    That’s a Great idea to not put the salt until the very end . I have cooked dry beans all my life & never thought to wait until the end to put salt in my beans . Thanks so much I am going to try this from now on,because my butter beans always give me the hull & nothing on the inside & my husband don’t like that , he likes his full butter bean 😂.     Gm Ms. Chriscook4u.I remember you saying leave the salt until the end from long time ago. I personally don't add salt when I cook my blackened peas,or with any other meal, because most seasonings have salt in them. I never made this meal with okra. I will try it, excluding the pork,neck bones.I love smoked turkey necks.I don't eat pork. Thank you for this recipe. 🙏

    I haven't thought about ham hocks for a long time. Growing up we had ham hock and beans over corn bread. I can't wait to make this

    Sound is fine and I will use these meats for the first time. I usually use smoked turkey tails and necks.

    I'd like to try some of that. Am cooking some black eyes and cubed port in an instant pot now. Next time I cook something similar I will add some okra, which I find delicious, as a little more seasoning. I like the Idea of pre-boiling and deboning the neck bones and and ham hocks.

    How about the salt from the meat ?

      It’s cured into the meat. It’s not enough to effect the peas or beans. The amount to season breaks the bean down over the cooking time.

    Mine seem to split even if I don’t put salt in. Plus no matter what, they don’t thicken up.

    U can thicken that juice up with flour or corn starch using frozen peas
    Her juice is way to thin for my liking

      I would never put corn starch or flour in peas. I do have dried Blk eye peas online and the liquid is much thicker. With a fresh frozen pea it doesn’t thicken like that as I stated. Whatever works in your kitchen do it. Thank you so much for the comment.

      @@chriscook4u2 Being from a cooking family as well as my self a cooker I will only eat them creamy and thick holds more flavor….the way I was raised no matter if using dry beans or frozen
      But i do like some of ur recipes and ur plating is nice give soul food an upscale look
      But as I stated I was raised on the best soul food

      I use slurry’s in many of my dishes. For me with beans I don’t. If you look at any of my bean dishes it’s not needed beans will thicken on its own. I love the thicker gravies that flow from the bean. But I don’t make it a necessity with fresh frozen. That’s why I mentioned the lack of a thicken gravy in this tutorial.
      To me it’s a difference in the taste and feel of dried and fresh frozen. I just don’t push the fresh frozen to get to that step.😊
