Obviously you now want to go to the US for another reason hence why you're still going for the interview even though the event has passed. When they ask you, give this other reason for which you're pursuing a Visa this time round.

As long as you can convince the visa officer handling your case that you have enough funds to cater for your travel expenses to the US as well as for your upkeep and vacation for the duration of your stay. You also need to be able to convince the visa officer that since your parents are immigrating to the USA, you have other reasons and motivation to want to come back to your home country after helping them to settle in.
