How many of you newbie subscribers like me feel like you could watch Rachel all day and feel like you’ve known her for a long long time?? I am 73 & grew up on Mexican food. But Chimis are a newer form, our Hispanic cook always laughed about them but I have had a few at restaurants. I liked the fact that you served them with some of the meat.

Cannot believe she cooks everything on electric stove!! I have gas now but could never cook evenly on electric! She doesn't have a gourmet kitchen but makes the most delicious foods! Rachel , we made your chimichangas today…wow delicious…the only thing We did differently was instead of frying them we brushed olive oil on them on all sides , then put them in air fryer, and we used low carb tortillas, ..they turned out nice and crunchy and golden in color…thank you, we love this recipe. 😊❤

Oh my gosh I didn't realize that I truly love chimichangas and they really are so easy to prepare. I haven't had a chimichanga in a few years but tell you what dear amiga, I want one now. Cannot believe she cooks everything on electric stove!! I have gas now but could never cook evenly on electric! She doesn't have a gourmet kitchen but makes the most delicious foods! Rachel , we made your chimichangas today…wow delicious…the only thing We did differently was instead of frying them we brushed olive oil on them on all sides , then put them in air fryer, and we used low carb tortillas, ..they turned out nice and crunchy and golden in color…thank you, we love this recipe. 😊❤

Oh my gosh I didn't realize that I truly love chimichangas and they really are so easy to prepare. I haven't had a chimichanga in a few years but tell you what dear amiga, I want one now. I think I'm going to try making these as Sunday dinner this weekend definitely. I love the tip about making a flour/water paste, how ingenious! You've got me excited for Sunday now...lol.
