This looks amazing I have never heard of purple sweet potatoes we are growing orange ,white and the red garnet in our garden I wonder how the garnet would work for the pie . I've made mini rounds w/o the crust. I put them in the freezer and pop them out of the silicone bakeware when she wants something healthy sweet, warm it up and shes set! my mom loves it! Just the feeling by itself is worth the wait! I've fixed this 3 times already! Thank you for versatility in all your recipes. ❤
YaY!! Another way for me to have my sweet potatoes! I love the purple ones because they are not as sweet. I used to live in Virginia where I had a few places where I could find the purple ones. Now I live in Oklahoma and don't know where I can find them. Oklahoma doesn't have the same shops Virginia does. I have heard that there is a Sprouts in another town about 40 miles from where I live. Will need to see about getting a ride to check it out. The way you make the crust is the same way I make my walnut date balls. Sometimes I roll them in non-dairy, unsweetened cocoa powder, but most of the time I don't. I roll them into a walnut size ball, put them on a plate and put them in the freezer for about two hours. Then I put them into an airtight container and leave them in the freezer. A nice cold snack when I need something naturally sweet without being overly sweet.
I am hooked on white Japanese sweet potatoes. They taste like dessert themselves. They don't turn to mush like the orange ones and the purple ones are too starchy. They are always out of stock though. I will use the recipe. I'll just find the white ones for the recipe. They are sweeter.

I usually do that and then just hand write the recipe and put it in a binder I’ve made. I also put the recipes in plastic 8 1/2 x 11 inch covers to keep them clean…I tend to spill stuff in the kitchen, so it’s a layer of protection from my messy self! I want to save all his fantastic recipes! Hope this helps!

I didn't have any of those pie pans so I use the rubber mini cupcake baking pan and made some mini, mini ones!😅 at least it's portioned out for me. I put in freezer instead of frig. Can you use almonds for the crust as well?
Hi. I hope you see my questions. Dates - what sweetener would you recommend for those with pre-diabetes. Dates seems to be high on the GI chart. Nuts - will the crust recipe still work with soaked nuts or should I dehydrate them first? Veggie ground - I've made it a few times now. I LOVE IT!
I wouldn't soak or dehydrate them. However, there are no rules, just preferences. If you prefer them that way, go for it! Date are about a 53 on the GI chart, if I am recalling correctly. Foods are considered high at 70 or above, so I wouldn't place dates in the high category. I don't make recommendations for people with health challenges. What works for some diabetics may be problematic for others. I am not trying to be evasive, but I do want to be responsible and not unintentionally misguide anyone. I do urge you to seek a better understanding of what causes insulin resistance and eventually leads to pre and type 2 diabetes. The vast majority of diabetics ( and people in general ) aren't aware of the role that fat plays in causing and sustaining insulin resistance, pre-diabetes and type 2 diabetes. Complex/whole carbs (from fruits, veggies, beans, pulses) are not the cause of insulin resistance in and of themselves. I suggest the book Mastering Diabetes and The End of Diabetes as excellent resources for understanding the causes and cure for diabetes.
Would this recipe work if I substituted the Japanese white sweet potatoes for the orange ones? I just happen to have those on hand. Looks incredibly delicious btw
