I have been craving stewed, chicken and rice for the last year and a half . My mother used to make it on a regular basis, but I could not remember how she did it (she died when I was 12 and I am now 53 years old). This is my 2nd time making it after watching this video. The only difference from the way I make mine as opposed to this video is that I added a little creole seasoning to give it a kick, and I also added 2 bay leaves. For the last 30 minutes of cooking this dish., I added the rice to the pot while the chicken was cooking. Doing this added the flavoring of the gravy to the rice and everything was done in one pot. my husband absolutely DEMOLISHED IT the last time I made it! When I told him that I was making it again tonight for dinner, he was smiling and said, “I can’t wait to get home from work”! Thank you so much for this recipe!
I’m Jewish American. I was raised mostly by my Grandma. She was from Port Gibson, Mississippi. She stewed her chicken the same way. It must be a southern thing. 30 yrs later I can still taste her great stewed chicken over rice in my mind. Miss you Grandma. Wish I could’ve made videos of her cooking, but it was before all this internet was invented. I do remember she used to watch Julia Childs cooking on tv. I made this the other day it’s always a southern classic, only changes I made was substituting the water for chicken stock, diced onion and fresh garlic
@@keydyshastaton8089 : I do use about two tablespoons of olive oil, the desire is to make gravy, therefore it is not Brown enough to be eaten as is, just to get some colour and the bits in the pan for the gravy. If it's rice that I am pairing with it. I do not like thick gravy. After that I sauteed bell peppers, at least three colours, onion, garlic, and rosemary and a dash of teriyaki sauce then add meat and about a cup of water or broth or sodium-free bullion. Simmer on medium heat for about 40 minutes. I usually season meat overnight or for as long as possible. If I am serving fried cabbage, I add few stalks of bok choy and some matchsticks carrots. I. prepare enough of the vegetables to add to it as well, I add the sauteed vegetables after the cabbage is almost done with bits browned piece, I added the vegetables for ten minutes. All of the vegetables are roughly chopped except for the carrots 🙏💕🌹😊

Trying this recipe tonight. For everyone saying to use chicken broth instead of water no… old school cooks know he is making homemade chicken broth by simmering his chicken in the water and seasoning it as he goes..you don’t need that canned stuff this is the old school way!
Ha ha old school is making stock by browning carrot, onion, celery. Adding chicken bones and water, and making stock. Then browning the chicken, onion and garlic, adding the home made stock, then making the stew. Ten times better. French and Italian methods

it's fine but the chicken stock/broth will allow you to skip the cornstarch. the natural gelatin from the chicken stock/broth should create the same product, instead of water and cornstarch
I miss everything. My mom was a great southern cook. Her baked ham was unbelievable. Thanksgiving was a scrumptious feast. She could make a delicious meal out of whatever she had. A real Louisiana lady with a gift in the kitchen. My regret is not having gotten every recipe I loved from her before we lost her. She never measured anything. It was always, a pinch of this, a spoon if that, and season to suit your taste.
My grandma was a Texas woman who passed 5 years ago and I think of her all the time . Before she went she gave me her cornbread dressing and sugar cookie recipes 'cause she knew those were my favorites and she always made them for me when I came home on leave from the Marines . Then again , I was always her favorite ( he he , cousins were always mad at me )

I made this tonight and I wish I could show you before and after pictures of the pots. My family DEVOURED my food lol. Thank you for this recipe, only thing I did differently was add bell pepper and celery to the chicken along with the onion.

My mom used to brown the chicken first, then she would add butter and water to the bottom of he magnalite pan to deglaze the pan add garlic parsley and Creole seasoning.. served over buttered grits. That's how she feed all 17 of us😛...yes 17

I want it over a big ol bowl of buttered rice with green peas. If you throw some carrots in with the cooking chicken and serve it all with a biscuit, you've got deconstructed chicken pot pie. If you have some left over homemade dumplings in the back of the freezer (you know how it can be), add it to the finished stewed chicken cause you know those dumplings are flavorful as heck by now. Why couldn't I find this back then. True soul food being cooked before my eyes. Old black woman taught me how to cook green beans with new potatoes and bacon. Soul food seasoning salt and pepper with love was all. Best green beans I ever had

Hey Ray, thanks for a great recipe! I made this the other night and it tasted great. It is pretty much the way I make chicken n’ dumplings but this is a wonderful version. I served mine over egg noodles. Because I generally like to incorporate vegetables into most of my dishes, I added celery and carrots as you mentioned in the video. I also like a little spice, so I added some Tony C’s as well. Thanks again and I plan on making more of your dishes.

I miss everything. My mom was a great southern cook. Her baked ham was unbelievable. Thanksgiving was a scrumptious feast. She could make a delicious meal out of whatever she had. A real Louisiana lady with a gift in the kitchen. My regret is not having gotten every recipe I loved from her before we lost her. She never measured anything. It was always, a pinch of this, a spoon if that, and season to suit your taste.

Before she went she gave me her cornbread dressing and sugar cookie recipes 'cause she knew those were my favorites and she always made them for me when I came home on leave from the Marines . Then again , I was always her favorite ( he he , cousins were always mad at me )

My mom used to brown the chicken first, then she would add butter and water to the bottom of he magnalite pan to deglaze the pan add garlic parsley and Creole seasoning.. served over buttered grits. That's how she feed all 17 of us😛...yes 17

Mr. Mack, you did it again! All respect to your mother, and those before her. If you have some left over homemade dumplings in the back of the freezer (you know how it can be), add it to the finished stewed chicken cause you know those dumplings are flavorful as heck by now. A pot of rice, a pot of cabbage, and homemade buttermilk biscuits, lemonade or ice tea. Lord have mercy talk about down home!

I'm fifty something and started cooking when I was in my early teens when my dad hurt his back and was down for a few months and all I had was a cookbook and Julia Childs on channel 7 PBS. Why couldn't I find this back then. True soul food being cooked before my eyes. Old black woman taught me how to cook green beans with new potatoes and bacon. Soul food seasoning salt and pepper with love was all. Best green beans I ever had

Hey Ray, thanks for a great recipe! I made this the other night and it tasted great. It is pretty much the way I make chicken n’ dumplings but this is a wonderful version. I served mine over egg noodles. Because I generally like to incorporate vegetables into most of my dishes, I added celery and carrots as you mentioned in the video. I also like a little spice, so I added some Tony C’s as well. Thanks again and I plan on making more of your dishes.

I’ve made this several times after watching this video and it’s always a hit! My cousin had Covid a couple of years ago and I fixed him a pot of it. He said it was the only thing he could taste and it saved him. LOL! Bless his heart, his wife didn’t do anything for him. But his cousin came through for him along with his brother. Needless to say he isn’t married anymore.
