Homemade Chicken and Dumplings!!!

- Learn how to make the BEST chicken n dumplins you will every have!! Comfort food at it's finest! This takes a bit of time to make and some multitasking is required but the payoff is SO worth it!
What you'll need:
2 split chicken breasts (on the bone with skin, about 3 lbs)
8 cups water
2 bay leaves
1-1/2 tsp salt
3 celery stalks, chopped
3 carrots, chopped
1 medium onion, chopped
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp black pepper
1/4 tsp garlic powder
1 stick (1/2 cup) butter
2/3 cup AP flour
1/4 cup cream
1/2 cup frozen peas
In a large pot or dutch oven, add in split chicken breasts, water, salt and bay leaves. Bring to a boil and cook over medium heat for 45 minutes. Don't boil too hard or tooo much water will evaporate. Prepare the vegetables and dumplings.
for the dumplings:
1-1/4 cups AP flour
2 tsp baking powder
1/2 tsp salt
2 Tbsp butter
1/2 cup milk
In a glass measuring cup, heat the milk and butter until butter is melted. In a medium bowl, combine flour, baking powder and salt. Add in milk and butter mixture and stir with a fork just until combined. Dough should be soft. Turn out onto a floured surface and knead just a few times to make it come together (no more than 8 times). Roll out to 1/8" thick and cut into 1" strips and then into 3-4" pieces. Cover with a damp towel until ready for them.
Meanwhile, after the chicken has cooked for 45 minutes, remove to a plate and let cool before shredding. Remove bay leaves from the stock. Add in the chopped vegetables and cook for 10 minutes. In a separate small saucepan, melt butter and whisk in flour. Cook over medium heat for 30 seconds, stirring constantly to create a roux. Gradually add in stock until thinned out a bit. Add roux mixture to the stock with the vegetables and whisk until no lumps remain. Add in cream and peas. Bring to a light boil and add in the dumplings, one by one. Stir gently, cover and cook for 10 minutes or until dumplings are tender and done. Take off heat and add back in the shredded chicken. Stir to heat the chicken through and serve. Serves 4-6. Enjoy!!

My Mom always made her dumplings large too, but firmer and it tasted wonderful to me and my brother. Today when I make mine, I strive for firm-to-chewy dumplings because it reminds me of home. She also added potatoes, cut in random sizes. Sometimes she used chicken thighs and we would pull meat off the bone as we ate it. When I watch cooking shows like Chopped and they critique someone's unevenly cut veggies, I'm reminded how lucky I was to learn to appreciate the simple things in life.
Yeah we had those 'bone your own' dumplins too.
Had my kids & we were poor, we made games out of meals like ‘who gonna get the bone?’ Or I’d put peas in a dish just to make it all green lol. Poverty is hard to cook balanced meals. No laughing matter. Still we loved being together around the table
I live in VA and since everyone is digging out from the Blizzard, I wanted to make something warm and comforting. This hit the spot! It is the closest thing to my grandma's chicken and dumplings that I have come across! Thank you so much for sharing this amazing comfort food!!!

Cut and rolled dumplings are the best...this is what I remember over more than 40 years. Comfort food when the weather is cold and forbidding.

+Crouton Crackerjacks I'm from the UK and IV never seen dumplings made the way you made yours our dumplings are rolled in to small balls by hand then put on the stew for tweny min and they swell to twive the size I'm sure yours are nice thank you for the video

If my mama saw me make dumplings like he did she would whoop my ass hahahahhahaa . Spoon dropped dumplings here all the was and use Chicken Thighs along with the breasts thighs is where the flavor is breasts has very little flavor to add to the stock .

I agree wholeheartedly! Mom rpatted out her dough in cornstarch on the board, which would thicken the broth. Pinch off pieces. We'd love getting a big piece in the bowl. Cornbread in the bottom of the bowl covered by the concoction. Yum.

Good job! I made it with out the leaf and spices, I only used salt and pepper to season because that was all I had. It came out great! I also added fresh garlic to the part when you add carrots celery and onion.

I have made this. This is pretty delicious. The only thing i would change is a little less roux. It was a little thick at the beginning for me and the more i reheated it for left overs the thicker it kept getting.

I made this tonight and it was OUTSTANDING!!! I did a YT search for this recipe and your pic looked the best out of all the results so I tried it and it was divine. The only thing I did different was increase the seasoning to my liking and added dashes of basil & Sriracha. It was the epitome of homemade comfort food!!

I agree with that one. Good old-fashioned rolled dumplings. If I would have served some versions of this recipe have seen on RUclips made with biscuits. My grandmother would slap me upside my head. this is a true comfort food.

D Bachand rolled as in the dough is rolled with a rolling pin and sliced rather than dropping lumps of the dough into the pot.

Hello all, I'm thinking that the Rue isn't really necessary. I believe that the dumplings will thicken the broth if there isn't too much liquid?? LOOKS GOOD THOUGH🍽
your right about the rue, it's not needed!
if you add enough flour to the dumplings when you are rolling them out you do not need the roux

Shouldnt need that roux. The dumplings are flour and mixed with fat from chicken and boiling will thicken without the roux
I agree. I make mine pretty much this way, except I skip the step of making a roux. The dumplins have enough flour on them to thicken the gravy as they cook.

My grandma used the fat from the chicken broth in lieu of the butter for the dumplings.
