I have never seen a person with the kind of confidence of this woman to one-handedly eat a chimichanga loaded with toppings, loaded nachos or chicken tinga tosta while looking good. The sheer asuredness. I swear I am over here eating a sandwich with a bib dressed in a hazmat suit by comparison.
I made this a few months ago and they were delicious! My family loved them. So much so that my mom just asked me "Cuando vas a volver hacer esas chimichangas?" I had no idea she had liked them that much lol.
