  • This is something I grew up eating every summer
Purple hull peas are in the same family as the black eye pea
Black eye peas are pale in color and have a dark black eye where the purple hull pea are a little greener in color and have a tiny pink around their purple eye
We grew all our vegetables and my mom cooked it all
    A very simple recipe:
    1# fresh purple hull peas
    2 Small diced onions
2 large ham hocks OR 1# bacon
    2 quarts water
    Salt and pepper to taste
Simmer ham hocks and onions in water until tender adding water as needed
Remove hocks from water and add peas
Cook peas until tender adding water as needed
Add ham hock meat back to the peas and simmer another 5 minutes and
    season according

Good morning. I'm so country. I love purple hull peas. But I hate shelling them 🥴😁. As a child my granny had the grandkids to help shell a bushel before going out to play. The reward was dinner. Thanks for sharing. Happy Sunday!

You don't have to be from the country to have had and enjoy good country cooking. I'm a second-generation country boy in the city. Spent most of my boyhood summers in the south, where my aunts and grandmother would cook all the vegetables they grew and the chickens that some of them still had. I was born in the city but me and most of my city friends are or were 2dn g kids. Have to admit we are up to the fourth generation now. Love watching you cook Chef Jeffery.

Good to see you cooking the peas, I am old school 🏫, peas and greens I live for smile, however I cook my peas with spackle butter beans, and thick cut bacon 🥓 and hog jawl, onions and a pinch of sugar an a little bit of olive oil, slow until the juice gets thick, I also love okra with my peas which I cook in some of the pea juice in a separate small pot, smile 💕, my husband grow them for me every year. When you ain't got nothing to do try them my , love you, so glad I found you on RUclips

When I was a kid in the Texas panhandle I helped pick and shell many bushes of black eye, crowder, and purple hulls. Back then the cotton farmers would plant two row’s of peas, two rows of peas over the whole field. They had on interest in the peas, they wanted the vines. They would let folks pick all the peas they wanted. They would fertilize next years Cotten crop by plowing the pea vines under and planting cotton over the pea vines the following year. They wold alternate the planting every year. They called the method two In two out.

Good morning Chef, yes I remember shelling purple hulls, I'm 61 and I still go to farmers market to get them so I can shell myself. You're talking about when your mom would leave the thinner ones unshelled and just snap like a green bean. Good eating Chef! 😋

My sons favorite! He loves purple hull peas. I live near Nacogdoches and those grow so well here. There’s a farm near me that grows acres of purple hills. I always purchase about 50 lbs shelled and put them up. Some I freeze, some I can. My son comes to visit (he lives in Lake Jackson) and goes home with about 20 lbs of frozen.

🤔, another first for me. Never heard of Purple Hull Peas before now. So, I had to look them up. They have an interesting history. They were domesticated in Africa and introduced to the American South region during the slave trade sometimes between the 17th and 19th centuries. I like Pinto/Navy beans, and every now and then I'll cook some Black Eyed peas. Now that you introduced me to those Peas I'm going to get some next time I do my shopping. Thanks again Chef Jeffrey. 🥰

I've eaten this all my life. And chow chow is a must. One of my favorite things for sure. But like momma, I don't need all the meat. And several whole okra pods the last 10 or 15 minutes is a must have for me. My mom and dad were from Arkansas and moved here right before I was born. So, growing up in Kansas no one around here knows what purple hull peas are. My dad and mom had to grow them and I've had to grow them myself if I want them! My husband, the first time I made them after we married, looked at those okra and said. I'm not eating those. I said, I didn't make them for you! Those are all mine! lol

I’ve never heard of these types of beans. Base looks good with smoked broth. I make pinto beans with bacon and the smokiness makes a good broth and adds some saltiness too! Your pot of goodness looks yummy! And congrats to you for retiring so young! We r the same age! I just turned 54. I have one son in HS. Getting him ready for his next chapter as I will be heading into my next chapter soon too!

Good morning, Chef Jeffery! Enjoy starting the day with your videos! I'd set up some ham hocks earlier to make split pea soup for supper today - Then you make this! Never heard of purple hull peas - I'll look for them at the farmers market.
Cornbread and just about anything -- beans, peas or greens - and you have a wonderful meal!!
    Have a blessed day!

Exactly! You don't need anything else....sometimes my great grandmother would have some fried chicken with it but you know that it's not necessary.

Looks delicious. If the purple peas can be found here, I'll try them with a side of rice added. I love any type of peas and beans with buttered white rice and shots of Worcestershire and hot sauces.
Sorry, I'm a huge fan of Campbell's canned, condensed soups for casserole bases.
Best wishes for a long, happy retirement.

Good Afternoon Chef. Those peas look delicious. I agree with you. I think you should taste your food after you cook. I get frustrated when I watch some youtubers and they just fix the food and don't test it. I really appreciate you and those wonderful easy recipes. Thanks a bunch.

Chef Jeffrey, that is old school country eating. My Mama loved cooking purple hull peas with hamhock and salt jowl bacon. Wow, with the cornbread is so scrumptious. Thank you for another delicious meal. Stay safe.
