Far better than many I've seen who think just putting some mix powder and heaps of chilli powder make a curry a madras.

Great looking madras 😋. Did the pataks paste give a noticeable flavour? I use them but I'm learning to do it without as i get more confidence with the amounts and techniques.

Hi Richard.. I've used your madras recipe over 50 times and it's amazing but will definitely be trying this one... do you notice the difference with the balti paste? ... I would also like to try this with the coffee granuals like in your recipe👍👍👍
Love the way every restaurant has different methods to how they cook their curries ,that looks banging .
Is that a touch of sugar going in at 4:55? I swear sugar is one of the most underrated and overlooked BIR ingredients- it makes it into more curries than you think!
Agree, I love a slightly sweet taste to my curries, always been a fan of Pathia. I use jaggery and it works well

Was a good friend of Mr Chowdrey until I moved to the USA this was my place of choice for Indian take away..What ever your needs this is the place to cater for you on what you want Halal will take good care of you... My next visit in September will see me buying from the Tilla..

Interesting how Indian restaurants use Pataks paste. Is this the norm?
Often but usually in the marinades and masala sauce, or in the 'balti dishes'. Rarely in a madras, but it's down to the chef.

Hi Richard, Another stunning dish! The taste was amazing! Like the signature addition of Pataks Balti paste, as you said another layer of flavour. Didn't have the special Masala mixed powder of course so I used a pinch of Garam Masala. Seemed to work fine. What took you to a take away in Astwood Bank, Redditch??
Glad you liked it. I was down there for a visit to the Balti triangle and a friend showed me Tilla the evening before.

Hi. I have an induction stove at home, but many chefs use gas stoves with what seems to be a aluminum pan. Can you give me a recommendation for what kind of pans to use for the best result when making currys?
