He's similar to Mimir. A guy with knowledge that somehow wronged the King of Gods and put him in a spot to be tortured and Kratos had somehow mercy killed both of them

Every time his liver was eaten it would grow back for the pigeons to eat again. He was punished for creating humans. I guess he lived eternally.

In Greek mythology Prometheus was punished by Zeus for giving humanity fire which allowed us to progress without as much need on the Gods. As punishment for defying the Gods Zeus cursed Prometheus to spend eternity chained to a rock whilst a bird ate his liver. When the liver was consumed he would heal the next day and it would happen every day until Zeus changed his mind. He wasn't changed into a mortal otherwise he would've just died and been sent to the underworld.
