and plan to try many of your recipes.
I used to help my Grandma make these every Saturday for years. She died when I was 10 and I wished she had written down the recipe. For many, many years now (54) I have tried to find how she did it. I got so excited when my new mother in law (1983) said we were having chicken and dumplings for dinner...and out came a bowl of doughy balls!?! Everybody else was smacking their lips and going on about how great they were....and I was like "where are the dumplins? lol This is much closer to grandma's recipe! I remember how we would drop a dumpling in one at a time wherever there were the little bubbles of simmering, and being real gentle, adding Half n Half and letting simmer 5 min. A couple years ago I found a Southern Cookbook that had a recipe for SLICK DUMPLINGS. Recipe matched what you just did. Grandma always called them German-style but when I got to go to Germany back in 1987, not one restaurant had these. btw...the only main difference is grandma would keep sprinkling flour on dough as she rolled it out instead of after cutting. A long time ago I made chicken and dumplings following a Betty Crocker recipe for my Mom. The dumplings were made using bisquick and you scoop it so it was like biscuits on top. Not strips, like yours. They tasted okay, but my Mom said she’d never seen round dumplings. I had never eaten dumplings, so I had no idea. She grew up eating her grandmothers, but never made her own. I think I now know what kind of dumplings she was used to. If she was still living, I would make this recipe for her. I’ll bet it would be exactly like she remembered from her grandmother. 🥰
My Mom, Grandma and even my Great Grandma and I make our dumplings this same way. My folks were from the South. Chicken and dumplings are very satisfying food. Thanks for this video.

Same here. My mother in law was known for her chicken and dumplings in the small southern West Virginia town where my husband grew up. She would make slaw, green beans and corn from the garden. I sure miss her and her chicken and dumplings.

I just started watching y’all’s videos tonight, I’m so glad I came across your channel. So Thank you for bringing me back to the South!. (I lived in Texas for a long time, but came back to Canada after losing my Steve to ALS who was born n raised in Fort Worth)…..someday I will return when it’s safe to do so… Anyways, here in Canada we have always had chicken dumplings, but our dumplings are big fluffy baseball size dumplings..lol..so when I was first introduced to chicken n dumplings in Texas, by a beautiful Southern woman named Myrtle (I miss her, last I heard she moved to Lubbock, so I’ve lost contact with her 💔😢), anyways, I was so looking forward to her chicken n dumplings, but when I saw the chicken n gravy, I could not find the “dumplings” cept these little flat square lookin’ thangs..lol (exactly what I see in y’all’s video..lol) needless to say, those were the BEST chicken n dumplings I ever had in my life. I was also introduced to cream gravy….the best thing y’all have ever invented…chicken fried steak…sadly, I miss it. In Canada we have brown gravy. Someday I will learn how to make cream gravy and have my chicken fried steak once again. 🥰😋…keep safe, stay healthy and keep bringing me back to the South♥️💙
My Grandma cooked Chicken 'n' Dumplings on Saturday, July 4th 1955 or 56. Giant Family Reunion in Alberta, She was born in Kansas in 1900, got to Alberta with her Family on a wagon train. We Love Grandma Lola!

Great recipe. Hint: If you don’t have buttermilk you can use 1 cup of whole sweet milk with 1 teaspoon of lemon , lime or vinegar put in mason jar sit aside for 10 minutes You have buttermilk. Stir well. :) you can never have to many dumplings!!! God bless you and Mr Brown Grandma in Az :)

I grew up on chicken and dumplings--yummy! My granny made these at least monthly; however, she would serve them over mash potatoes. LOL, as if this dinner wasn't high-calorie enough. This video brings back wonderful memories, and I will be trying them and thinking of those memories.

You made those just like my Daddy's. Cut the dumplings. Chicken & dumplings made the Southern way are my favorite comfort food. I always requested my Daddy's chicken & dumplings. It took me years to make them as well as he did. He told me it was a technique. My boys would tell me everytime I made them "I was getting closer to Grandpa's" chicken & dumplings. He was old school cook, recipes were in his head, not written down.
My dad, bless his heart loved blackberry dumplins. I kept him a bowl in the fridge all the time. I made the for a family reunion and when I pulled the lid off everyone started telling their memories of Grandma and her blackberry dumplins. When we left the bowl was empty. Lol

Your voice is so soothing. I feel quiet and very relaxed while i watch you cook. My eyes popped open wide though when you mentioned dumplings with squirrels. Oh my.. meat is meat i know but I'm sure pleased i watched you make CHICKEN and dumplings and not cute fluffy little squirrels lol. I know its not always easy to feed a family and possibly you have lots of them where you live. We hardly ever see them where we are.. we have to visit a park or go into the countryside and occasionally we will see one or two. I think i prefer to see them in the trees or busy burying nuts and acorns than in a pot on the stove.. your dumplings look tender and tasty. Thanks for sharing.
Well...miss Lori and Mr. Brown.: I never had chicken and dumplings. My mom made chicken and noodles. But...your recipe had my mouth watering so I gave it a whirl. I’m telling you, you were right there with me on my iPad in my kitchen for the entire process from slow cooking the chicken in the slow cooker to rolling out the dumplings. Yep...and then miss Lori said something about the dumplings boiling right out of the pot...and boy howdy, some surely did. But, not many. But, I’m telling you what, it was beyond good. And, it was even better the next day. The dumpling didn’t stand a chance with me. I went after them!

Some of my earliest memories are standing in a chair at the kitchen counter next to my grandma while she made this very same dish. We call it "chicken pastry" in our part of NC. This brought back such good memories.
I will have to try your recipe. Chicken and pastry is what I call them and it is my most favorite food. I roll mine, also. I double up my batches but I start mine with 2 cups flour, teaspoon of salt, few dashes white pepper, mix, then I add three tablespoons shortening and work that into the flour by hand. I make a well in the middle and add 1/4 cup of broth, or milk or even water. I work that by hand until smooth and roll out. Sometimes it will need a bit more than 1/4 cup or less. Dough should be smooth but not wet. Crumble is too dry. Normally, I use a stock pot and we eat for two days, so I’ll do six cups of flour, 3 teaspoons salt, white pepper, 9 tablespoons shortening and gradually add broth or milk or water until smooth but not wet and then roll. A retired military cook taught me his recipe. His was soupy whereas I sprinkle flour over my dough once rolled and then cut into strips which thickens the broth. I don’t stir but like you, I push down and he taught me to carefully shake the pot back and forth. I also start with rapid boil and reduce to med-low. No lid and cook for abt 20 to 30 mins until desired doneness. My daughter likes them a bit “chewy” in the center whereas I like mine done completely through and soft. I am looking forward to trying your recipe and the ones others mentioned with celery seed as I have never tried that. Just so you know, I only just now found your channel, subbed and have “saved to watch later” nearly 3/4 of your recipes. I can’t wait to try them all.

My Mom made these, and I loved them so much. When I moved out, I was determined to make them, so followed the Betty Crocker recipe for dumplings, rolled and cut and left them to dry a while. Then I dropped them into rolling chicken broth a few at a time like Mom did, and then put the lid on the pot and turned down the heat. Came bake in 30 minutes, and those dumplings had raised the lid right off the pot and were escaping over the sides. I called my mom, and after she quit laughing, she explained what she always made were slicker dumplings, and they did not contain any leavening. She said the recipe came from my Dad's family in Texas. She also said what most people called dumplings were what our family called 'dough balls' and she had always used to stretch a soup for another night. Thank you for bringing back such good memories.

I wanted to make the southern chicken and dumplings now that we live in Tennessee. I grew up in Vermont and the dumplings that I have always made are like the biscuit dough that you simmer in the pot. I tried your recipe and they came out fantastic. I really enjoyed making them and shared them with the neighbors a couple of times already. You made it a lot of fun and I thank you.
Now that's something I have not made in a long time. With 4 kids it was truly a delicious, comforting and filling meal. My granny would use powdered milk and some of the cooled broth to make hers and we always had a small baked sweet potato on the side.. Your children and Grands will have so many fond memories of the food you made with loving hands. It's one of those gifts of many we try to pass on.. Thanks for sharing. The last meal my mamma cooked was chicken n dumplings and a big pot of mustard and turnip greens. She always did drop dumplings from white Lilly flour, no Crisco just butter. Nothing better than cutting into one of those dumplings like a big fluffy buttery biscuit floating in thick rich peppered chicken gravy😍. My Grandfather was a cook in the army and this is the very same way he made dumplins back then (late 40's early 50's), and is the same way he showed me how to make them. They are some of the best dumplins you'll ever eat, and fluffy... now I'm hungry. I forgot to mention, Grandpa always forgot at least one strip when cutting too.
i had chicken dumplings for the first time in the early 90's. then just recently i decided to try my hand and followed recipe that looked simple enough. except the dumpling didn't turn out as expected. it was a dense pasta dumpling instead of a biscuit bread dumpling. i appreciate how you explained why you use baking powder and baking soda in your flour and what happens if you don't. you essentially also shared cooking skills and not just a recipe. thank you for sharing!

Squirrel dumplings, now that is a warm memory. Chicken is great too. I was raised in the 'hills' of NE Oklahoma. Dumpling meals were a mainstay. Good, filling, and nutritious food. Maybe not a choice for many, but raccoon and opossum also make a good dumpling meal. Us boys were required to master all the farms chores, including cooking. I like to roll my dough too.
I have eaten a lot of squirrel and coon also skinned a lot of opossum never ate one still eat a lot of wild game the farm chores help us become who we are

Here in North Carolina we buy Ann’s chicken pastry. We boil the chicken take it out then add the pastry strips . It’s good and then we take the chicken and make chicken salad. But yours sure looks like something I’m gonna try . Thanks

Nearly 50 years ago, this West coast girl married a good ol'southern boy and I was nearly a complete failure in Southern cooking. We lived so far away from his family and there was no one to show me and Google and RUclips hadn't been invented yet. I remember his request for rolled out flat dumplings ... I didn't even know what they were, having been raised on drop dumplings. I failed in the re-creation of the rolled dumplings, sad to say. After nearly six years of trying to create (re-invent) Southern dishes, I told him he was stuck with West coast cooking. Nice to have the rolled dumpling technique at last.
These are like my mother in law maid. She called them slick dumplings. I love watching you. I used to be a cook at the university of Minnesota crookston. I miss the kids and alot of the people I worked with.
The beginning reminds me of my grandmother's recipe for making her own Bisquick. 2 cups all purpose flour, 4 level teaspoons baking powder, 1 level teaspoon salt and five level Tablespoons of Crisco shortening. I use the end of a whisk to break up the shortening into the dry ingredients until I get a course mixture. Use as you would Bisquick. I love chicken and dumplings! Definitely a Winter dish. Yum!

I love chicken n dumplins. My Momma moved me to Arkansas from New Mexico when I was 10. I fell in love with the Southern food right away.. I have been moved from there for years. It is so beautiful there. I got to go to Jr. and High School in a little place called Hector. I am so thankful I got to have that experience.

I grew up with an Eastern European grandmother who only made drop dumplings. However married a Georgia boy who loves Southern dumplings and hasn't found anyone who makes them like his Aunt. Wow! I used to help my Grandma make these every Saturday for years. She died when I was 10 and I wished she had written down the recipe. For many, many years now (54) I have tried to find how she did it. I got so excited when my new mother in law (1983) said we were having chicken and dumplings for dinner...and out came a bowl of doughy balls!?! Everybody else was smacking their lips and going on about how great they were....and I was like "where are the dumplins? lol This is much closer to grandma's recipe! I remember how we would drop a dumpling in one at a time wherever there were the little bubbles of simmering, and being real gentle, adding Half n Half and letting simmer 5 min. A couple years ago I found a Southern Cookbook that had a recipe for SLICK DUMPLINGS. Recipe matched what you just did. Grandma always called them German-style but when I got to go to Germany back in 1987, not one restaurant had these. btw...the only main difference is grandma would keep sprinkling flour on dough as she rolled it out instead of after cutting. A long time ago I made chicken and dumplings following a Betty Crocker recipe for my Mom. The dumplings were made using bisquick and you scoop it so it was like biscuits on top. Not strips, like yours. They tasted okay, but my Mom said she’d never seen round dumplings. I had never eaten dumplings, so I had no idea. She grew up eating her grandmothers, but never made her own. I think I now know what kind of dumplings she was used to. If she was still living, I would make this recipe for her. I’ll bet it would be exactly like she remembered from her grandmother. 🥰

Same here. My mother in law was known for her chicken and dumplings in the small southern West Virginia town where my husband grew up. She would make slaw, green beans and corn from the garden. I sure miss her and her chicken and dumplings.

(I lived in Texas for a long time, but came back to Canada after losing my Steve to ALS who was born n raised in Fort Worth)…..someday I will return when it’s safe to do so…
Anyways, here in Canada we have always had chicken dumplings, but our dumplings are big fluffy baseball size dumplings..lol..so when I was first introduced to chicken n dumplings in Texas, by a beautiful Southern woman named Myrtle (I miss her, last I heard she moved to Lubbock, so I’ve lost contact with her 💔😢), anyways, I was so looking forward to her chicken n dumplings, but when I saw the chicken n gravy, I could not find the “dumplings” cept these little flat square lookin’ thangs..lol (exactly what I see in y’all’s video..lol) needless to say, those were the BEST chicken n dumplings I ever had in my life. I was also introduced to cream gravy….the best thing y’all have ever invented…chicken fried steak…sadly, I miss it. In Canada we have brown gravy. Someday I will learn how to make cream gravy and have my chicken fried steak once again. 🥰😋…keep safe, stay healthy and keep bringing me back to the South♥️💙

My Grandma cooked Chicken 'n' Dumplings on Saturday, July 4th 1955 or 56. Giant Family Reunion in Alberta, She was born in Kansas in 1900, got to Alberta with her Family on a wagon train. We Love Grandma Lola!

Great recipe. Hint: If you don’t have buttermilk you can use 1 cup of whole sweet milk with 1 teaspoon of lemon , lime or vinegar put in mason jar sit aside for 10 minutes You have buttermilk. Stir well. :) you can never have to many dumplings!!! God bless you and Mr Brown Grandma in Az :)

I grew up on chicken and dumplings--yummy! My granny made these at least monthly; however, she would serve them over mash potatoes. LOL, as if this dinner wasn't high-calorie enough. This video brings back wonderful memories, and I will be trying them and thinking of those memories.

You made those just like my Daddy's. Cut the dumplings. Chicken & dumplings made the Southern way are my favorite comfort food. I always requested my Daddy's chicken & dumplings. It took me years to make them as well as he did. He told me it was a technique. My boys would tell me everytime I made them "I was getting closer to Grandpa's" chicken & dumplings. He was old school cook, recipes were in his head, not written down.

Your voice is so soothing. I feel quiet and very relaxed while i watch you cook. My eyes popped open wide though when you mentioned dumplings with squirrels. Oh my.. meat is meat i know but I'm sure pleased i watched you make CHICKEN and dumplings and not cute fluffy little squirrels lol. I know its not always easy to feed a family and possibly you have lots of them where you live. We hardly ever see them where we are.. we have to visit a park or go into the countryside and occasionally we will see one or two. I think i prefer to see them in the trees or busy burying nuts and acorns than in a pot on the stove.. your dumplings look tender and tasty. Thanks for sharing.

Well...miss Lori and Mr. Brown.: I never had chicken and dumplings. My mom made chicken and noodles. But...your recipe had my mouth watering so I gave it a whirl. I’m telling you, you were right there with me on my iPad in my kitchen for the entire process from slow cooking the chicken in the slow cooker to rolling out the dumplings. Yep...and then miss Lori said something about the dumplings boiling right out of the pot...and boy howdy, some surely did. But, not many. But, I’m telling you what, it was beyond good. And, it was even better the next day. The dumpling didn’t stand a chance with me. I went after them!

Some of my earliest memories are standing in a chair at the kitchen counter next to my grandma while she made this very same dish. We call it "chicken pastry" in our part of NC. This brought back such good memories.
I will have to try your recipe. Chicken and pastry is what I call them and it is my most favorite food. I roll mine, also. I double up my batches but I start mine with 2 cups flour, teaspoon of salt, few dashes white pepper, mix, then I add three tablespoons shortening and work that into the flour by hand. I make a well in the middle and add 1/4 cup of broth, or milk or even water. I work that by hand until smooth and roll out. Sometimes it will need a bit more than 1/4 cup or less. Dough should be smooth but not wet. Crumble is too dry. Normally, I use a stock pot and we eat for two days, so I’ll do six cups of flour, 3 teaspoons salt, white pepper, 9 tablespoons shortening and gradually add broth or milk or water until smooth but not wet and then roll. A retired military cook taught me his recipe. His was soupy whereas I sprinkle flour over my dough once rolled and then cut into strips which thickens the broth. I don’t stir but like you, I push down and he taught me to carefully shake the pot back and forth. I also start with rapid boil and reduce to med-low. No lid and cook for abt 20 to 30 mins until desired doneness. My daughter likes them a bit “chewy” in the center whereas I like mine done completely through and soft. I am looking forward to trying your recipe and the ones others mentioned with celery seed as I have never tried that. Just so you know, I only just now found your channel, subbed and have “saved to watch later” nearly 3/4 of your recipes. I can’t wait to try them all.

My Mom made these, and I loved them so much. When I moved out, I was determined to make them, so followed the Betty Crocker recipe for dumplings, rolled and cut and left them to dry a while. Then I dropped them into rolling chicken broth a few at a time like Mom did, and then put the lid on the pot and turned down the heat. Came bake in 30 minutes, and those dumplings had raised the lid right off the pot and were escaping over the sides. I called my mom, and after she quit laughing, she explained what she always made were slicker dumplings, and they did not contain any leavening. She said the recipe came from my Dad's family in Texas. She also said what most people called dumplings were what our family called 'dough balls' and she had always used to stretch a soup for another night. Thank you for bringing back such good memories.

I grew up in Vermont and the dumplings that I have always made are like the biscuit dough that you simmer in the pot. I tried your recipe and they came out fantastic. Now that's something I have not made in a long time. With 4 kids it was truly a delicious, comforting and filling meal. My granny would use powdered milk and some of the cooled broth to make hers and we always had a small baked sweet potato on the side.. Your children and Grands will have so many fond memories of the food you made with loving hands. It's one of those gifts of many we try to pass on.. Thanks for sharing. Time to wrangle my children together for the Gourmet ( haha) meal and memories.

The last meal my mamma cooked was chicken n dumplings and a big pot of mustard and turnip greens. She always did drop dumplings from white Lilly flour, no Crisco just butter. Nothing better than cutting into one of those dumplings like a big fluffy buttery biscuit floating in thick rich peppered chicken gravy😍. My Grandfather was a cook in the army and this is the very same way he made dumplins back then (late 40's early 50's), and is the same way he showed me how to make them. They are some of the best dumplins you'll ever eat, and fluffy... now I'm hungry. I forgot to mention, Grandpa always forgot at least one strip when cutting too.

i had chicken dumplings for the first time in the early 90's. then just recently i decided to try my hand and followed recipe that looked simple enough. except the dumpling didn't turn out as expected. it was a dense pasta dumpling instead of a biscuit bread dumpling.
i appreciate how you explained why you use baking powder and baking soda in your flour and what happens if you don't.

Squirrel dumplings, now that is a warm memory. Chicken is great too. I was raised in the 'hills' of NE Oklahoma. Dumpling meals were a mainstay. Good, filling, and nutritious food. Maybe not a choice for many, but raccoon and opossum also make a good dumpling meal. Us boys were required to master all the farms chores, including cooking. I like to roll my dough too.
I have eaten a lot of squirrel and coon also skinned a lot of opossum never ate one still eat a lot of wild game the farm chores help us become who we are
