    Kingsway Lounge is a swish new restaurant in Latchford, Warrington, and is owned and run by the experienced and talented chef Mohammad Ali. He, like every chef I've met, has a slightly different approach to cooking Indian restaurant food, and takes pride in his fayre.
    Thanks to Mohammed for letting me cook the Chicken Tikka Madras from the Kingsway menu.

    I use half tea spoon of Mr Naga , just for that extra heat.👌🏼♨️

      How does that adjust the flavour? I have a jar of Mr Naga I haven't used yet

      @@Quackfly it's used for heat but has it's own unique flavour hard to explain but it does bring something more than heat to the curry

    Nice one Richard, i always cook your version of the madras, as its spot on for me, but im intrigued about the sriacha sauce and seasoning, its not a spice i have, but im willing to give it go definitely mate.

    Just wanted to take a moment to thank you. Bought your book and just made my first madras curry. I’m not a good cook but the recipe was easy to follow and your you tube channel really helped. OMG .. it really does taste like a take away!

      sounds odd a first, but its very garlic chilli flavoured sauce, chilli and garlic are obviously key flavours in a madras so maybe it's not so strange

    Does the base gravy have to be heated first?

      Ideally yes. Adding it cold hinders the cooking process.
