I personally don't add salt when I cook my blackened peas,or with any other meal, because most seasonings have salt in them. I never made this meal with okra. I'd like to try some of that. Am cooking some black eyes and cubed port in an instant pot now. Next time I cook something similar I will add some okra, which I find delicious, as a little more seasoning. I like the Idea of pre-boiling and deboning the neck bones and and ham hocks.
I would never put corn starch or flour in peas. I do have dried Blk eye peas online and the liquid is much thicker. With a fresh frozen pea it doesn’t thicken like that as I stated. Whatever works in your kitchen do it. Thank you so much for the comment.

I use slurry’s in many of my dishes. For me with beans I don’t. If you look at any of my bean dishes it’s not needed beans will thicken on its own. I love the thicker gravies that flow from the bean. But I don’t make it a necessity with fresh frozen. That’s why I mentioned the lack of a thicken gravy in this tutorial. To me it’s a difference in the taste and feel of dried and fresh frozen. I just don’t push the fresh frozen to get to that step.😊

I haven't thought about ham hocks for a long time. Growing up we had ham hock and beans over corn bread. I can't wait to make this

How about the salt from the meat ?
It’s cured into the meat. It’s not enough to effect the peas or beans. The amount to season breaks the bean down over the cooking time.
Mine seem to split even if I don’t put salt in. Plus no matter what, they don’t thicken up.
U can thicken that juice up with flour or corn starch using frozen peas
