She definitely should have pounded out the chicken to bring it to a much thinner, more tender and even thickness. Not the culinary way to do it without pounding out the cutlets
@@staycool163 No. There is a standard technique of chefs. She did not take the time to prepare the meat properly. She did Not Use an actual proper method of cooking this dish. She cooked it as an untrained novice would do improperly.
I have Giada’s cookbook that has the chicken piccata recipe and everyone who I’ve cooked it for loves it. I haven’t been to a restaurant that has a better tasting recipe. Hands down my favorite meal.
I prefer the chx pounded down, not as bulky and a little more crisp. Other than that this is how I’ve made my chx piccata for forever. Even added sliced thin lemon on top.
This was a very improper way she handled the chicken. She didn't prepare/ pound out the meat at all. No trained chef would just leave the meat thick & bulky like that without pounding it out for this dish
@jsf221 yeah half the stuff she sells you can get at your local Italian deli if you have one for a quarter of the price. My deli gets mostly everything from Italy.

Add the chicken and cook just until brown, about 3 minutes per side. Then once the broth has been added to the pan, return the chicken to the pan and simmer until just cooked through, about 5 minutes :)

Chicken for piccata or franchase must be pounded out to a much thinner even thickness. It would never be as tender or delicious when it's not pounded out. Obvi. Rooky mistake. The way she did it with the chicken in its natural shape is so unprofessional and definitely will be more dry and have less flavor because There is less surface area... Too thick, not an even thickness and will be much tougher without pounding
I wonder how much hair ends up in her food? 🤔 I dont think its sanitary for chefs to have hair dangling over food. Then again, if shes the only one eating it, then who cares! 🤢🤮🤢

Yes, pounded chix, deglaze with the stock 😂 and lemon juice (and wine) .. finish with garlic butter to emulsify

The chicken will be much more tender if you slice them down the middle & pound them fairly thin. Piccata means pounded.

You do it the easy way, no cutting and pounding of the chicken. Adding butter isn't just because, it is traditional.
