Yall gone think I'm nuts, but I never ever ever soak or preboil my beans anymore, and I only cook them in a dutch oven inside the oven. No more slow cooker or stove top beans for me ever again. Why? I read an article in NY Times yeeeeaaaars ago by a chef who, upon someone else's advice, hesitantly skipped the soak and tried making his dry beans in the oven. The way this man described the outcome.... y'all.... I just HAD to try. And after the first attempt, which was pretty much foolproof, I was a believer. I have now converted a few old school southern family cooks who thought I was crazy when I told them to try it. They have been converting others as well. If I'm using smoked Turkey tails, I usually get my broth and full seasonings going on the stove top to give the meat some time to tenderize because, honestly, it only takes 2 or 3 hours for the means to cook. But sometimes the smoked meat needs 3 to 4 to really tenderize. But if I'm doing andoullie or smoked sausage then I just throw it into the pot and get it going on the stove for a minute, and then toss it in the oven. I wish I could find that article to share.

One thing I learned about adding the andouile to my red beans and rice early is the cooki g it in water it loses the pop and taste like boiled sausage. I brown mine and crisp it then take it out then release the fond with a small amount of liquid like white wine or Heineken whatever lol to deglaze the fond and put in the holy Trinity and garlic and build layers of flavor in the pot.
How do you get your veggies chopped/diced so finely? I'm going to try this recipe for next weeks Sundays dinner. I bought Cornish hen already for this weeks Sunday dinner but I just saw your recipe for roasted chicken with the Cajun injectable seasoning & I'm going to use that recipe on my Cornish hen. Can't wait to try it, I know it's going to be delicious!
