- Today we're making the New York classic bacon egg and cheese sandwich. Or just simply BEC-SPK. The first job I ever had was working at a deli and I loved working the grill. I've made thousands of these and all their other variations over those 3 years when I was a kid. I hope you enjoy this bacon egg and cheese sandwich video!

Hey brother, I'm almost certain those are called Kaiser rolls. And of course you want them with poppy seeds.
Man, I already said it on another video but I can’t emphasize enough how much it means to see you sharing these moments with your son. My dad used to work at his father’s deli in Queens when he was younger. Now, 45 years later, he still makes those sandwiches like he did when he was a teenager. I would eat them at the island in the kitchen just like you do with your son. To this day, those are the best sandwiches i’ve ever had. Not just because the ingredients were good and the execution was perfect, but because they were made with love.

best tip I know to keep eggs from sticking: dunk the spatula in cold water before trying to slide under the egg, they might've stuck but the steam releases the egg as the wet spatula slides under

From a Polish, New Haven CT resident to you, I admire your care for something as simple as the perfect breakfast sandwich. The water splash when melting the cheese is such an unnecessary yet next level move. The tri-state area has some seriously great eats, maybe the most underrated in the country. I watched the whole Sunday series as a clinic on Italian American food, and now I'm just working through the rest of your videos. You got a fan in me, bro.

Man, I love your channel. Not too much talking, great camera work and plenty of options for those who may not care for quantities or ingredients (e.g. “if you don’t like this much onion...”). i lived in nyc for a long time, i had one of these almost everyday. now im in LA and i miss 'em like crazy. im on a constant quest to find a BEC here that compares. its the bread, they just dont have those rolls out here. its not a regular ol kaiser roll, its so unique, so ny/nj. love your channel man
New York born, Jersey raised. Every time I go back for a visit these are a must for breakfast. I personally go s/e/c. We don’t get those rolls where i live.

Bacon and egg goes with every meal. I enjoy at least one egg in some way, shape, or form as an accompaniment to every meal :) scrambled, boiled, fired, poached, I love them all (except funnily enough, omelettes - not a fan at all 😅)

Just found this video at 11 at night. I'm from Staten Island and how we say it is "lemma get baconeggandcheese onna (whatever you want) everything bagel". Then you grab some cawffee. Simple as that. Best of the best.
I’m a NYER living in Sacramento and every time I go home I bring back a suitcase full of Italian bread. I freeze them that last a good minute. I guess I better learn how to make authentic Italian bread huh ,Huh
Jim you are so right. The Kaiser roll is key. In Westchester, Cassone’s bakery in Portchester was the leading supplier. I went to high school with Don Cassone. The bad joke was always “Don needs dough”. The not funny truth, good luck finding a decent Kaiser roll in middle America

Hello. This video on the egg and bacon on a roll just brought back memories of being a kid and running to the dehli across the street to get that back in 85. U know , when sandwiches were 2.25, not like today. U hand the clerk 2.25 and he says oh no this 10 bucks. Say what?. Or when a slice was 1.25. I grew up in eastmeadow and still here. Anyway, thanks for bringing that memorie back
Great video. In Jersey, we'll sub the bacon with Taylor Ham (North Jersey) or Pork Roll (South Jersey). Personally, I sub out the Kaiser Roll for a sandwich size English muffin but keep the rest as is. It all works. Keep cooking! The Sausage Egg and Cheese is the other popular combination.

That looks amazing. As a Londoner I have fond memories of visiting Ess-a-Bagel and getting a poppy seed bagel with egg and cheese. Walking NYC with a pipping hot bagel for breakfast was such an enjoyable thing. Love the channel 👍

Omg you don’t know how happy I am to see this! I’m from Oceanside but have lived up in Mass for the past 6 years and this is what I crave the most!
When I moved to new england from New Jersey I remember how confused people were when I'd ask for ketchup on a breakfast sandwich. I live in Boston these days, and I still prefer making these just the way you did-- a nice soft kaiser roll with BEC/SPK :) I'll admit to occasionally adding a sprinkle of garlic powder to the eggs as well.
They don't really have Pork Roll up here, either. Not the way we did in NJ.

I cook my bacon in the air fryer using lower heat and longer time and the results are excellent.

Pork roll egg and cheese on a hard roll guy checking in. There was one deli in my small New Jersey town and that was my breakfast for decades as a working man. Now my sister owns a small deli. The last time I came up to New Jersey she asked me what I wanted, and I was like, really? You know what I want.

Nice love how you used the bacon fat again in the ham and eggs it’s really underrated. From NY and I never got the ketchup thing but a sausage egg and cheese can get right on top of a hangover.
I used to actually put mayo on the ones I'd make for myself. Then the customers would come in and mostly ask for ketchup.

This man really used three different pans to cook the bacon, ham, and egg 😂
You can use the cast iron for the whole thing tbh, and the bacon fat will carry on to the ham and eggs nicely if you play your cards right. You can even use a lit to another pan or pot at the end to steam the cheese, but considering the egg was already flipped I personally find that a hot egg is enough to melt a kraft single thrown on at the end, without the steam.
I love the laid-back, non-gatekeeping approach to cooking this channel has!
I moved to Salt Lake City and have missed these every day for the last ten years. Grew up in south Philly, right across the river from Trenton. Kaiser roll makes all the difference. The fact I could walk into any bodega and get breakfast for 3.25$ then, and probably 5.50$ now, was one of the best experiences of living out there. You got to know the owners, and the individual people that made up that neighborhood. Still miss it.

I grew up in Minnesota but my parents are from Long Island. Made trips out to East Meadow area almost every summer as a kid. We used to get our BEC’s at Figarelly’s Deli. Man I miss it!

Move from NYC to Phoenix and this thing is non existent here. I do miss this at 6:30AM on a cold NY day waiting for the bus and trains.

In my hometown( Lowell, MA) they have a similar sandwich called the Boott Mill, that adds home fries and can have bacon, ham, sausage, corned beef hash or any combination of the four.

From Philly. Moved to Jersey around 75. Worked and lived in Manhattan in the 80s - had one of those almost every morning. Unless hung over - then it was dirty water chili dogs. Great memories and fantastic breakfast. Thanks for all your videos but this one in particular sent me all the way down memory lane.

I grew up on BEC from stuff-A-Bagel, and Wally’s Bagels (Long Island) so I’m partial to having them on bagels, but the poppy roll is great too. You’re sandwiches look amazing! Keep up the great work!

anytime i walk into the deli before 11am boss man in the back already knows what i want when i give him the look. the only time i deviate from the formula is when i walk into wonderbagel and sub the roll for a bagel

It's like therapy for me... cooking up egg sandwiches. I don't often have time in the morning so it's usually a late night snack. I'm a bit more partial to a nice chewy toasted bagel, but it doesn't get any better than that for simple comfort food. Make yourself some good eats and you can even wash the dishes by the time it cools down enough to scarf up... love the channel man. My Mom's side of the family is Italian but I've always felt a bit intimidated trying a lot of the recipes, you make it approachable and give me confidence. Instant subscribe here, thanks boss.

Most NYers do NOT get ketchup on their BEC. Most of us get hot sauce or nothing. And if you’re on Long Island, you probably get it on a bagel

He didn't say it in the video, but that salting the egg right before steaming the cheese. So good. Next level.
The pan and rack you put your cooked bacon on is what I like to cook it on in the oven at like 325 convection (watch carefully, rotate pan every 5 minutes until done). I used to use parchment, but the baking rack gives a crisper result. I learned this in food service making bacon for 150ish people. You may not need to rotate that often if your oven is evenly temped. I learned this on a gas oven with a hot back and a cold front.

I cook bacon in the oven too. They don’t curl up. I do a whole package of bacon at one time and just freeze the extra, just a quick reheat either in the microwave or in a pan (gives off enough fat to fry eggs). If you cook the whole package of bacon in the oven, you get a lot of the fat which you can save and use for other cooking. 😁

I live in NY and always seen the yolk cracked while its cooking on the griddle and then bacon placed on the cracked yolk then cheese. The roll is a kaiser roll.🥓🥚🧀🧂🌶🐱⬆

When I was living in New York I used to have those for breakfast every day before work, but mine was what my friend called the “Muslim killer” I used to get a bacon, egg, cheese and sausage with salt and pepper an no ketchup on a roll. Nice cup of coffee to push it down and I was ready for a winter day hehe miss those days!

Wow, this video takes me back to my days in NY. I remember going to Maine and asking for a ham, eggs, and cheese on a roll (HEC-SPK), and the deli guy asked, "What is a roll"? It's like I was talking to someone from another planet!
