One of the best batches of chilli I've made was using the left over birria as a stock for the chilli. Just an idea for the leftovers.

Birria is some of the best food you'll ever eat! I've been making it for a couple years, it's in everyone's top 5. Don't skimp on bone, and don't be afraid of using 15-20 of the guajillo/new mexico/California chilies, pure flavor with very little heat.
I watch u from Michoacan Mexico ben watching sence the beginning we make birria with goat and it's a Sunday morning meal like menudo very typical here where I live also late night tacos after a party they are sold

Couple things…the smoke on the meats before the braise 🤯 I know that took the flavor to the next level!! And That bone broth is legit!! The ones I have seen in stores are usually watery and if I wasn’t making my own I would most certainly purchase from Porter Road! Great video and new to your comment section but love your vids. ❤✌🏾
Good Lord, Xmas comes early! Quesabirria tacos have been all the online rage - and for good reason - they are awesome. And I happen to live in Tucson, AZ, home of scores of great birria places. But hands down those are as good and probably better (by smoking the meat first) than any I've ever seen. Crack on, Santa Chud!

In my city, there are some specialty grocers that sell goat meat. Specifically, there is a Middle Eastern grocery that has it available, if there is one near you, take a look there. You might be able to purchase goat there :)
I never had authentic Birria before but I tried making this over the weekend past. I couldn't find a vid on smoked Birria Tacos so I made it using a recipe that I created in my head. For me the consome was dark and a little bitter. I had to add sugar to take away the bitterness. I'll have to try again using your steps and recipe to hopefully get a better results

I LOVE your channel and as a medically retired police officer (due to a traffic collision). I also love the fact that you pay so much respect to those who wear a uniform! However, I’m just a whiteboy from Los Angeles, but here we pronounce Birria as Bea-de-ah…. Hmm, that isn’t even doing it justice. You have to roll your tongue when saying it. Bei-de-ah. But anyway, you did say it wrong. No big deal. Either way, it’s absolutely delicious! It’s definitely GOOD STUFF! would LOVE to watch you make Menudo! (Again, you have to somewhat roll the tongue when saying it. But, it’s pronounced “mon-nudth-oh) When done right without smelling like a rotting corpse? It’s absolutely AMAZING! Just have to make sure you REALLY clean the tripe VERY well before cooking it! It’s ABSOLUTELY DELICIOUS when it’s made right. Just everyone gets scared of what’s it’s made from!

I make these all the time with smoked pulled pork on the Blackstone. Great solution for leftovers.
if i remember from cooking school..to make a consume . ya need to make something called a raft with egg whites and ground beef..that will clarify the stock

Finally, a gringo got it right!!! Yes, the traditional way to make them is with goat meat. I don't like goat meat because it's pretty gamey. But make it from beef and it's amazing! Your consume was perfect too. And you even used Oaxaca cheese to boot! I don't know who gave you one of our best kept secrets, but I completely approve of your cook. Just a beautiful sight!

Onion an cilantro get mixed together finely chopped. In one one single taco you garnish again wrapped in a non fried tortilla. Garish with cheese an the cilantro. You onions just fall off. Also, cojita cheese crumble is preferred
You should hit a hispanic market for the goat. Living in Texas they are almost everywhere. If your close to Houston try a Fiesta.
I think the official taste tester may have lift off parameters due to too much taste testing. LOL
